Claims (4)

  1. Dispositif pour la découpe de produits alimentaires (1), en particulier saucisses, viandes ou fromages, comprenant
    un support de produit (3) pour au moins un produit (1),
    un couteau de coupe agencé à la suite du support de produit (3) et auquel le produit (1) peut être amené le long d'une direction de convoyage (I),
    au moins un porte-produit (7) déplaçable le long de la direction de convoyage (I) et coopérant au moins temporairement avec le produit (A) pendant le processus de coupe, et
    une unité de commande,
    caractérisé en ce que
    l'unité de commande est reliée à un dispositif de détection pour détecter le contour du produit et est réalisée pour, en fonction du contour de produit détecté, piloter le porte-produit (7) de telle façon que la distance entre le porte-produit (7) et le support de produit (3) est réglable pendant le processus de coupe de manière que le porte-produit (7) maintient le produit (1) en contact avec le support de produit (3) pendant le processus de coupe.
  2. Dispositif selon la revendication 1,
    caractérisé en ce que le porte-produit (7) est réalisé pour retenir fermement le produit (1) au niveau de sa portion terminale postérieure, et de préférence le porte-produit (7) est réalisé en forme de crochet ou sous la forme d'un dispositif de préhension sous vide.
  3. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que le porte-produit (7) est susceptible d'être abaissé, pour la découpe d'une portion terminale postérieure du produit (A) qui va en se rétrécissant, de telle façon que le porte-produit (7) maintient une face inférieure de la portion terminale postérieure du produit (A) en contact avec le support de produit (3) pendant le processus de coupe.
  4. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que le porte-produit (7) est capable de pivoter pour régler la distance entre le porte-produit (7) et le support de produit (3).
