Abstract

Настоящее изобретение относится к композиции съедобного покрытия, в частности к композиции съедобного покрытия, предназначенной для обеспечения влагостойкости. Цель настоящего изобретения состоит в предоставлении композиции, предназначенной для съедобного покрытия на рожок для мороженого. Другая цель настоящего изобретения заключается в обеспечении имеющего покрытие рожка для мороженого, обладающего улучшенными свойствами влагостойкости. Еще одной целью настоящего изобретения является предоставление рожка для мороженого с покрытием, сохраняющего хрусткость во время потребления. Другая цель настоящего изобретения заключается в предоставлении рожка для мороженого с покрытием, демонстрирующего улучшенную влагостойкость при хранении в течение длительных периодов времени на холоде даже в условиях переменных температур. Еще одной целью настоящего изобретения является обеспечение способа производства рожка для мороженого с покрытием. Еще одна цель настоящего изобретения состоит в предоставлении рожка для мороженого с покрытием, имеющего улучшенный период срока хранения. Еще одна цель настоящего изобретения заключается в предоставлении рожков для мороженого с покрытием, которые обладают хорошей стабильностью при хранении в условиях повышенных температур хранения. Авторы обнаружили, что композиция съедобного покрытия, содержащая комплекс из хитозана и мыла, обеспечивает получение гидрофобного покрытия.
