Die Erfindung betrifft eine Schneideinrichtung, insbesondere für einen Fleischwolf, welche neben dem eigentlichen Messer einen Außenring umfasst.The invention relates to a cutting device, in particular for a meat grinder, which comprises an outer ring in addition to the actual knife.
Herkömmliche Fleischwölfe weisen bekanntlich einen Schneidsatz auf, mit jeweils zwischen zwei Lochscheiben angeordneten Messern. Dieser aus Lochscheiben und Messern gebildete Schneidsatz wird mit Vorspannung in Axialrichtung des Fleischwolfes zusammengehalten. Insbesondere in der fleischverarbeitenden Industrie wird der Schneidsatz eines solchen Fleischwolfes hohen Belastungen ausgesetzt. Während des Betriebes des Fleischwolfes wird das zu zerkleinernde Gut durch die Förderschnecke in Axialrichtung bewegt und mit hohem Druck gegen den Schneidsatz und damit gegen die Lochscheiben und Messer gepresst. Die hierfür eingesetzten HD-Messer müssen für einen solchen Hochleistungseinsatz (Heavy Duty) ausgelegt sein. Eine gute Schneidwirkung wird insbesondere dann erreicht, wenn die Messer und Lochscheiben eine hohe Parallelität zueinander aufweisen. Es ist bekannt, im Bereich des HD-Messers einen Außenring zu verwenden. Dieser ist im Gehäuse des Fleischwolfes gegen Verdrehung gesichert und dient zur Einstellung des axialen Abstandes des Messers zu den benachbarten Lochscheiben. Der Außenring nimmt des Weiteren beim Hochleistungseinsatz als Druckträger Axialkräfte auf. Das innerhalb dieses Außenrings drehbeweglich angeordnete Messer kann sich frei bewegen. Nach einer gewissen Gebrauchsdauer ist es notwendig, die Schneiden der Messer nachzuschleifen, um ein gute Schneidqualität zu gewährleisten. Hierzu wird der Schneidsatz, d.h. das Messer zusammen mit dem Außenring, aus dem Fleischwolf entnommen. Zur Einhaltung der Parallelität beim Einbau der Messer in den Fleischwolf ist es wichtig, dass der Außenring und das zugehörige Messer nicht verwechselt werden, d.h. ein Messer ist immer auf einen Außenring abgestimmt. Dies ermöglicht eine drehmomentübertragende Lagerung des Messers bei einer Drehbewegung in eine durch die Förderschnecke des Fleischwolfes initiierte Drehrichtung. Claims (8)
- Cutting device, especially for a meat grinder, comprising- an outer ring (20) with a starting diameter and a rotatable blade (10) arranged inside the outer ring (20)- whereby the blade (10) is detachably held on the outer ring (20),- whereby the blade (10) has a central hub (11) provided with a bore (12) for non-rotational mounting during a rotational movement in a direction of rotation (D) and a plurality of blade wings (13) with double-sided cutting edges (17) arranged around the hub (11) and extending outwardly therefrom,- whereby the blade (10) has a groove (16) on the outside pointing in the direction of rotation,- whereby the outer ring (20) is designed as an open ring, characterised in that- no screw connections are provided for the detachable mounting of the blade (10) on the open outer ring (20),- in the assembled state, the blade (10) is held rotatably on the outer ring (20) by means of a form-fitting connection, i.e. the outer ring (20) has a bead (24) on its inner side - at least over a partial circumference - which interacts with the groove (16) on the blade (10), and- the outer ring (20) can be expanded and bent back into the initial diameter for replacing the blade (10).

- Cutting device according to one of claims 1 to 3, characterised in that the blade (10) has the shape of a blade star or of a ring blade, in the latter case the outer wing edges (14) of the blade wings (13) are connected to one another via an annular blade ring (15).
- Cutting device according to claim 1, characterised in that the bead (24) provided on the inner side of the outer ring (20) - together with the ends (21, 22) of the open outer ring (20) - end at the gap (23) and have a lead-out bevel (25) supporting the removal of the blade (10).
