狮子头即是大肉丸子或四喜丸子,一般的狮子头都是将肥七瘦三的猪肋条肉剁成石榴粒状后制成丸子,微火焖炖熟后丸子表面的肥肉大体溶化但没全部溶化,瘦肉则相对显得凸起,给人一种毛毛糙糙的感觉,因丸子大而表面毛糙于是便称之为“狮子头”了。传统的狮子头品种单一,并且营养单一,需要开发多样化的狮子头满足人们生活和营养的需要。

本实用新型要解决的技术问题是传统的狮子头品种单一,并且营养单一,提供一种夹心狮子头。
本实用新型的技术方案是:一种夹心狮子头,它是由以肉馅为主的表层和包裹在表层中间的夹心块组成。

所述夹心为咸蛋黄、鹌鹑蛋、松花蛋、甜玉米中的任意一种或至少两种组成的夹心块。

具体实施方式
实施例1
一种夹心狮子头,它是由狮子头1和包裹在狮子头中间的咸蛋黄2组成。
实施例2
一种夹心狮子头,它是由狮子头1和包裹在狮子头中间的鹌鹑蛋2组成。

上述实施例中,夹心狮子头是由包括以下重量份的原料制成:鸡肉30~50,猪五花肉20~30、大豆蛋白粉1~8、鸡皮1~15、藕1~6、夹心6~10、冰水10~30。
所述原料中还加入以下重量份的辅料:骨汤1~8、味精0.2~0.5、盐0.4~3、生姜0.3~0.5、大葱1~3、玉米淀粉1~6、天然香辛料1~1.8、复合磷酸盐0.5~0.9、增香剂0.2~2。
所述猪五花肉的肥瘦比例为2∶8~3∶7。
所述骨汤为鸡骨汤或牛骨汤或它们的混合物。
所述增香剂为五香粉、鸡肉膏、小磨油中的任意一种或两种或三种物质的混合物。
所述夹心狮子头的制作步骤如下:
(1)按比例称取原料经混合后,在搅拌机搅拌,同时加入各种辅料,搅拌均匀,在上述过程中加入冰水,来控制料馅出锅温度在2~8℃;
(2)用包心丸子机将夹心包裹在狮子头中间,上述混合料成型后,在70~80℃水中定型3~6分钟,然后在90~100℃水中进行煮制15~25分钟,捞出沥水冷却;
(3)将冷却的夹心狮子头在160~180℃油温的油炸锅中油炸1~2分钟,冷却后送往速冻隧道进行速冻;
(4)将速冻后的夹心狮子头包装,然后将成品放入-20~-15℃的低温库中储藏。
