Abstract
Description
- Ein Kuttermesser gemäss Oberbegriff des Anspruches 1 ist aus der DE-AS 1 132 823 bekannt. Bei diesem Messer hat die Schnittkante gegen aussen einen abnehmenden Krümmungsradius. Es gibt ausserdem viele Varianten von Kuttermessern, bei denen die Schnittkante entweder evolventenförmig ist (z.B. DE-GM 74 13 355), so dass der Schnittwinkel über den Schnittradius konstant ist, oder bei denen die Schnittkante ein abgerundetes Polygon bildet (z.B. DE-GM 73 42 583) und der Schnittwinkel mit zunehmendem Schnittradius stufenweise zunimmt. Allen diesen Messern haftet der Nachteil an, dass die von Hand geschliffen werden müssen.
- Der vorliegenden Erfindung liegt die Aufgabe zugrunde, ein Messer gemäss Oberbegriff des Anspruches 1 derart weiterzubilden, dass es maschinell geschliffen werden kann. Diese Aufgabe wird durch die kennzeichnenden Merkmale des Anspruches 1 gelöst. Durch die kreisbogenförmige Schnittkante kann das Messer auf einem Schleifautomaten geschliffen oder nachgeschliffen werden, was die Schliefkosten erheblich reduziert.
- In einem Messerkopf werden meist mehrere Messer in mehreren Ebenen eingespannt. Mit der Ausbildung gemäss Anspruch 1 wird erreicht, dass die Messer in den verschiedenen Ebenen winkelmässig in mehreren Stufen wahlweise gegeneinander versetzt werden können.
- Die Ausführungsform nach Anspruch 2 ist vor allem für den Einsatz des Messers bei der Herstellung von Brühwurstbrät, z.B. für Wiener, geeignet. Bei diesem Einsatz werden im allgemeinen kleine Schnittwinkel verwendet, um die Emulgierwirkung des Messers im Brät zu erhöhen. Versuche haben jedoch ergeben, dass mit Schnittwinkeln zwischen 50° und 60° noch ausreichende Emulgierwirkung erzielt werden kann. Der vergrösserte Schnittwinkel hat vor allem den Vorteil, dass die Schnittkante länger und dadurch die Standzeit höher ist. Um die Emulgierwirkung des Messers bei diesem vergrösserten Schnittwinkel zu verbessern, hat sich die Vergrösserung der Klingenbreite auf die im Anspruch 3 angegebenen Werte als günstig herausgestellt.
- Die Ausführungsform nach Anspruch 4 ist vor allem für die Herstellung von Rohwurstbrät, z.B. für Salami, geeignet. Bei diesem Einsatz ist vor allem im Bereich grosser Schnittradien ein grosser Schnittwinkel, also ein stark ziehender Schnitt, erwünscht.
- Nachfolgend werden Ausführungsbeispiele der Erfindung anhand der Zeichnung erläutert. Darin zeigt:
- Fig. 1 ein erstes Ausführungsbeispiel;
- Fig. 2 ein zweites Ausführungsbeispiel;
- Fig. 3 ein Diagramm des Schnittwinkels in Abhängigkeit vom Schnittradius, und
- Fig. 4 ein Diagramm der Messerbreite in Abhängigkeit vom Schnittradius.
- Die beiden Ausführungsbeispiele nach Fig. 1 und 2 haben den gleichen halbkreisförmigen Einspannabschnitt 1 mit einer zentralen Bohrung 2 und zwei Zentrierbohrungen 3 zum Aufstecken auf Zentrierbolzen, die in einem auf einer Messerwelle drehfest aufgesteckten Distanzring eingepresst sind. Im Distanzring sind auf einem gemeinsamen Teilkreis insgesamt zwölf regelmässig voneinander beabstandete Bolzen eingepresst, so dass das Messer in Schritten von 30° versetzt auf den Distanzring aufgesteckt werden kann. Für die nicht tragenden Bolzen sind im Einspannabschnitt 1 des Messers auf dem gleichen Teilkreisdurchmesser Durchgangsbohrungen 4 mit etwas grösserem Durchmesser angeordnet.
- Die beiden in der gleichen Messerebene im Messerkopf eingespannten Messer bilden zwischen sich einenSpalt von bloss einigen Zehntelmillimetern, so dass die Verschmutzungsgefahr gering ist.
- Vom Einspannabschnitt 1 steht eine sichelförmige Messerklinge 5 ab mit einer kreisbogenförmigen Schnittkante 6. Der Aussenumfang mit dem Messerradius R der Klinge 5 ist zu einer relativ stumpfen Emulgierkante 7 geschliffen. Die Emulgierkante 7 wird nicht nachgeschliffen.
- Die Ausführungsform nach Fig. 1 ist zur Herstellung von Wurstbrät für Brühwürste geeignet. Hier ist das Verhältnis von Krümmungsradius A der Schnittkante 6 zum Messerradius R 0,79 und das Verhältnis des Abstandes B des Krümmungsmittelpunktes M der Schnittkante 6 von der Messerachse 8 zum Messerradius R etwa 0,51. Bei dieser Auslegung ist der Schnittwinkel α der Tangente 9 der Schnittkante 6 mit der Radialrichtung 10 wenig abhängig vom Schnittradius r. In Fig. 3 ist diese Abhängigkeit in der Kurve D in Funktion des Radienverhältnisses r/R dargetellt. Wie aus der Figur ersichtlich ist, schwankt der Schnittwinkel α über den Radius r zwischen 49° und 59°. Der Verlauf des Verhältnisses der Klingenbreite C zum Messerradius R über den Schnittradius r ist in Fig. 4 dargestellt. Er nimmt mit zunehmendem Schnittradius r stetig von einem Maximalwert von etwa 0,45 beim Minimalradius über einen Wert von etwa 0,29 beim Radien-verhältnis von 0,8 auf etwa 0,17 beim Maximalradius R ab.
- Die Ausführungsform nach Fig. 2 ist zur Herstellung von Rohwurstbrät geeignet. Hier beträgt das Verhältnis von Krümmungsradius Aʹ zu Messerradius R 0,565 und das Verhältnis von Krümmungsmittelpunktabstand Bʹ zu Messerradius R 0,48. Der Verlauf des Schnittwinkels α über den Schnittradius r ist in Fig. 3 als Kurve E dargestellt. Der Schnittwinkel α wächst mit zunehmenden Schnittradius r von etwa 35° beim Minimalradius bis etwa 75° beim Maximalradius.
- Die dargestellten Messer sind vor allem für den Einsatz in einem Messerkopf mit Distanzringen aus Kunststoff geeignet. Bei diesen Distanzringen sind die in die Ringe eingesetzten Zentrierbolzen im Gegensatz zu bekannten Distranzringen etwa in der Mitte der radialen Ringbreite eingesetzt, um ein Ausreissen der Bolzen im Betrieb zu verhindern. Dementsprechend entspricht beim Messer der Teilkreisradius 11 der Zentrierbohrungen 3 und Durchgangsbohrungen 4 annähernd dem Mittelwert aus Innenradius 12 und Aussenradius 13 des Einspannabschnittes 1.
