 本発明は、テアフラビンを選択的に、大量に、高収率に、簡単に、安価に製造する方法を提供する。本発明は、エピカテキン、エピガロカテキン、エピカテキン-3-O-ガレートおよびエピガロカテキン-3-O-ガレートを含有する加工した植物の抽出物とペルオキシダーゼ活性を有する植物細胞培養物を混合して選択的にテアフラビンを製造する、テアフラビンの製造方法に関する。
