本发明涉及一种用米面制作多种方便速食食品的方法。该方法是将面用水调和揉到一定程度放入水中泡洗提取蛋白质,将提取的蛋白质取20-80%和梗米面的80%-20%加水调合拌制,同时加入适量各种营养成份,再加入5-35%的干淀粉,制成米面类半成品。本发明具有营养丰富,耐煮、耐浸泡、口味纯正、口感新鲜、方便速食等优点。

一种米面方便速食食品的制作方法
本发明涉及一种用米面制作多种方便速食食品的方法。
目前市售的各种方便面,品种单一,由于其原料特性决定,加工成的产品不耐浸煮、易脓烂,不适应现代高节奏的工作生活需要。
本发明的目的在于克服上述已有技术的不足之处,而发明了一种营养丰富,口味纯正,不脓烂,耐浸煮,口感新鲜,速食方便的米面食品。
本发明的目的是这样实现的:该米面方便速食食品的制作方法是将面用水调和揉到一定程度放入水中泡洗提取蛋白质,将提取的蛋白质取20-80%和梗米面的80-20%加水调合拌制,同时加入适量各种营养成份,如:活性钙质、维生素类,再加入5%-35%的干淀粉,制成米面速食品,它为半成品,如面条、面片、旗花、麻食、水饺、馄饨、刀削面类半成品,或将已制好的风味食品制作成熟品后,稍加烘焙达到一定程度,使其不相粘联包装制成熟食成品。
本发明的米面方便速食食品和已有技术相比,具有营养丰富,口味纯正,耐浸煮,不粘,不脓烂,口感新鲜的各种地方风味面食食品的优点。
实施例:
1、面条:取80%的梗米面,将蛋白质20%进行调合同时加入所需营养成份,用淀粉作补面加工成形,成熟品后,稍加烘干,做出各种方便速食的凉面、榨酱面、肉丝面、哨子面等,再配以调料配料包进行分类包装。
2、水饺:取20%的梗米面和蛋白质的80%,为其滑爽加5%的淀粉进行揉制,然后包制待熟后烘干,配以调味包,可加工成酸汤水饺,三鲜水饺,羊肉水饺,东北水饺等速食水饺。
3、馄饨制作方法基本同上。
4、诸如:面片、刀削面、麻食等根据其技术特性,调节米面及蛋白淀粉的比例,开发制作。

1、一种米面方便速食食品的制作方法,其特征在于该方法是将面用水调和揉到一定程度,放入水中泡洗提取蛋白质,将提取的蛋白质取20-80%和梗米面的80-20%加水调合拌制,同时加入适量各种营养成份,再加入5-35%的干淀粉,制成米面类半成品。
2、根据权利要求1所述的方法,其特征是将米面速食品制成熟食品后,稍加烘焙达到一定干度,使其不粘联包装制成熟食成品。
