Abstract

Préparation de boissons à base d'oeufs ayant une faible teneur en alcool et en sucre. Les nouvelles boissons sont préparées en ajoutant un stabilisateur hydratant à 100 % en poids de vin pasteurisé, puis 55 à 60 % en poids de miel, en homogénéisant et en pasteurisant le mélange, puis en l'homogénéisant de nouveau avec du jaune d'oeuf conservé à une température de 40oC environ. La teneur en alcool de la boisson est éventuellement complétée en y ajoutant une liqueur raffinée et si on le désire on peut également l'aérer dans un récipient fermé avec du bioxyde de carbone. Les nouvelles boissons à base d'oeufs ont un effet rafraîchissant agréable, la technologie de fabrication de ces boissons est simple et elles peuvent être stockées pendant un temps prolongé sans qu'elles ne se décomposent.
