Abstract

Изобретение касается способа, предусматривающего нагревание исходного молочного продукта до повышенной температуры пастеризации при пониженном давлении в течение времени, достаточного для выпаривания жидкости из исходного молочного продукта с образованием пастеризованного промежуточного жидкого молочного концентрата с высоким содержанием сухих веществ, смешивание сливок с промежуточным молочным концентратом для образования сгущенной жидкой смеси с заданным содержанием жира для получения восстановленного молочного напитка с желательными вкусовыми свойствами и добавление стабилизирующего вещества, эффективно обеспечивающего однородное распределение и препятствующего сепарации и осаждению сухих веществ молока при хранении ультрапастеризованного жидкого молочного концентрата. Конечный жидкий молочный концентрат подвергают ультрапастеризации, гомогенизируют и расфасовывают с получением упаковки ультрапастеризованного жидкого молочного концентрата для его последующего смешивания с водой с образованием восстановленного молочного напитка.Международная заявка была опубликована вместе с отчетом о международном поиске.
