Abstract

Pieces of meat to be marinated in a soln. of brine are placed in a square vat equipped with a central vertical shaft to which horizontal paddle blades are attached. Pref. the shaft is supported in such a manner that a vertical oscillation of 12mm and frequency 15-20 Hz is imparted to the blades which are also caused to ratate at around 3 rpm. The drive is such that the agitator shaft rotates in steps. At the start of each operation, the vat is filled with pieces of meat and a quantity of brine equal to the total quantity to be absorbed by the meat. The vibration ensures that the brine is evenly absorbed whilst the rotation of the paddles ensures an even exposure of the meat to the vibration. The process achieves a faster absorption of brine than existing systems whilst minimising the risk of damage making the process suitable for the softer cuts such as stomach as well as the normal cuts such as hams and shoulder.
