    c) Après la désolidarisation du tronçon de produit alimentaire (2), pour former une portion, des tranches coupées sont déposées sur un récepteur intermédiaire (15) mobile à la transversale de la direction d'avance, ainsi qu'en direction d'avance.
    d) Une pluralité de tranches est transférée en commun du récepteur intermédiaire (15) sur un système de transport (14), à l'aide duquel les tranches sont évacuées,
    caractérisé par les attributs suivants :
    e) Sur le récepteur intermédiaire (15), il est créé à partir des tranches coupées un agencement en bardeaux, le récepteur intermédiaire (15) étant déplacé à la transversale de la direction d'avance du tronçon de produit alimentaire (2).
    f) Dans un état non terminé, la portion est transférée du récepteur intermédiaire (15) sur le système de transport (14), après avoir été reprise par le système de transport (14), la portion transférée est achevée par coupe et ajout d'au moins une tranche supplémentaire, puis évacuée.
  2. Procédé selon la revendication 1, caractérisé en ce qu'une pluralité de tranches est transférée en commun, directement du récepteur intermédiaire (15) sur le système de transport (14).
  3. Procédé selon la revendication 1 ou 2, caractérisé en ce que lors du transfert des tranches coupées du récepteur intermédiaire (15) sur le système de transport (14), des éléments porteurs du récepteur intermédiaire (15) pénètrent dans des interstices entre des lanières (29) voisines du système de transport (14), après le transfert, une surface des éléments porteurs (16) supportant les tranches étant disposée en-dessous d'une surface portant les tranches des lanières (29) du système de transport (14).
  4. Procédé selon l'une quelconque des revendications 1 à 3, caractérisé en ce que le récepteur intermédiaire (15) effectue un mouvement composé de segments de mouvements en translation le long d'une trajectoire fermée sur soi, alors que
    - à partir d'un position d'attente, dans lequel il se trouve à l'extérieur d'une projection de la section transversale du tronçon de produit alimentaire (2) dans un plan perpendiculaire à l'axe longitudinal (8) du tronçon de produit alimentaire (2) et contenant la surface des éléments porteurs (16),
    - il est déplacé sensiblement à la parallèle du plan précédemment cité, dans une première position de reprise, dans laquelle une première tranche d'une nouvelle portion est prise,
    - il est déplacé ensuite successivement dans des positions de reprises suivantes, dans lesquelles, pour créer le schéma de dépose respectivement souhaité des tranches et pour la prise de la tranche chaque fois suivante, il est déplacé à l'encontre de la position de reprise précédente en direction d'avance du tronçon de produit alimentaire (2) et/ou à la perpendiculaire de la direction d'avance du tronçon de produit alimentaire (2),
    - après la reprise d'un nombre prédéfini de tranches, il adopte une position de vidage dans laquelle, considérés en direction d'avance, le récepteur intermédiaire (15) et le système de transport (14) se sont déplacés l'un par rapport à l'autre jusqu'à ce que les tranches aient perdu le contact avec la surface des éléments porteurs (16) et sont entrées au lieu de cela en contact avec la surface des lanières (29) du système de transport (14)
    - et pour finir, il est de nouveau ramené dans la position d'attente, sans toucher à cet effet avec les éléments porteurs (16) la face garnie de portions du plan de la surface des lanières (29) du système de transport (14).
  5. Procédé selon l'une quelconque des revendications 1 à 4, caractérisé en ce que le système de transport (14) est déplacé en direction d'avance, vers le tronçon de produit alimentaire (2), les tranches se trouvant sur le récepteur intermédiaire (15) étant reprises par le récepteur intermédiaire (15) qui est à l'arrêt à ce moment là.
  6. Procédé selon l'une quelconque des revendications 1 à 5, caractérisé en ce que le récepteur intermédiaire (15) ne quitte la position intermédiaire qu'une fois que la lame (5) a déjà commencé à couper une tranche suivante et se trouve d'ores et déjà à l'intérieur de la section transversale du tronçon de produit alimentaire (2), de préférence lorsque lors de son déplacement dans une projection de la section transversale du tronçon de produit alimentaire (2), dans un plan perpendiculaire à la direction d'avance, le récepteur intermédiaire (15) soulève avec la surface de ses éléments porteurs (16) une partie qui pend d'ores et déjà sous l'effet de la force de gravité ou qui repose sur la tranche précédemment coupée de la tranche actuellement en formation.
  7. Procédé selon l'une quelconque des revendications 1 à 6, caractérisé en ce que la lame (5) d'une part et le récepteur intermédiaire (15) d'autre part pénètrent dans des côtés opposés (S1, S2) du tronçon de produit alimentaire (2) dans la section transversale (Q) de ce dernier.
  8. Dispositif (1) pour couper un tronçon de produit alimentaire (2) en tranches, avec
    a) un dispositif de coupe (3), qui comporte une lame (5) rotative,
    b) un dispositif d'avance (10) permettant de faire avancer le tronçon de produit alimentaire (2) vers le dispositif de coupe (3),
    c) un récepteur intermédiaire (15), sur lequel les tranches successivement coupées du tronçon de produit alimentaire (2) pendant l'avance de ce dernier, peuvent être posées et qui est mobile aussi bien à la transversale de la direction d'avance que dans cette dernière,
    d) un système de transport (14), sur lequel une pluralité de tranches coupées peut être transférée en commun à partir du récepteur intermédiaire (15),
    caractérisé en ce que
    e) le récepteur intermédiaire (15) est mobile à la transversale du tronçon de produit alimentaire (2) de telle sorte que sur sa surface, un agencement au moins en partie en bardeaux linéaires peut être créé et
    f) le récepteur intermédiaire (15) présente la forme d'une fourche, qui est formée d'une pluralité d'éléments porteurs (16) parallèles, qui pénètrent dans des interstices entre des lanières (29) voisines du système de transport (14), pour permettre de transférer la portion dans un état non fini du récepteur intermédiaire (15) sur le système de transport (14), après avoir été reprise par le système de transport (14), par coupe et ajout d'au moins une tranche supplémentaire, la portion transférée étant achevée et évacuée par la suite.
  9. Dispositif selon la revendication 8, caractérisé en ce qu'à partir d'une position de reprise dans laquelle il peut reprendre la première tranche d'une nouvelle portion, au cours de la création d'un dépôt de tranches en aisseau, le récepteur intermédiaire (15) peut s'éloigner successivement plus loin, d'une position d'attente, dans laquelle il se trouve totalement à l'extérieur d'une projection de la section transversale (Q) du tronçon de produit alimentaire (2) dans un plan parallèle au plan de coupe.
  10. Dispositif selon la revendication 8 ou 9, caractérisé en ce que la lame (5) d'une part et le récepteur intermédiaire (15) d'autre part peuvent s'introduire dans des côtés opposés (S1, S2) du tronçon de produit alimentaire (2), dans la section transversale (Q) de ce dernier, alors que de préférence la fourche du récepteur intermédiaire (15) peut s'introduire sur l'un des côtés (S2) dans la section transversale (Q) et qu'une portion de tranches peut être évacuée à l'aide du système de transport (14) sur le côté opposé (S 1) du tronçon de produit alimentaire (2).
  11. Dispositif selon l'une quelconque des revendications 8 à 10, caractérisé en ce que le récepteur intermédiaire (15) est logé en étant déplaçable dans un cadre collecteur (18), à la perpendiculaire de la direction d'avance et le cadre collecteur (18) est logé sur un châssis de machine (23) en étant déplaçable dans la direction d'avance, le cadre collecteur (18) présentant deux guidages linéaires (19) pour le récepteur intermédiaire (15), disposés de part et d'autre à côté du système de transport (14).
  12. Dispositif selon l'une quelconque des revendications 8 à 11, caractérisé en ce qu'en commun avec un système d'évacuation (13), le système de transport (14) est logé sur un cadre d'évacuation et en ce que le cadre d'évacuation (34) est logé sur un châssis de machine (23) en étant réglable, de préférence déplaçable et/ou pivotant.
  13. Dispositif selon l'une quelconque des revendications 8 à 12, caractérisé en ce que les éléments porteurs (16) du récepteur intermédiaire (15) ont une longueur, qui mesurée à la perpendiculaire de la direction d'avance, correspond au moins au double, de préférence au moins au triple de la largeur des tranches coupées, mesurée à la perpendiculaire de la direction d'avance.
  14. Dispositif selon l'une quelconque des revendications 8 à 13, caractérisé en ce (qu'à partir de sa position d'attente), le récepteur intermédiaire (15) peut s'introduire dans la même direction dans une projection de la section transversale du tronçon de produit alimentaire (2) dans un plan qui est formé par les éléments porteurs (16) du récepteur intermédiaire (15) que celle dans laquelle les tranches coupées peuvent être évacuées du système de transport (14).
  15. Dispositif selon l'une quelconque des revendications 8 à 14, caractérisé en ce que le récepteur intermédiaire (15) s'introduit à partir d'un côté dans une projection de la section transversale du tronçon de produit alimentaire (2) dans un plan qui est formé par la surface des éléments porteurs (16) du récepteur intermédiaire (15) qui est opposé à un côté sur lequel une tranche en cours de formation se détache du tronçon de produit alimentaire (2), sous l'effet de la force de gravité.
