Abstract

Настоящее изобретение относится к мутантам молочно-кислых бактерий, которые проявляют устойчивость по отношению к антибиотику D-циклосерину и/или функционально эквивалентным антибиотикам, и у которых обнаружена повышенная текстура в процессе роста в молоке при сохранении других свойств роста родительского штамма. Кроме того, настоящее изобретение относится к композициям, в которых содержатся такие мутанты, и к молочным продуктам, ферментированным молочно-кислыми бактериями, устойчивыми по отношению к D-циклосерину и/или функционально эквивалентным антибиотикам.
