Abstract

Предложен способ получения продукта, обогащенного теафлавинами. Способ содержит стадии контакта первого и второго материалов с получением реакционной смеси, обладающей определенным массовым отношением содержания катехинов и теафлавинов, ферментации реакционной смеси и последующего извлечения продукта из реакционной смеси. Способ является особенно полезным при производстве листовых чайных продуктов, обладающих высоким содержанием теафлавинов.
