Abstract

发明技术领域
本发明涉及冷冻的可匙舀的冰冻餐末甜食产品的生产方法。
发明背景
粗粒雪糕是意大利粗质地自冷(still-frozen)冰冻餐末甜食,含有水果泥和冰粒,为即席和即食的。迄今尚不能在工业上制备粗粒雪糕产品,因为冷冻贮存时,冰粒以产品形式的浆块存在,产生不再可匙舀的硬质产品。
现在我们已经发现,如果将冰粒生产为大致为球形的形状,并且在整个生产过程中将温度保持在-10℃或-10℃以下,可以解决冰粒粘连在一起的问题。
US 4 031 262(Nakayama)公开了含有冰粒的保鲜雪糕产品。冰粒或冰片的形状可以是圆形或矩形,通过用锤等将大冰块破为碎块,或通过将水喷到过冷室中,或将过冷水喷到正常温度的室中,可以生产冰粒或冰片。冰粒在大约-30℃的温度下使用,其大小为1-1000mm3
然而,Nakayama没有解决如何防止冰粒相互粘连的问题,此外没有公开形成本发明要素的溶液,即在整个冰粒生产过程中的基本溶液,温度必须低于-10℃。此外,冰粒的形状应该大致为球形。实际上Nakayama公开的生产冰粒的具体方法(方法C、D和E)都在生产后将冰粒冷却至-30℃。在整个生产过程中该温度不保持在低于-10℃。
发明概述
因此,本发明提供一种冷冻的可匙舀的冰冻餐末甜食的生产方法,包括以下步骤:
(i)在不高于-10℃、最好不高于-20℃的温度下生产冰片;
(ii)在不高于-10℃、最好不高于-20℃的温度下将步骤(i)生产
    的冰片研磨成大致为球形的冰粒;
(iii)将步骤(ii)中生产的冰粒与调味冰浆混合;
(iv)包装步骤(iii)中获得的混合物并冷冻贮存。
于大约-2℃通过研磨冰片,生产用于诸如粗粒雪糕之类产品的常规冰粒。然而,我们发现,重要的是冰片和随后的冰粒生产在不高于-10℃下、最好不高于-20℃下生产,以便冰粒不提供引起贮藏时冰粒聚集的“湿”表面。这样,可以生产冷冻的可匙舀的冰冻餐末甜食。
冰粒的直径最好为1-7mm,最优选为2-4mm。
通过将水加入5℃的立式鼓式冷冻机中,以方便地生产冰片。然后将水冷却至-20℃至-25℃,从该鼓表面刮下冰片,厚度最好为2-3mm。将这些冰片于-20℃至-25℃下运送到研磨机中,研磨机的温度也是-20℃至-25℃。然后将冰片研磨为冰粒。
通过将未冰冻混合物送入刮板式热交换器中,在此将该混合物冷却至大约-6℃,可以以一般方式获得调味冰浆。
调味冰浆最好含有稳定剂,例如黄原胶、羧甲基纤维素、刺槐豆胶、瓜尔胶、藻酸盐、明胶或它们的混合物。
本发明的冰冻餐末甜食产品除含有调味冰浆和上述冰粒外,还可以可选地含有含CO2-水包合物颗粒。
CO2-水包合物是指任何含CO2的包合物,诸如双包合物和混合包合物。关于其详细描述,参考D W.Davidson;clathrate hydrates in water-a comprehensive treatise,vol 2,chapter3,Ed Franks。
实际上,最好将含CO2-水包合物颗粒暴露于诸如CO2压力和温度条件下,CO2将从颗粒表面放出,直至形成保护性冰层,其实际目的是防止在低于冰熔点的温度的大气条件下进一步放出CO2。该保护性冰层通常在15秒内形成,随后进行15秒以上的稳定化处理。
通过将这些颗粒在暴露于含水环境下,这类条件使得固态水层凝结在颗粒表面上,也可以在含CO2-水包合物颗粒周围形成保护层。该环境最好包含水汽,后者凝结在颗粒表面上,形成固态保护性冰层。
含CO2-水包合物颗粒一旦形成,将其与上述步骤(i)中生产的冰片混合,在步骤(ii)研磨含CO2-水包合物和冰片两者。
本发明的冷冻可匙舀冰冻餐末甜食产品包含85-50%(重量)调味冰浆;15-50%(重量)、最好为25-30%(重量)冰粒;和0-20%(重量)、最好为大约5%(重量)的含CO2-水包合物颗粒。
实施例实施例1
在刮壁式热交换器中将含有以下成份的冰混合物冷却至-6℃,形成流体泥浆产物。

于-20℃下将75%(重量)的该泥浆产物与25%(重量)大致为球形的冰粒(直径为2-3mm)混合。这产生温度大约为-8℃至-10℃的冰冻餐末甜食产品。将其包装,并在冷冻贮藏前在冷冻通道中冷冻。
甚至在6个月的冷冻贮藏后,可以用匙将该产品直接从冰箱中舀出。实施例2
于-20℃下将75%(重量)实施例1的泥浆产物与20%(重量)大致为球形的冰粒(直径为3-4mm)和5%下述含CO2-水包合物颗粒产物混合。将该产品包装,并按实施例1进行贮藏。
如下生产含CO2-水包合物颗粒:
在加压反应器中,将CO2与水于35巴和5℃下接触。此后,将温度降至-15℃,使得充气复合材料固化。将其由该反应器取出后,于-20℃在研磨机中将形成的包合物-冰复合材料研磨成大小为50-200mm的颗粒。然后将这些颗粒与冰片混合,于-20℃下将两者一起研磨为直径为2-3mm的大致为球形的颗粒。
甚至在6个月的冷冻贮藏后,可以用匙将该产品直接从冰箱中舀出。实施例3
按实施例1描述的方法,将含有以下成份的冰混合物形成泥浆产物。

重复实施例3,只是于-20℃下,将75%(重量)的泥浆产物与20%(重量)冰粒和5%实施例2的含CO2-水包合物颗粒混合。
生产了甚至在6个月的冷冻贮藏后可以用匙直接从冰箱中舀出的产品。

Claims (6)

1.一种冷冻的可以匙舀的冰冻餐末甜食的生产方法,包括以下步骤:
(i)在不高于-10℃的温度下生产冰片;
(ii)在不高于-10℃的温度下将步骤(i)生产的冰片研磨成大致
    为球形的冰粒;
(iii)将步骤(ii)中生产的冰粒与调味冰浆混合;
(iv)包装步骤(iii)中获得的混合物并冷冻贮存。
2.按照权利要求1的方法,其中步骤(ii)中制备的冰粒的直径为1-7mm。
3.按照权利要求1或2的方法,其中步骤(ii)中制备的冰粒的直径为2-4mm。
4.按照任一前述权利要求的方法,其中在研磨步骤(ii)之前,在不高于-10℃下将含CO2-水包合物颗粒与冰片混合。
5.按照任一前述权利要求的方法,其中该冷冻的可以匙舀的冰冻餐末甜食包含85-50%(重量)调味冰浆、15-50%(重量)冰粒和0-20%(重量)含CO2-水包合物颗粒。
6.按照任一前述权利要求的方法,其中该冷冻的可以匙舀的冰冻餐末甜食包含85-50%(重量)调味冰浆、25-30%(重量)冰粒和大约5%(重量)含CO2-水包合物颗粒。
