Abstract

L'invention concerne un dispositif d'aiguisage de couteaux comprenant : - une plaque (1) comportant deux barres d'aiguisage (24; 25) qui sont montés à pivotement sur la plaque (1). La plaque (1) comporte une fente (6) ouverte à une extrémité (7) et fermée à l'extrémité opposée (8). Les barres d'aiguisage (24; 25) et la fente (6) sont disposés de manière à être alignées axialement l'une par rapport à l'autre et servent à l'introduction d'un couteau. Les barres d'aiguisage (24; 25) comportent chacune au moins un insert d'aiguisage (30). Les barres d'aiguisage (24; 25) sont maintenues chacune dans une position de repos (19) par la force d'un ressort (29) à une distance prédéterminée l'une de l'autre. Les barres d'aiguisage (24; 25) peuvent être écartées l'une de l'autre en s'opposant à la force du ressort (29) dans une position d'aiguisage lorsque le couteau est inséré et vient en contact avec les inserts d'aiguisage (30). La plaque (1) comporte au moins un emplacement (42, 43, 44) où au moins une barre d'aiguisage (24; 25) est montée par rapport à la plaque (1).
