Claims (8)

  1. Dispositif de découpe, en particulier pour un hachoir à viande, comprenant
    - un anneau extérieur (20) présentant un diamètre de sortie et un couteau (10) tournant disposé à l'intérieur de l'anneau extérieur (20),
    - sachant que le couteau (10) est maintenu de manière détachable contre l'anneau extérieur (20),
    - sachant que le couteau (10) possède un moyeu central (11) muni d'un alésage (12), moyeu permettant un appui résistant en rotation en cas de mouvement rotatif dans une direction de rotation (D), et plusieurs lames (13) de couteau disposées autour du moyeu (11) et s'étendant vers l'extérieur de ce dernier, et qui présentent des tranchants (17) bilatéraux,
    - sachant que le couteau (10) possède, contre le côté extérieur, une gorge (16) regardant dans la direction de rotation,
    - sachant que l'anneau extérieur (20) est configuré en anneau ouvert, caractérisé en ce que
    - pour la fixation détachable du couteau (10) n'est prévue, contre l'anneau extérieur (20) ouvert, aucune jonction vissée que ce soit,
    - à l'état monté le couteau (10) est maintenu au moyen d'une jonction par adhérence de formes contre l'anneau extérieur (20) tout en pouvant tourner, à savoir que l'anneau extérieur (20) possède sur son côté intérieur - au moins sur une partie de sa circonférence - un bourrelet (24) qui interagit avec la gorge (16) située contre le couteau (10), et que
    - pour changer le couteau (10) il est possible d'élargir l'anneau extérieur (20) puis de le faire revenir par flexion sur son diamètre de départ.
  2. Dispositif de découpe selon la revendication 1, caractérisé en ce que les extrémités (21, 22) de l'anneau extérieur (20) ouvert sont disposées réciproquement alignées et forment un interstice (23) de longueur (L), sachant que de préférence cette longueur (L) est adaptée à la largeur d'une cale prévue dans le carter du hachoir à viande, qui sert à la disposition résistante en rotation de l'anneau extérieur (20) et qui à l'état monté engrène dans l'interstice (23).
  3. Dispositif de découpe selon la revendication 2, caractérisé en ce qu'à l'état démonté le couteau (10) est détachable de l'anneau extérieur (20) et que pour ce faire l'interstice (23) de l'anneau extérieur (20) ouvert peut être agrandi par élargissement manuel, ou assisté par un outil, de l'anneau extérieur (20).
  4. Dispositif de découpe selon l'une des revendications 1 à 3, caractérisé en ce que le couteau (10) a la forme d'une étoile ou d'un anneau, les bords extérieurs (14) des lames (13) étant, dans le cas de cet anneau, reliés entre eux via une couronne (15) de couteau annulaire.
  5. Dispositif de découpe selon la revendication 1, caractérisé en ce que le bourrelet (24) prévu contre le côté intérieur de l'anneau extérieur (20), et les extrémités (21, 22) de l'anneau extérieur (20) ouvert, aboutissent à l'interstice (23) et possèdent un chanfrein d'extraction (25) facilitant l'enlèvement du couteau (10).
  6. Dispositif de découpe selon la revendication 5, caractérisé en ce que le bourrelet (24) prévu contre le côté intérieur de l'anneau extérieur (20) prend respectivement fin devant l'interstice (23) et que les deux extrémités (26) du bourrelet présentent respectivement une gorge de précision (27), sachant que les orifices des deux gorges de précision (27) sont dirigés l'un vers l'autre.
  7. Dispositif de découpe selon la revendication 6, caractérisé en ce qu'une clavette (30) prévue présentant la même section que le bourrelet (24) est insérée entre les deux gorges de précision (27) aux extrémités (26) du bourrelet et qu'elle est reliée avec les extrémités (21, 22) de l'anneau extérieur (20) ouvert, faisant que ces extrémités sont, pour faciliter le montage, immobilisées à une distance réciproque souhaitée correspondant à la longueur (L) de l'interstice (23).
  8. Dispositif de découpe selon la revendication 7, caractérisé en ce que la clavette (30) possède deux alésages borgnes (31) pour établir la liaison avec les deux extrémités (21, 22) de l'anneau extérieur (20) ouvert, alésages dans lesquels engrènent des vis de fixation (40) qui depuis le côté extérieur de l'anneau extérieur (20) traversent ses extrémités (21, 22) dans la zone d'un alésage traversant (28).
