Abstract
Un proceso para elaborar un producto alimenticio tipo salchicha o similar sin envoltura, en el que se prepara una pasta de salchicha tipo emulsión de viscosidad similar al gel; a continuación, la pasta de salchicha es extrudida en porciones y en forma predeterminada, que mantienen su forma y cuentan con al menos una superficie generalmente plana; después se coceen las porciones tanto en su superficie superior e inferior para formar una piel propia obtenida por acción del calor sobre la pasta de salchicha externa de las porciones, dejando un núcleo contenido por la piel propia, que incluye pasta de salchicha que no ha intervenido en la formación de la piel propia; a continuación se efectúa una segunda etapa de cocimiento para provocar la cocción final de los núcleos de las porciones con piel propia, formándose así los productos alimenticios tipo salchicha; y finalmente se enfrían dichos productos alimenticios tipo salchicha para proceder a su empacado. El producto obtenido consiste de un cuerpo con al menos una superficie generalmente plana que tiene una piel propia obtenida por acción del calor; y un núcleo contenido por la piel propia, el núcleo tiene material de pasta de salchicha cocida que no ha intervenido en la formación de dicha piel propia.
