Abstract
Dans le procédé de saumurage, les morceaux de viande sont placés dans une enceinte tournant autour d'un axe horizontal. D'abord mise en rotation, l'enceinte est soumise au vide, puis reçoit la quantité de saumure correspondant à la masse de viande à saumurer, puis elle est soumise à un gaz sous pression ces opérations durant des temps prédéterminés. Le cycle vide-pression peut être répété. Applicable notamment au saumurage de la viande de porc et des jambons.
