Abstract

Se provee un procedimiento para producir un producto enriquecido con teaflavinas. El procedimiento comprende poner en contacto un primer y un segundo materiales para formar una mezcla de reaccion con una relacion de peso específica entre catequinas y teaflavinas, fermentando la mezcla de reaccion y recuperando posteriormente el producto de la mezcla de reaccion. El procedimiento es particularmente adecuado para producir productos de hojas de té con altos niveles de teaflavinas.
