Procédé selon la revendication 1 ou 2, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) s'introduit sur l'un des côtés (S2) dans le tronçon de produit alimentaire (2) et en ce qu'une portion de tranches est évacuée au moyen du système de transport (14) sur le côté opposé (S1) du tronçon de produit alimentaire (2).
  4. Procédé selon l'une quelconque des revendications 1 à 3, caractérisé en ce qu'une pluralité de tranches est transférée en commun de l'au moins un dispositif de réception intermédiaire (15) directement sur le système de transport (14).
  5. Procédé selon l'une quelconque des revendications 1 à 4, caractérisé en ce que lors du transfert des tranches coupées de l'au moins un dispositif de réception intermédiaire (15) sur le système de transport (14), des éléments porteurs (16) de l'au moins un dispositif de réception intermédiaire (15) entrent dans des espaces intermédiaires entre des lanières (29) voisines du système de transport' (14), après le transfert, une surface de l'élément porteur (16) soutenant les tranches étant disposé sous une surface des lanières (29) portant les tranches du système de transport (14).
  6. Procédé selon l'une quelconque des revendications 1 à 5, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) effectue un déplacement composé de mouvements partiels de translation, le long d'une trajectoire fermée sur soi,
    - alors que sur la base d'une position d'attente, dans laquelle il se trouve à l'extérieur d'une projection de la section transversale du tronçon de produit alimentaire (2), dans un plan perpendiculaire à l'axe longitudinal (8) du tronçon de produit alimentaire (2) et contenant la surface des éléments porteurs (16),
    - il est déplacé sensiblement à la parallèle du plan précédemment cité dans une première position de reprise, dans laquelle une première tranche d'une nouvelle portion est reprise,
    - il est déplacé ensuite successivement dans des positions de reprises consécutives, dans lesquelles pour créer le schéma de dépose respectivement souhaité des tranches et pour la reprise de la tranche chaque fois suivante, il est déplacé à l'encontre de la position de reprise prédéterminée en direction d'avance du tronçon de produit alimentaire (2) et/ou à la perpendiculaire de la direction d'avance du tronçon de produit alimentaire (2),
    - après reprise d'un nombre prédéfini de tranches, il adopte une position de vidage, dans laquelle, considérés dans la direction d'avance, le dispositif de réception intermédiaire (15) et le système de transport (14) se sont déplacés l'un par rapport à l'autre de sorte que les tranches aient perdu le contact avec la surface des éléments porteurs (16) et sont entrées en remplacement en contact avec la surface des lanières (29) du système de transport (14)
    - et pour finir, il est de nouveau ramené en position d'attente, sans toucher à cet effet par les éléments porteurs (16) le plan de la surface des lanières (29) du système de transport (14), dans la région des lanières (29).
  7. Procédé selon l'une quelconque des revendications 1 à 6, caractérisé en ce que le système de transport (14) est déplacé en direction d'avance vers le tronçon de produit alimentaire (2), les tranches se trouvant sur l'au moins un dispositif de réception (15) étant reprises par le dispositif de réception intermédiaire (15) qui à ce moment-là est à l'arrêt.
  8. Procédé selon l'une quelconque des revendications 1 à 7, caractérisé en ce qu'en position d'attente de l'au moins un dispositif de réception intermédiaire (15), les surfaces de ses éléments porteurs (16) se situent dans le même plan que la surface dirigée vers le tronçon de produits alimentaires (2) de la dernière tranche entièrement coupée sur le système de transport (14).
  9. Procédé selon l'une quelconque des revendications 1 à 8, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) ne quitte la position d'attente qu'une fois que la lame (5) a d'ores et déjà commencé à couper une tranche suivante et se trouve d'ores et déjà à l'intérieur de la section transversale du tronçon de produit alimentaire (2), lors de son déplacement dans la projection de la section transversale du tronçon de produit alimentaire (2) dans un plan perpendiculaire à la direction d'avance, de préférence l'au moins un dispositif de réception intermédiaire (15) relève avec la surface de ses éléments porteurs (16) une partie de la tranche actuellement naissante, inclinée d'ores et déjà vers le bas, sous l'effet de la force de gravité ou reposant sur la tranche précédemment coupée.
  10. Dispositif (1) pour couper en tranches un tronçon de produit alimentaire (2), avec
    a) un dispositif de coupe (3) qui comporte une lame rotative (5),
    b) un dispositif d'avance (10) avec lequel le tronçon de produit alimentaire (2) peut être avancé vers le dispositif de coupe (3),
    c) au moins un dispositif de réception intermédiaire (15) sur lequel pendant l'avance du tronçon de produit alimentaire (2), des tranches coupées successivement de ce dernier peuvent être déposées et qui est mobile aussi bien à la transversale de la direction d'avance que dans cette dernière, une dépose en pile ou en bardeau des tranches pouvant être créée,
    d) un système de transport (14) sur lequel une pluralité de tranches coupées peut être transférée ensemble de l'au moins un dispositif de réception intermédiaire (15),
    e) lors de l'utilisation, une pluralité de tranches coupées ensemble pouvant être transférée de l'au moins un dispositif de réception intermédiaire (15) sur le système de transport (14), après avoir été reprises par le système de transport (14), les tranches transférées pouvant être finies par coupe et ajout d'au moins une tranche supplémentaire et pouvant ensuite être évacuées sous la forme d'une portion finie,
    caractérisé en ce que
    f) la lame (5) d'une part et chaque dispositif de réception intermédiaire (15) d'autre part peuvent être introduits dans le tronçon de produit alimentaire (2), dans la section transversale (Q) de ce dernier sur des côtés opposés (S1, S2).
  11. Dispositif selon la revendication 10, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) comporte des éléments porteurs (16) qui sont disposés de sorte à être positionnables dans des espaces intermédiaires entre des lanières voisines (29) du système de transport (14), un plan défini par la surface des éléments porteurs (16) s'étendant à la parallèle d'un plan défini par la surface des lanières (29) du système de transport (14).
  12. Dispositif selon la revendication 10 ou 11, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) est en forme de fourche et les éléments porteurs (16) sont conçus en forme de dents et sont disposés sur une longrine (17).
  13. Dispositif selon l'une quelconque des revendications 10 à 12, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) est logé dans un cadre récepteur (18), en étant déplaçable à la perpendiculaire de la direction d'avance et le cadre récepteur (18) est logé en étant déplaçable dans la direction d'avance sur un châssis de machine (23), le cadre récepteur (18) comportant de préférence deux guidages linéaires (19) disposés de part et d'autre à côté du système de transport (14) pour le dispositif de réception intermédiaire (15).
  14. Dispositif selon l'une quelconque des revendications 10 à 13, caractérisé en ce que les éléments porteurs (16) de l'au moins un dispositif de réception intermédiaire (15) ont une longueur qui, mesurée à la perpendiculaire de la direction d'avance correspond au moins au double, de préférence au moins au triple de largeur de la tranche coupée, mesurée à la perpendiculaire du dispositif d'avance.
  15. Dispositif selon l'une quelconque des revendications 10 à 14, caractérisé en ce que (en partant de sa position d'attente), dans une projection de la section transversale du tronçon de produit alimentaire (2), dans un plan qui est formé par les éléments porteurs (16) de l'au moins un dispositif de réception intermédiaire (15), l'au moins un dispositif de réception intermédiaire (15) peut être introduit dans la même direction que celle dans laquelle les tranches coupées peuvent être évacuées du système de transport (14).
  16. Dispositif selon l'une quelconque des revendications 10 à 15, caractérisé en ce que l'au moins un dispositif de réception intermédiaire (15) s'introduit à partir d'un côté (S1) dans une projection de la section transversale du tronçon de produit alimentaire (2), dans un plan qui est formé par la surface des éléments porteurs (16) du dispositif de réception intermédiaire (15), lequel côté (S2) est opposé à un côté (S1) sur lequel une tranche en cours de formation se détache du tronçon de produit alimentaire (2), sous l'effet de la force de gravité.
