Description
- Die Erfindung betrifft zunächst eine Kühlvorrichtung mit einem Kühlraum zur Aufnahme von Kühlgut, mit mindestens einem Verdampfer zum Kühlen von das Kühlgut umströmender Luft, mit mindestens einem Lüfter zum Umwälzen der Luft aus dem Kühlraum durch den mindestens einen Verdampfer und zurück in den Kühlraum, mit einem Lamellenwärmetauscher auf einer Einströmseite des mindestens einen Verdampfers, durch den die Luft in den mindestens einen Verdampfer einströmt, und mit einem Kältemittel, mittels dessen der Luft in dem mindestens einen Verdampfer Wärme entziehbar ist und mit einer Bestrahlungseinrichtung (14), mittels derer der Lamellenwärmetauscher mit blauem Licht bestrahlbar ist. Die Erfindung betrifft des Weiteren ein Verfahren zum Betreiben einer solchen Kühlvorrichtung.
- Kühlvorrichtungen und Verfahren zu deren Betrieb sind seit Jahrzehnten allgemein bekannt: Sie bestehen im Wesentlichen aus einem geschlossenen, meist sowohl wärme- als auch lufttechnisch isolierten Kühlraum. In dem Kühlraum ist mindestens ein Verdampfer angebracht und mindestens ein Lüfter, der die Luft in dem Kühlraum umwälzt und durch den Verdampfer saugt oder presst. Der Verdampfer kann ein klassischer oder ein "gefluteter" Verdampfer sein.
- Die Anmelderin bietet solche Kühlvorrichtungen für die Lebensmittelindustrie, insbesondere für die Lagerung und Reifung von Backwaren und deren Vorprodukten an. Die Verdampfer sind in der Regel unter der Decke des Kühlraums angebracht und dort unmittelbar auf Lüfter aufgesetzt, die die Luft durch die Verdampfer saugen. Häufig wird durch eine abgehängte Decke der Verdampfer nach unten optisch kaschiert und die Luft zwangsgeführt.
- In diesen Kühlvorrichtungen liegt die Lufttemperatur immer unterhalb von 8 °C und je nach Einsatzzweck bei bis zu -38 °C. In diesem Temperaturbereich ist das Wachstum von Schimmelpilzen der Gattung Aspergillus praktisch unbedeutend, von Schimmel der Gattung Penicillium jedoch nur verlangsamt.
- An den Lamellen des Verdampfers findet Penicillium in diesen Kühlvorrichtungen einen nahezu idealen Nährboden aus verschiedenen dort abgelagerten Kohlehydraten: Die zu kühlenden Waren enthalten Mehl und können mit diesem bestäubt sein, Stikkenwagen zur Lagerung von Teiglingen werden mit Stärke bestäubt, um ein Anhaften zu vermeiden und bei Kartonlagerung enthält die Luft feinste Zellulosefasern. Zellulose und Stärke sind für Schimmelpilze ein idealer Nährboden. Zudem müssen die Verdampfer regelmäßig - bis zu mehrmals täglich - abgetaut werden, um ein dauerhaftes Vereisen zu vermeiden. Die vorübergehend erhöhte Temperatur des Verdampfers regt die Ausbreitung eines eventuell bereits vorhandenen Penicillium-Befalls weiter an.
- Abgesehen von hygienischen Problemen ist der Penicillium-Befall der Lamellen auch technisch in mehrfacher Hinsicht problematisch: Zum Einen verlegt der Schimmel die Zwischenräume der Lamellen und vermindert die Kühlleistung der Verdampfer bis hin zum vollständigen Ausfall, zum Andern bildet Penicillium als Stoffwechselprodukt Citronensäure, die die aus Aluminium bestehenden Lamellen angreift und vollständig zersetzen kann.
- Um die Kontamination mit Penicillium zu begrenzen, werden die bekannten Anlagen regelmäßig - meist im Abstand von wenigen Wochen - vollständig ausgeräumt und mit sehr aggressiven Reinigungsmitteln behandelt.

US 5,321,907 A ist außerdem eine Kühlvorrichtung bekannt, in der Gartenpflanzen mit rotem oder blauem Licht bestrahlt werden. - Im Hintergrund der Erfindung sind beispielsweise von STERILSYSTEMS GmbH, Salzburg/AT Luftentkeimungsgeräte für lebensmitteltechnische Anlagen bekannt, in denen die Raumluft an einem UV-C-Strahler (Wellenlänge λ 100 bis 280 nm) vorbeigeführt wird, um Mikroorganismen wie Keime, Viren, Hefen und Schimmelsporen sicher zu eliminieren.
- Weiterhin ist im Hintergrund der Erfindung aus Schmidt-Heydt et al.: Influence of light on food relevant fungi. Int. J. of Food Microbiology 145 (2011) 229-237 bekannt, dass das Bestrahlen von Lebensmitteln mit blauem oder rotem Licht das Wachstum von Penicillium drastisch reduziert. Insbesondere blockiert blaues Licht mit Wellenlänge λ 455 nm vollständig das Wachstum von P. verrucosum.
JP2011142828A - Der Erfindung liegt die Aufgabe zugrunde, die Kontamination der Kühlvorrichtung mit Penicillium zu vermindern.
- Ausgehend von den bekannten Kühlvorrichtungen wird nach der Erfindung vorgeschlagen, dass das Licht eine Wellenlänge λ von 450,8 ± 5 nm aufweist. Dieses Licht hemmt nahezu vollständig das Wachstum von Penicillium und vermindert so die Kontamination des Verdampfers: Unter der Bestrahlung kommt in einem auf den Lamellen bestehenden Bewuchs mit Penicillium der Stoffwechsel unmittelbar zum Stillstand. Der Bewuchs stirbt ab, ohne dass Sporen gebildet werden. Neuer Bewuchs entsteht nicht.
- Im für die Lebensmittelkühlung relevanten Temperaturbereich findet man fast nur Schimmelpilze der Gattung Penicillium. Diese wachsen zwischen +10 und -3 °C sehr gut. Bei Temperaturen bis zu -10 °C kann man noch Wachstum beobachten. Andere Schimmelpilze, wie z. B. Aspergillus oder auch Fusarien benötigen für ihren Stoffwechsel deutlich höhere Temperaturen. In einer erfindungsgemäßen Kühlvorrichtung werden bei üblichen Betriebstemperaturen annähernd alle Schimmelpilze der Gattung Penicillium am Wachstum gehindert und schließlich abgetötet.
- Bevorzugt weist die Bestrahlungseinrichtung einer erfindungsgemäßen Kühlvorrichtung mindestens eine Licht-emittierende Diode (LED) zum Erzeugen des Lichts auf. Dioden sind für den Einsatz in Kühlvorrichtungen besonders geeignet, weil sie gegenüber anderen Leuchtmitteln einen erheblich geringeren Energieverbrauch - und damit eine geringere Wärmeentwicklung - aufweisen.
- Vorzugsweise ist in einer solchen Bestrahlungseinrichtung die Wellenlänge λ der mindestens einen LED einstellbar. Die Bestrahlungseinrichtung mit solchen sogenannten "RGB-LED" kann - alternativ zur Bestrahlung mit blauem Licht - weitere Funktionen übernehmen: Beispielsweise kann die Bestrahlungseinrichtung vorübergehend auf rotes oder grünes Licht umgestellt werden, in dem ein möglicher Befall mit Schimmelpilzen optisch in Form von dunklen Flecken leicht zu erkennen ist. Weiterhin kann die Bestrahlungseinrichtung zur Beleuchtung des Kühlraums auf weißes Licht umgestellt werden.
- Besonders bevorzugt ist in einer LED-Bestrahlungseinrichtung einer erfindungsgemäßen Kühlvorrichtung die mindestens eine LED in ein Harz vergossen. So kann eine große Zahl von LED auf geringem Raum kombiniert werden.
- In einer vorteilhaften Ausprägung weist eine erfindungsgemäße Kühlvorrichtung mindestens ein Messelement auf, mittels dessen die Wellenlänge des Lichts bestimmbar ist. In einer solchen erfindungsgemäßen Kühlvorrichtung kann eine Veränderung der Wellenlänge des Lichts beispielsweise durch Alterung der Leuchtmittel detektiert werden. Bei Verwendung einstellbarer LED kann die Wellenlänge λ automatisch nachgeführt werden.
- Eine erfindungsgemäße Kühlvorrichtung weist vorteilhafter Weise zusätzlich mindestens eine UV-A- und/oder UV-C-Lichtquelle. Unter UV-A-Licht (Wellenlänge λ 315 bis 380 nm, sog. "Schwarzlicht") phosphoresziert Penicillium und ist so auch schon bei nur geringem Befall besonders leicht zu erkennen. Die Wirkung von UV-C wird (wie oben beschrieben) bereits zur Entkeimung eingesetzt.
- Ausgehend von den bekannten Verfahren wird nach der Erfindung vorgeschlagen, dass das Licht eine Wellenlänge λ von 450,8 ± 5 nm aufweist. Ein solches erfindungsgemäßes Verfahren lässt sich mit einer der oben beschriebenen erfindungsgemäßen Kühlvorrichtungen ausführen und zeichnet sich durch die dort genannten Vorteile aus.
- Das erfindungsgemäßen Verfahren ist lebensmittelkonform (nach CE und HACCP geprüft) und kann gerade bei Neuanlagen (Kühlzellen, -schränken, -theken, Gärautomaten) ein Verschimmeln der Verdampfer wirkungsvoll verhindern und die Reinigungszyklen deutlich verlängern. Die Kosten sind im Vergleich zu UV-C sehr viel niedriger, Nachteile wie starke Wärmeabstrahlung, sehr begrenzte Lebensdauer, Gesundheitsgefährdung bei falscher Handhabung und Gefahr des Glasbruchs treten nicht auf.
- Die selektive Frequenz des erfindungsgemäßen Verfahrens regt bestimmte Eiweißmoleküle des Schimmels zum Schwingen an. Die gewählte Frequenz hat eine sehr starke Wirkung auf Stoffwechsel und Wachstum der Schimmelpilze bis hin zum Verkümmern und Absterben. Es wird vermutet, dass ein Genschalter des Schimmelpilzes umgelegt und dadurch das Wachstum verhindert wird, so dass der Schimmelpilz weder Sporen ausbilden noch Resistenzen entwickeln kann.
- Bevorzugt weist in einem erfindungsgemäßen Verfahren die Luft in dem Kühlraum im Mittel eine Temperatur unterhalb 8 °C auf. Dies ist der typische Arbeitsbereich der Kühlvorrichtungen der Anmelderin zur Verwendung in der Lebensmittelindustrie, insbesondere für die Lagerung und Reifung von Backwaren und deren Vorprodukten.
- Besonders bevorzugt wird in einem erfindungsgemäßen Verfahren der mindestens eine Verdampfer mindestens täglich abgetaut. So wird das dauerhafte Vereisen des Verdampfers wirksam vermieden.
- Die Erfindung wird nachfolgend anhand eines Ausführungsbeispiels erläutert. Es zeigen

- Die in
Figur 1 gezeigte erfindungsgemäße Kühlvorrichtung 1 weist eine Vorderwand 2, eine Rückwand 3, zwei Seitenwände 4, einen Boden 5 und eine Decke 6 auf, die jeweils wärme- und lufttechnisch isoliert sind. In der Vorderwand 2 ist eine Tür 7 angebracht. Die Kühlvorrichtung 1 bietet in einem Kühlraum 8 beispielsweise Stellplatz für bis zu drei Stikkenwagen 9 zur Lagerung und Reifung von Teiglingen und für die Lagerung von fertigen Backwaren. - Den Kühlraum 6 begrenzt nach oben eine abgehängte Decke 10, über der ein Verdampfer 11 angebracht ist. Der Verdampfer 11 weist einen Lamellenwärmetauscher 12 auf sowie auf seiner (nicht dargestellten) Auströmseite drei Lüfter zum Umwälzen der Luft. In der Zeichnungsfigur ist die Luftströmung im Betrieb der Kühlvorrichtung 1 durch Pfeile angedeutet: Die Lüfter saugen Raumluft aus dem Kühlraum 6 an der Vorderwand 2 der Kühlvorrichtung 1 zwischen die Decke 6 und die abgehängte Decke 10, und durch die Einströmseite 13 des Lamellenwärmetauschers 12 in den Verdampfer 11 und schieben die gekühlte Luft anschließend an der Rückwand 3 der Kühlvorrichtung 1 wieder in den Kühlraum 6.
- Weiterhin weist die Kühlvorrichtung 1 eine Bestrahlungseinrichtung 14 auf, die zum Bestrahlen der Einströmseite 13 des Verdampfers 11 mit blauem Licht unmittelbar auf den Lamellenwärmetauscher 12 gerichtet ist. Die Bestrahlungseinrichtung 14 weist ein Gehäuse 15 aus einem extrudierten U-Profil aus Aluminium mit einer Breite 16 von 20 mm und einer Höhe 17 von 15 mm und einer Länge 18 von 100 cm auf, in das eine Platine 19 eingelassen ist. Auf der Platine 19 sind rund hundert RGB-LED 20 in einer Reihe nebeneinander in einem Abstand 21 von 10 mm angeordnet.
- Auf der Platine 19 ist weiterhin ein (nicht dargestellter) Treiber für die LED 20 angeordnet mit einem Pulsweiten-Modulationswandler, der die LED 20 mit der für blaues Licht mit einer Wellenlänge λ von 450,8 ± 5 nm passenden Frequenz ansteuert. Über ein nicht dargestelltes Schaltelement können die LED 20 auch zum Emittieren von weißem Licht angesteuert werden. Weiterhin ist auf der Platine 19 ein Messelement 22 (hier: eine Fotozelle mit einem Peak bei 460 nm) zur fortlaufenden Kontrolle der Wellenlänge des blauen Lichts angeordnet.
- Die Platine 19, die LED 20 und die Photozelle sind mit einem Kunstharz mit hoher Bruchfestigkeit und optischer Güte vergossen. Die Bestrahlungseinrichtung 14 weist ein Anschlusskabel 23 zum Anschließen an ein nicht dargestelltes Netzteil mit einer Versorgungsspannung von 24 V und einen durchgeschleiften Kontakt 24 zum Anschließen einer weiteren Bestrahlungseinrichtung 14 auf. Die Bestrahlungseinrichtung 14 weist eine Leistungsaufnahme von 8,5 W auf.
- In einem weiteren, nicht dargestellten Ausführungsbeispiel weist die Bestrahlungseinrichtung LED mit einer festen Wellenlänge von 450 nm auf, sowie einzelne UV-A- und UV-C-LED.

Claims (9)
- Kühlvorrichtung (1) mit einem Kühlraum (6) zur Aufnahme von Kühlgut, mit mindestens einem Verdampfer (11) zum Kühlen von das Kühlgut umströmender Luft, mit mindestens einem Lüfter zum Umwälzen der Luft aus dem Kühlraum (6) durch den mindestens einen Verdampfer (11) und zurück in den Kühlraum (6), mit einem Lamellenwärmetauscher (12) auf einer Einströmseite (13) des mindestens einen Verdampfers (11), durch den die Luft in den mindestens einen Verdampfer (11) einströmt, und mit einem Kältemittel, mittels dessen der Luft in dem mindestens einen Verdampfer (11) Wärme entziehbar ist, und mit einer Bestrahlungseinrichtung (14), mittels derer der Lamellenwärmetauscher mit blauem Licht bestrahlbar ist, dadurch gekennzeichnet, dass das Licht eine Wellenlänge λ von 450,8 ± 5 nm aufweist.
- Kühlvorrichtung (1) nach dem vorgenannten Anspruch, dadurch gekennzeichnet, dass die Bestrahlungseinrichtung (14) mindestens eine Licht-emittierende Diode (LED 20) zum Erzeugen des Lichts aufweist.
- Kühlvorrichtung (1) nach dem vorgenannten Anspruch, dadurch gekennzeichnet, dass die Wellenlänge λ der mindestens einen LED (20) einstellbar ist.
- Kühlvorrichtung (1) nach einem der Ansprüche 2 bis 3, dadurch gekennzeichnet, dass die mindestens eine LED (20) in ein Harz vergossen ist.
- Kühlvorrichtung (1) nach einem der vorgenannten Ansprüche, gekennzeichnet durch mindestens ein Messelement 22, mittels dessen die Wellenlänge des Lichts bestimmbar ist.
- Kühlvorrichtung (1) nach einem der vorgenannten Ansprüche, gekennzeichnet durch mindestens eine UV-A- und/oder UV-C-Lichtquelle.
- Verfahren zum Betreiben einer Kühlvorrichtung (1) mit einem Kühlraum (6) zur Aufnahme von Kühlgut und mit mindestens einem Verdampfer (11) zum Kühlen von das Kühlgut umströmender Luft, wobei mindestens ein Lüfter die Luft aus dem Kühlraum (6) durch den mindestens einen Verdampfer (11) und zurück in den Kühlraum (6) umwälzt, wobei die Luft auf einer Einströmseite (13) des mindestens einen Verdampfers (11) durch einen Lamellenwärmetauscher (12) in den mindestens einen Verdampfer (11) einströmt und die Luft in dem mindestens einen Verdampfer (11) Wärme an ein Kältemittel abgibt, und wobei in der Kühlvorrichtung (1) der Lamellenwärmetauscher (12) mit blauem Licht bestrahlt wird, dadurch gekennzeichnet, dass das Licht eine Wellenlänge λ von 450,8 ± 5 nm aufweist.
- Verfahren nach dem vorgenannten Anspruch, dadurch gekennzeichnet, dass die Luft in dem Kühlraum (6) im Mittel eine Temperatur unterhalb 8 °C aufweist.
- Verfahren nach einem der Ansprüche 7 bis 8, dadurch gekennzeichnet, dass der mindestens eine Verdampfer (11) mindestens täglich abgetaut wird.
