Abstract
Description
- Die Erfindung betrifft eine Grillplatte, die an ihrer Unterseite mit einer Heizvorrichtung versehen ist. Eine derartige Grillplatte ist bspw. aus der DE-OS 34 07 965 bekannt.
- Die bekannte Grillplatte weist eine Dicke von nur vorzugsweise 2 bis 4 mm auf, ist also verhältnismäßig dünn. Hierdurch soll erreicht werden, daß die Grillplatte schnell aufgeheizt und wieder abgekühlt werden kann. Allerdings ist es hierzu erforderlich, die Grillplatte durch Versteifungsrippen und Randzargen zu versteifen.
- Bei derartigen Grillplatten wird das Grill- oder Gargut direkt auf die heiße Grillplatte aufgelegt und kann so fett- und kalorienarm unter Erhaltung sämtlicher Wertstoffe zubereitet werden. Da eine sehr dünne Grillplatte nur eine verhältnismäßig geringe Wärmekapazität aufweist, wird beim Aufbringen einer größeren Menge an Gargut, bspw. eines größeren Fleischstückes, die Temperatur der Grillplatte abgesenkt und muß dann, bspw. durch eine entsprechende Regeleinrichtung der Heizvorrich tung, nachgeregelt werden. Dies ist vom Standpunkt eines Kochs her unbefriedigend, da die plötzliche Temperaturabsenkung bspw. dazu führt, daß sich die Poren eines Fleischstückes an der Außenseite nicht genügend schnell schließen; dies kann dazu führen, daß das Fleischstück zäh wird. Weiterhin lassen sich mit einer dünnen Grillplatte geringer Wärmekapazität nur verhältnismäßig kleine Speisenmengen zur gleichen Zeit zubereiten.
- Wird dagegen, um diesem Problem zu begegnen, eine Grillplatte höherer Wärmekapazität vorgesehen, also größerer Dicke, so ergeben sich dann Probleme, wenn eine derartige Grillplatte in eine Küchenarbeitsplatte, Restaurantarbeitsplatte oder dergleichen eingebaut werden soll. Eine derartige Grillplatte muß nämlich eine verhältnismäßig große Fläche aufweisen und darf nur in der Mitte dieser Fläche erhitzt werden, damit am Rand der Grillplatte eine genügend niedrige Temperatur herrscht, die mit den Materialien verträglich ist, aus denen bspw. Theken bestehen, in welche die Grillplatte eingebaut werden soll. Eine Grillplatte mit einer Temperatur im Zentrum von bspw. 200 bis 250° C darf daher am Rand nur eine Temperatur von etwa höchstens 80° C im Betrieb aufweisen, damit keine Gefahr für das Thekenmaterial besteht. Da andererseits zur Zubereitung von Speisen eine bestimmte Mindestfläche im Zentrum nicht überschritten werden kann, wäre eine derartige Grillplatte so groß, daß sie sich nicht in übliche Theken oder bspw. aus der Küchentechnik genormte Ausschnitte von Arbeitsplatten einsetzen ließe; in normgerechte Küchen- oder Restaurantmöbel ließe sich daher eine derartige Grillplatte nicht einbauen.
- Der Erfindung liegt daher die Aufgabe zugrunde, eine Grillplatte zur Verfügung zu stellen, die eine genügend große nutzbare Arbeitsfläche aufweist und dennoch einbaubar ist.
- Der Erfindung liegt die Erkenntnis zugrunde, eine Lösung der voranstehenden Probleme dadurch zu versuchen, daß die Wärmeübertragung vom zur Speisenzubereitung nutzbaren Zentrum der Grillplatte bis zum Rand verringert wird.
- Die Aufgabe wird gemäß der Erfindung gelöst durch eine mit an ihrer Unterseite mit einer Heizvorrichtung versehene Grillplatte, die allseitig mit einem Randbereich aus einem Material mit geringer Wärmeleitung versehen ist.
- In überraschend einfacher Weise läßt sich so eine Grillplatte zur Verfügung stellen, die eine verhältnismäßig große nutzbare Fläche aufweist, ohne insgesamt als Einbaugerät zuviel Platz zu beanspruchen; die erfindungsgemäße Grillplatte läßt sich daher in genormte Küchen- oder Restaurantmöbel einbauen. Hierdurch wird die wünschenswerte Verbreitung der Grillplatten-Kochtechnik wesentlich gefördert.
- Der Randbereich aus einem Material mit geringer Wärmeleitung ist vorzugsweise muldenförmig ausgebildet. Die Form einer Mulde oder Rinne führt zu mehreren Vorteilen. Zunächst einmal kann die Mulde als Auffangrinne für Fleischsaft, Fett, und dergleichen dienen, und derartige Substanzen verschmutzen daher nicht das die Grillplatte umgebende Möbel. Weiterhin eignet sich eine Rinne oder Mulde vorteilhafterweise dazu, die Ausdehnung der Grillplatte beim Erhitzen und Abkühlen aufzufangen. Die Materialstärke des muldenförmigen Randbereichs wird so gewählt, daß die in dem Abschnitt des Randbereichs, der an die eigentliche Grillplatte angrenzt, herrschende Temperatur auf der gegenüberliegenden Seite des Randbereichs auf die für Einbaumöbel zulässige Temperatur, also etwa maximal 80° C, abgesenkt wird.
- Zur Erhöhung der Steifigkeit des Randbereichs ist dieser vorzugsweise außen mit einem Rücksprung zur Materialverstärkung versehen; ein derartiger Rücksprung läßt sich bspw. durch Umbiegen einfach herstellen.
- Dieser Rücksprung oder Verstärkungsbereich nimmt vorteilhafterweise einen Seitenteil auf, der die Grillplattenanordnung gegen ein Einbaumöbel abschirmt. Hierzu kann der Rücksprung (einstückig) mit einem etwa rechtwinklig hierzu verlaufenden Seitenteil versehen sein, es kann jedoch auch zwischen dem Rücksprung und dem Randbereich ein Raum zur Aufnahme eines abgewinkelten Abschnitts eines Seitenteils vorgesehen sein, so daß der Abschnitt des Seitenteils einfach in diesen Raum eingeschoben wird.
- Vorzugsweise bestehen die Grillplatte und/oder der Randbereich aus Edelstahl oder platiertem Stahl. Diese Materialien vereinigen mehrere Vorteile, einmal die Beständigkeit gegen sämtliche üblicherweise zubereiteten Speisen, verbunden mit einfacher Reinigungsmöglichkeit, und weisen auch bei vertretbaren Materialabmessungen die gewünschten Eigenschaften in Bezug auf Temperaturbeständigkeit, Wärmekapazität, Wärmeleitung und dergleichen auf. Besonders vorteilhaft ist es, insbesondere in Bezug auf die Reinigung der Grillplatte, wenn diese zusammen mit dem Randbereich einstückig ausgebildet ist. Bestehen die Grillplatte und der Randbereich aus Edelstahl oder einem platiertem Stahl, so können die Grillplatte und der Randbereich mit einer Schweißung verbunden sein. Zur Erzielung der gewünschten Temperatureigenschaften, also einer relativ hohen Temperatur der Grillplatte im Betrieb und einer verhältnismäßig niedrigen Temperatur des Randbereichs außen, weist vorzugsweise der Randbereich eine wesentlich geringere Materialstärke auf als die Grillplatte.
- Zur Abschirmung der Grillplatte ist vorzugsweise ein kastenförmiger Behälter vorgesehen, der die Grillplatte von dieser beabstandet nach unter unterfängt und bspw. die Heizvorrichtung abschirmt. Die Heizvorrichtung ist vorzugsweise mit elektrischen Rohrheizkörpern versehen, die sich leicht an das gewünschte Temperaturverhalten der Grillplatte anpassen lassen und insbesondere feinfühlig regelbar sind. Selbstverständlich kann aber auch eine Beheizung mit anderen Mitteln, bspw. Gasbrennern oder dergleichen, erfolgen.
- Die Erfindung wird nachstehend anhand eines zeichnerisch dargestellten Ausführungsbeispiels näher erläutert, aus welchem weitere Vorteile und Merkmale hervorgehen.
- Die einzige Figur zeigt einen vertikalen Längsschnitt durch einen Teil einer Grillplatte mit hieran anschließendem muldenförmigen Randbereich und einem Teil einer Möbelplatte, in welche die Grillplatte mit dem Randbereich eingebaut ist.
- Eine zur Erleichterung der Darstellung nur teilweise dargestellte rechteckige Grillplatte 10 ist über eine Schweißung 2 mit einem mulden- oder rinnenförmigen Randbereich 12 verbunden. Die Grillplatte 10 und der Randbereich 12 bestehen aus platiertem Stahl, und die Materialstärke der Grillplatte 10 beträgt etwa 5 bis 8 mm, während die Materialstärke des Randbereichs 12 nur etwa 1 bis 1,5 mm beträgt. Die Abmessungen der rechteckigen Grillplatte 10 betragen etwa 41 x 25 cm, und der die Grillplatte 10 an allen vier Längskanten umgebende Randbereich 12 weist eine Breite von etwa 5 cm auf, von denen etwa 3,5 cm auf die eigentliche Mulde entfallen und etwa 1,5 cm auf einen verstärkten Rand, der durch einen Rücksprung 14 gebildet wird.
- Mit dem durch den Rücksprung 14 gebildeten Randbereich wird die Grillplatte 10 mit dem Randbereich in die Einbauöffnung eines geeigneten Möbels so aufgesetzt, daß sie mit dem Rücksprung 14 auf der Kante des Ausschnitts einer Platte 16 aufliegt. Zur Abdichtung zwischen der Platte 16 und dem Rücksprung 14 ist ein geeignetes Dichtungsmaterial 42 vorgesehen.
- An der Unterseite des Randbereichs 12 sind in geeigneten Abständen Gewindebolzen 30 bspw. durch Anschweißen befestigt, auf die ein mit entsprechenden Löchern zur Aufnahme der Gewindebolzen 30 versehenes Randblech 36 aufgeschoben werden kann, und das Randblech 36 wird dann in üblicher Weise mittels Scheiben 32 und Muttern 34 befestigt. Das Randblech 36 dient zur Halterung eines abgebogenen Abschnitts 26 eines kastenförmigen Behälters 24, der die gesamte Grillplatte 10 beabstandet unterfängt und zur Temperaturabschirmung dient. Hierzu ist der kastenförmige Behälter 24 innen mit einem geeigneten Isoliermaterial 28 versehen.
- In den freien Raum des Rücksprungs 14 des Randbereichs 12 ragt ein abgewinkelter Abschnitt 20 eines Seitenteils 18, daß mit einer geeigneten Blechklammer 38 in Eingriff bringbar ist, die sich über eine Schraube 40 an der Einbauplatte 16 abstützt. Durch Anziehen der Schraube 40 wird der Randbereich mit dem Rücksprung 14 an die Platte 16 angedrückt.
