Claims (10)
- Dispositif de traitement par la chaleur de substances, notamment d'aliments, avec une chambre de cuisson (2) entourée d'un boîtier (1), une chambre de ventilation (4) avec un ventilateur de circulation d'air, séparée de la chambre de cuisson (2) par une tôle de séparation (3) mais reliée en termes de courant, un système destiné à produire à l'intérieur de la chambre de cuisson (2) un médium de traitement contenant de la vapeur, un système de condensation (16) pour condenser la vapeur excédentaire, ainsi qu'avec des systèmes de fermeture (20) dans tous les conduits sortant de la chambre de cuisson, caractérisé en ce que le système de condensation (16, 23) est configuré comme un système de co-condensation s'étendant dans la chambre de cuisson (2) depuis la zone de pression (13) du ventilateur de circulation d'air (5).
- Dispositif selon la revendication 1, caractérisé en ce qu'au moins une buse d'injection (16) se trouvant dans la zone de pression (13) immédiate du ventilateur de circulation d'air (5) et dont la direction de jet (17) est essentiellement orientée dans la direction du courant (18) du médium de traitement, est prévue pour la condensation en mélange.
- Dispositif selon la revendication 2, caractérisé en ce que la buse d'injection (16) ou les buses d'injection est disposée sur la paroi (15) de la chambre de ventilation (13) en regard de la fente de passage (10) de la tôle de séparation (3) avec une direction de jet (17) orientée vers la fente de passage (10) située à l'extrémité inférieure de la tôle de séparation (3).
- Dispositif selon la revendication 3, caractérisé en ce que dans la zone de la buse d'injection ou des buses d'injection, le sol de la chambre de cuisson (11) comporte un renfoncement (12) en forme de canal s'étendant dans la chambre de cuisson (2) depuis la zone de pression (13) de la chambre de ventilation (4) et dont le sol (19) est incliné en direction de la chambre de cuisson, et que la buse d'injection (16) ou les buses d'injection est ou sont disposée(s) sur la face frontale (15) du renfoncement (12) en forme de canal attribuée à la zone de pression (13) du ventilateur à circulation d'air (5).
- Dispositif selon la revendication 4, caractérisé en ce que la largeur du renfoncement (12) correspond à environ 20 à 25 % de la largeur du sol de l'appareil.
- Dispositif selon la revendication 4 ou 5, caractérisé en ce que, le renfoncement (12) est recouvert à partir de la tôle de séparation (3) sur une partie de sa longueur par une protection contre les projections (24).
- Dispositif selon la revendication 6, caractérisé en ce que la protection contre les projections (24) est percé d'ouvertures.
- Dispositif selon l'une quelconque des revendications 4 à 7, caractérisé en ce qu' un écoulement de l'appareil (14) est prévu à l'endroit le plus profond du renfoncement (12).
- Dispositif selon l'une quelconque des revendications 4 à 8, caractérisé en ce qu' un écoulement séparé est prévu pour l'eau de la condensation en mélange.
- Dispositif selon l'une quelconque des revendications 1 à 9, caractérisé en ce que la chambre de cuisson comporte un conduit d'entrée (26) pour l'air ambiant contrôlé par une vanne de dépression (25).
