Claims (13)
1. Stabiliseret transglutaminase omfattende et transglutaminaseprosekvenspeptid og en moden transglutaminase, hvor transglutaminaseprosekvenspeptidet er bundet til den modne transglutaminase, og den stabiliserede transglutaminase har højere stabilitet end den modne transglutaminase, hvortil prosekvenspeptidet ikke er bundet, og stabiliteten er mindst én stabilitetsform udvalgt fra gruppen bestående af pH-stabilitet, temperaturstabilitet, stabilitet mod oxidation og lagerstabilitet.
2. Stabiliseret transglutaminase ifølge krav 2, hvor den modne transglutaminase er afledt af en mikroorganisme.
3. Stabiliseret transglutaminase ifølge krav 2, hvor mikroorganismen er en mikroorganisme af slægten Streptomyces.
4. Stabiliseret transglutaminase ifølge krav 2, hvor mikroorganismen er Streptomyces mobaraensis.
5. Stabiliseret transglutaminase ifølge krav 1, hvor den modne transglutaminase indbefatter en aminosyresekvens gengivet i SEQ ID NO:6.
6. Stabiliseret transglutaminase ifølge krav 1, hvor prosekvenspeptidet er afledt af en mikroorganisme.
7. Stabiliseret transglutaminase ifølge krav 6, hvor mikroorganismen er en mikroorganisme af slægten Streptomyces.
8. Stabiliseret transglutaminase ifølge krav 6, hvor mikroorganismen er Streptomyces mobaraensis.
9. Stabiliseret transglutaminase ifølge krav 1, hvor prosekvenspeptidet indbefatter en hvilken som helst af følgende sekvenser (1) til (3): (1) DNGAGEETKSYAETYRLTADDVANINALNESAPAA (SEQ ID NO: 1); (2) DNGAGEETKSYAETYRLTADDVANINALNESAPAAS (SEQ ID NO: 2); og (3) DNGAGEETKSYAETYRLTADDVANINALNESAPAASS (SEQ ID NO: 3).
10. Fremgangsmåde til fremstilling af en stabiliseret transglutaminase, hvilken fremgangsmåde omfatter følgende trin: at dyrke en mikroorganisme, der er i stand til at danne transglutaminase under betingelser, hvor transglutaminase kan dannes; og at separere og indvinde en moden transglutaminase, hvortil prosekvenspeptid er bundet, fra en kulturopløsning.
11. Fremgangsmåde til fremstilling af en stabiliseret transglutaminase ifølge krav 10, hvor mikroorganismen er en mikroorganisme af slægten Streptomyces.
12. Fremgangsmåde til fremstilling af stabiliseret transglutaminase ifølge krav 10, hvor mikroorganismen er Streptomyces mobaraensis.
13. Anvendelse af den stabiliserede transglutaminase ifølge et hvilket som helst af kravene 1 til 9 til binding af kød, fremstilling af pølser, tofu, brød eller nudler.
