Abstract
La presente invención se refiere a un método para obtener una cepa de bacterias de ácido láctico que resulta en una alta resistencia al corte mecánico de los productos fermentados con la cepa y con las cepas bacterianas obtenidas por tal método. Además, la presente invención se relaciona con cepas de bacterias de ácido láctico, que resulta en una alta resistencia hacia el tratamiento de corte mecánico de los productos fermentados con las cepas o mutantes y variantes de la misma. La estabilidad mejorada de la textura puede medirse como una sedimentación reducida en las aplicaciones de yogur para beber y sinéresis reducida en las aplicaciones de yogur de tipo fraguado. De esta manera, la presente invención también se relaciona con métodos para la preparación de un producto lácteo fermentado, tal como un yogur, con tales cepas de bacterias de ácido láctico y con tales productos de leche fermentada.
