Claims (12)
1. Mælkefedt fra ko til applikation som fødemiddel af mælkefedtet, som har et mættet fedtsyreindhold på mindre end 50 vægt%, et mono-umættet fedtsyreindhold over 45 vægt% og et poly-umættet fedtsyreindhold over 5,5 vægt% baseret på de samlede fedtsyrer, forudsat at summen af fedtsyreindhold ikke overstiger 100 vægt%.
2. Mælkefedt ifølge krav 1, som har et mættet fedtsyreindhold på mindre end 45 vægt% baseret på de samlede fedtsyrer.
3. Mælkefedt ifølge krav 1 eller 2, som har et mættet fedtsyreindhold på mindre end 40 vægt% baseret på de samlede fedtsyrer.
4. Mælkefedt ifølge et hvilket som helst af de foregående krav, som har et mættet fedtsyreindhold på mindre end 35 vægt% baseret på de samlede fedtsyrer.
5. Mælkefedt ifølge et hvilket som helst af de foregående krav, som har et mono-umættet fedtsyreindhold over 50%.
6. Mælkefedt ifølge et hvilket som helst af de foregående krav, som har et poly-umættet fedtsyreindhold over 6%.
7. Fremgangsmåde til at tilvejebringe mælkefedt fra ko ifølge et hvilket som helst af de foregående krav, hvor det hele eller en del af mælkefedt fra ko underkastes ét eller flere fraktioneringstrin ved krystallisering efterfulgt af ét eller flere fraktioneringstrin ved (molekylær) kortvejsdestillation.
8. Fremgangsmåde ifølge krav 7, hvor det et eller flere fraktioneringstrin ved (molekylær) kortvejsdestillation udføres ved fordampningstemperaturer liggende mellem 200°C og 300°C (in vacuo) og ved et tryk på mindre end 0,1 mbar.
9. Fødemiddelsammensætning omfattende mælkefedt ifølge et hvilket som helst af de foregående krav 1 til 6 eller mælkefedt tilvejebragt ved fremgangsmåden ifølge et hvilket som helst af de foregående krav 7 til 8.
10. Fødemiddelsammensætning ifølge krav 9, som er en olie-i-vand-emulsion.
11. Fødemiddelsammensætning ifølge krav 10, som er en vand-i-olie-emulsion.
12. Fødemiddelsammensætning ifølge et hvilket som helst af de foregående krav 9 til 11, som er valgt fra gruppen bestående af pandekagedej, vandbakkelser, kagedej, bri-ocher, smørbare smør, iscreme, mælkefløde, oste, fermenteret mælk, smagstilsat mælk eller en blanding deraf.
