Description
- Das Reibmoment der Antriebs-/Messereinheit wird wesentlich reduziert, der Wirkungsgrad des Antriebs dadurch erhöht und somit der Energieverbrauch geringer.
- Die Radialbelastung auf die Drehlagerelemente der Antriebs-/Messereinheit wird durch den Wegfall der Getrieberadialkraft vermindert und wirkt sich somit günstig auf die Lebensdauer der Lagerelemente aus.
- Das Laufverhalten der Maschine wird durch den Wegfall des Getriebes verbessert und führt zu einer Reduzierung der Laufgeräusche.
- Die Zahl der Verschleißteile wird reduziert und führt damit zu einer erhöhten Standzeit der Maschine. Außerdem wird der Service vereinfacht.
- Der Gehäuseaufbau der Schneidemaschine ist optimaler gestaltbar. Insgesamt ist der Raumbedarf geringer und erlaubt eine flachere Bauweise. Auch die bekannte Maschinenausführung mit schrägstehender Messerebene und Schwerkraft-Schnittgutzufuhr ist vorteilhaft ausführbar.
- Unterschiedliche Drehmomentbelastungen während des Schneidbetriebs sind mit einem flexiblen elektronischen Regler verlustarm ausgleichbar.
- Kurze Spitzenlasten erzeugen kein Kippmoment (Geräteblockierung), sondern werden mittels einer kurzfristig höheren Stromaufnahme des Motors ausgeglichen.
- Beim Leerlauf ist das wirkende Drehmoment sehr gering und führt zu einer niedereren Stromaufnahme.
- Außer dem Vorteil der Energieeinsparung wird dadurch zusätzlich die Erwärmung der Maschine während des Betriebs sehr niedrig gehalten und deshalb sind Lüfter bzw. Lüftungsschlitze zur Wärmeabfuhr nicht notwendig.
- Die Wärmeübertragung auf das empfindliche Schneidgut über das Kreismesser und das Maschinengehäuse im Scheibenablagebereich ist sehr gering, weil die Gesamt-Verlustleistung, bedingt durch die verlustarme elektronische Regelung, klein ist.
- Eine zusätzliche Optimierung des Schneidverhaltens bei unterschiedlicher Schneidgutbeschaffenheit wird durch die Regulierbarkeit der Schnittgeschwindigkeit erreicht.
- Der Einstellbereich der Schnittgeschwindigkeit mittels Drehzahl-Sollwertgeber liegt, in Anpassung an die verschiedenen Lebensmittelarten wie Wurst, Fleisch, Käse, Fisch, ca. zwischen 140 und 300 m/min.

Claims (10)
- Aufschnitt-Schneidemaschine zum Schneiden von Nahrungsmitteln mit einem Maschinengehäuse und einem darin gelagerten und elektromotorisch angetriebenen Kreismesser, mit einem Messerschutzring (20) und einer Messerabdeckung (25), und mit einem parallel zum Kreismesser hin- und herverschiebbaren Schlitten mit einer Schneidgutaufnahme zur Förderung des Schneidguts während des Schneidvorgangs,
dadurch gekennzeichnet,
daß das Kreismesser (5) an einer Lagerwelle (12) mittels eines auf derselben Lagerwelle (12) gelagerten Antriebsmotors (11) direkt angetrieben wird, wobei die Lagerwelle ausschließlich im Bereich des Antriebsmotors gelagert ist, und
daß der Antriebsmotor (11) und das Kreismesser (5) zusammen mit dem Messerschutzring (20) und der Messerabdeckung (25) zu einer kompakten Antriebs-/Messereinheit (4) verbunden sind. - Schneidemaschine nach Anspruch 1, dadurch gekennzeichnet, daß das Maschinengehäuse (2) einen lösbaren Deckel (3) aufweist, der an seiner mittig zur Lagerwelle (12) liegenden Trennebene (34) zum kompletten Ausbau der Antriebs-/Messereinheit (4) geöffnet werden kann.
- Schneidemaschine nach einem der Ansprüche 1 oder 2, dadurch gekennzeichnet, daß die Lagerwelle (12) zweifach gelagert ist und daß die beiden Lagerstellen (18, 18') der Lagerwelle (12) als Kugellager mit Dichtscheiben ausgeführt sind.
- Schneidemaschine nach einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, daß der Messerschutzring (20) an einem Lagerschild (17) des Antriebsmotors (11) befestigt ist und daß an der Nabe (21) elastische Dichtungen (22, 23) angeordnet sind, welche den Innenraum des Antriebsmotors (11) und den Innenraum des Maschinengehäuses (2) mit Deckel (3) abdichten.
- Schneidemaschine nach einem der Ansprüche 1 bis 4, dadurch gekennzeichnet, daß der Antriebsmotor (11) ein elektronisch kommutierter Gleichstrommotor oder ein Drehstrommotor ist.
- Schneidemaschine nach Anspruch 5, dadurch gekennzeichnet, daß dem Antriebsmotor (11) ein elektronischer Regler und ein Drehzahl-Sollwertgeber (33) vorgeschaltet ist.
- Schneidemaschine nach einem der Ansprüche 1 bis 6, dadurch gekennzeichnet, daß die Lagerwelle (12) zur Befestigung des Kreismessers (5) einen Flansch (19) aufweist.
- Schneidemaschine nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, daß die Befestigung der Messerabdeckung (25) durch das Zentrum der als Hohlwelle ausgebildeten Lagerwelle (12) hindurchgeführt ist und an der vom Kreismesser (5) abgewandten Seite des Antriebsmotors (11) mittels Drehgriff (26) lösbar befestigt ist.
- Schneidemaschine nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, daß die Messerabdeckung (25) in einer Hohlachse (28) mittels zapfenförmiger Verdrehsicherung (30) formschlüssig fixiert und zentriert wird und in axialer Richtung der Hohlachse (28) justierbar und mit einer Kontermutter (31) feststellbar ist.
- Schneidemaschine nach Anspruch 9, dadurch gekennzeichnet, daß an der Kontermutter (31) eine elastische Lippendichtung (32) angebracht ist, die das Maschinengehäuse (2) abdichtet.
