Description
Claims (33)
- 水と混合して新鮮乳のような風味の還元乳飲料を得るための超高温殺菌液状(UHT)濃縮乳であって、
液状配合練乳中に直接に蒸気を噴射することによって得られる超高温殺菌液状(UHT)濃縮乳を含み、前記濃縮乳の無脂乳固形分含有量が少なくとも29.9重量%であり、安定剤含量が1重量%未満であり、該安定剤はヘキサメタリン酸ナトリウム安定剤を97〜99%の範囲で、及びカラゲナン安定剤を1〜3%の範囲で含み、該安定剤の量が、
(a)乳固形分の分離なしに少なくとも60日間の延長した貯蔵安定性をもたらし、
(b)水で希釈した際に分離しない乳固形分をもたらし、かつ
(c)水で希釈すると、真正の新鮮乳の特性を有し、そのような風味のする飲用製品をもたらすのに有効な量であり、該安定剤はヘキサメタリン酸ナトリウム及びカラゲナン安定剤を高せん断条件下で水に溶解することにより調製されるものである、上記濃縮乳。 - 水対濃縮乳比を3:1〜4:1として水で希釈してある請求項1に記載のUHT濃縮乳。
- 前記濃縮乳を貯蔵用に無菌個装することによって前記安定性が得られる請求項1又は2に記載のUHT濃縮乳。
- 前記安定性が90日より長い期間にわたる請求項3に記載のUHT濃縮乳。
- pHが6〜8の範囲にある請求項1〜4のいずれか一項に記載のUHT濃縮乳。
- 前記無脂乳固形分(MSNF)含有量が35重量%〜46重量%である請求項1〜5のいずれか一項に記載のUHT濃縮乳。
- 前記無脂乳固形分(MSNF)含有量が、少なくとも8.25重量%のMSNFを含む飲用製品をもたらす量である請求項1〜6のいずれか一項に記載のUHT濃縮乳。
- 前記無脂乳固形分(MSNF)含有量が35重量%〜45重量%であり、前記濃縮乳が0.74重量%未満〜11.77重量%の乳脂肪含有量を有する請求項1〜7のいずれか一項に記載のUHT濃縮乳。

- 水と混合して新鮮乳のような風味の還元乳飲料を得るための超高温殺菌液状(UHT)濃縮乳の個装物であって、
請求項1〜9のいずれか一項に記載の超高温殺菌液状(UHT)濃縮乳を含有する容器を含み、前記容器が、水と混合して飲用製品を形成するための前記UHT濃縮乳を吐き出すためにある上記個装物。 - 前記濃縮乳容器が、前記超殺菌濃縮乳と水とを混合して前記液体還元乳飲料を計量分配する吐出口を含む液体ディスペンサー中に配置するのに有効な構造形態をとっている請求項10に記載の個装物。

前記容器が水と混合するためにUHT濃縮乳を吐き出すためのものである上記飲料分配装置。 - 前記混合装置が、水対濃縮乳比を3:1〜4:1としてUHT濃縮乳を水と共に分配するように形成されている請求項17に記載の飲料分配装置。
- 水と混合して新鮮乳のような風味の還元乳飲料を提供するための超高温殺菌液状(UHT)濃縮乳を製造するための方法であって、
ヘキサメタリン酸ナトリウム及びカラゲナン安定剤と、UHT濃縮乳を水で還元したときに無脂乳固形分含有量が少なくとも29.9重量%である前記UHT濃縮乳を得るのに十分な量の無脂乳固形分を含む殺菌液状濃縮乳とを含有する液状配合練乳を得るステップを含み、
前記安定剤が前記乳固形分の安定な分散液を生成するのに十分な量で存在しており、
前記方法はさらに、
無脂乳固形分含有量が少なくとも29.9重量%であり、
(a)乳固形分の分離なしに貯蔵安定性が少なくとも60日間に延長されており、
(b)水で希釈した際に分離しない乳固形分を含み、
(c)希釈すると、新鮮乳のような風味の飲用製品をもたらす

有効量の安定剤を前記濃縮液状ブレンドと混合して、前記濃縮液状ブレンド中の前記乳固形分及び脂肪の安定な分散液を生成することを含む、請求項19に記載の方法。 - 前記の連続流を向けるステップが、前記UHT濃縮乳を得るのに十分な時間、142.22℃〜145.58℃(288°F〜294°F)の範囲の温度で、前記液状配合練乳を前記噴出した蒸気と直接に接触させて加熱することを含む、請求項19又は20に記載の方法。

- 前記殺菌液状濃縮乳が少なくとも35重量%〜46重量%の量の無脂乳固形分を含む請求項19〜31のいずれか一項に記載の方法。
- 前記還元乳飲料が、0.21重量%未満〜3.25重量%の範囲の乳脂肪分及び少なくとも8.25重量%の無脂乳固形分を含む請求項19〜31のいずれか一項に記載の方法。
