Abstract

Un producto alimenticio en la forma de una masa aireada parahacer pasteles, galletas y confitería, que contiene proteínas lácticas, azúcares, grasa y agua, caracterizado porque la masa aireada está en una forma esencialmente no emulsificada, que está física-química y organolépticamente estable a aproximadamente 30°C, que no contiene ningún aditivo espesante o de gelificación, que su contenido de materia seca es de 80 a 90%, que contiene de 30 a 60% en peso de grasa, y que la grasa tiene un contenido de sólidos mayor que o igual a 8% por peso a 30°C. Procedimiento para fabricar un producto alimenticio de conformidad con la reivindicación 1, en donde se prepara una mezcla que comprende polvo de leche descremada, leche concentrada azucarada y azúcares, una fase de lípido a una temperatura tal que la grasa contenida en la fase de lípido es líquida se agrega a esta mezcla, la mezcla se enfría a temperatura ambiente mientras es mecánicamente amasada, y es aireada a través de la inyección de un gas inerte.
