Abstract

用魔芋、谷物、大豆制作豆腐制品的方法。它以魔芋、谷物、大豆为原料,按重量份魔芋精粉1~10份,谷物粉4~20份、大豆80~95份配取原料。制作步骤是,先分别将魔芋糊化、谷物发酵、大豆磨浆;再将它们混合拌匀,煮沸,过滤出渣;将凝固剂加水溶解,倒入浆液中拌匀,待浆液凝固后,压制成型得成品。也可将浆液直接挑皮制成腐竹。本发明在豆腐制作过程中加入了糊化的魔芋和发酵的谷物,解决了豆腐制品难以掺入多种营养成份的问题。不但丰富了豆腐制品的营养成份和保健成份,而且为谷类杂粮的深加工开辟了新的途径。具有易于实施,产品营养丰富、口感好的特点。

Description

用魔芋、谷物、大豆制作豆腐制品的方法
技术领域:本发明涉及一种食品制作方法,特别是一种以大豆为主要原料的食品制作方法。
背景技术:现有以大豆为主要原料制成的食品主要分为两大类。一类是用大豆与其他物质直接混合后制成的豆粉、豆奶类豆制品;一类是将大豆磨浆后制成各种豆腐制品(如豆腐、腐竹、面筋等)。前一类食品只是各种物质的混合,主要是作为饮品供人们饮用。后一类豆腐制品则可以制作成菜肴和休闲食品供人们食用,其消费量和消费群体远远大于前一类豆制品。目前的问题是,由于豆腐制作工艺的特殊性,在制作过程中很难掺入其他营养物质,因此这类豆腐制品的营养成份主要以大豆成份为主,难以制成含有多种营养成份的豆腐制品。
发明内容:本发明的目的在于,提供一种用魔芋、谷物、大豆制作豆腐制品的方法。它在现有的豆腐制作过程中加入了经过糊化的魔芋和经过发酵的谷物,增加了多种保健、营养成份。在满足人们的日常生活习惯的同时,增加了人们保健、营养成份的摄入。
本发明的技术方案:用魔芋、谷物、大豆制作豆腐制品的方法;其特征在于:以魔芋、谷物、大豆为原料,按重量份魔芋精粉1~10份,谷物粉4~20份、大豆80~95份配取原料,采取下述步骤制作;
a、魔芋糊化:向魔芋精粉中加入30~100倍的18~25℃温水,拌匀后静置3~5小时,得A品;
b、谷物发酵:按谷物粉重量加入0.6~1.2%的即时发酵剂,再加水发酵,得B品;
c、大豆磨浆:将大豆浸泡、磨浆分离得到的浆液为C品;
d、制浆:将A、B、C品混合拌匀,煮沸,过滤出渣,得到的浆液为D品;
e、制品:将凝固剂加水溶解,倒入温度为80~90℃的D品中拌匀,待浆液凝固后,压制成型得成品豆腐;或将D品直接挑皮制成腐竹。
上述的用魔芋、谷物、大豆制作豆腐制品的方法中,步骤a中所述的魔芋精粉是80目以上的无杂质魔芋精粉。
前述的用魔芋、谷物、大豆制作豆腐制品的方法中,步骤b中所述的加水发酵,是加入温度30~40℃的热水发酵。
与现有技术比较,本发明在豆腐制作过程中加入了糊化的魔芋和发酵的谷物,解决了豆腐制品难以掺入多种营养成份的问题。本发明在豆腐制品中加入魔芋和谷物(特别是谷类杂粮),不但丰富了豆腐制品的营养成份和保健成份,而且为谷类杂粮的深加工开辟了新的途径。本发明具有易于实施,产品营养丰富、口感好的特点。本发明的产品可作为新型豆腐制品和休闲食品供人们食用。
具体实施方式:
实施例1。取100目的无杂质魔芋精粉3Kg,玉米粉和大米粉各6Kg,大豆85Kg作为原料,采取下述步骤制作。
a、魔芋糊化:向魔芋精粉中加入150Kg的18~25℃温水,拌匀后静置4小时,得呈糊状的A品。
b、谷物发酵:将玉米粉和大米粉混合,加入0.1Kg的即时发酵剂(如高活性干酵母),再加入温度30~40℃的热水,调成糊状或稀糊状,得B品。
c、大豆磨浆:将大豆按豆腐制作方法进行浸泡、磨浆分离得到的液浆为C品。
d、制浆:将A、B、C品混合拌匀,煮沸,过滤出渣,得到的浆液为D品。
e、制品:将凝固剂(如卤粉、葡萄糖-δ-内脂等)加水溶解倒入温度为80~90℃的D品中拌匀,待浆液凝固后,压制成型得成品豆腐。也可将D品直接挑皮制成腐竹。
实施例2。取80目以上的无杂质魔芋精粉4Kg,荞面10Kg,大豆86Kg作为原料,采取下述步骤制作。
a、魔芋糊化:向魔芋精粉中加入240Kg的18~25℃温水,拌匀后静置4小时,得呈糊状的A品。
b、谷物发酵:将荞面中加入0.1Kg的高活性干酵母,再加入温度30~40℃的热水,调成糊状或稀糊状,得B品。
其他步骤同实施例1。
实施例3。取80目以上的无杂质魔芋精粉5Kg,高粱面8Kg,大豆87Kg作为原料,采取下述步骤制作。
a、魔芋糊化:向魔芋精粉中加入400Kg的18~25℃温水,拌匀后静置4小时,得呈糊状的A品。
b、谷物发酵:将高粱面中加入0.1Kg的高活性干酵母,再加入温度30~40℃的热水,调成糊状或稀糊状,得B品。
其他步骤同实施例1。
实施例4。取80目以上的无杂质魔芋精粉2Kg,土豆粉12Kg,大豆90Kg作为原料,采取下述步骤制作。
a、魔芋糊化:向魔芋精粉中加入140Kg的18~25℃温水,拌匀后静置4小时,得呈糊状的A品。
b、谷物发酵:将土豆粉中加入0.1Kg的高活性干酵母,再加入温度30~40℃的热水,调成糊状或稀糊状,得B品。
其他步骤同实施例1。
实施例5。取80目以上的无杂质魔芋精粉6Kg,红薯粉18Kg,大豆90Kg作为原料,采取下述步骤制作。
a、魔芋糊化:向魔芋精粉中加入360Kg的18~25℃温水,拌匀后静置4小时,得呈糊状的A品;
b、谷物发酵:将红薯粉中加入0.1Kg的高活性干酵母,再加入温度30~40℃的热水,调成糊状或稀糊状,得B品。
其他步骤同实施例1。
本发明所述谷物粉,可以是玉米面、高粱面、荞面、面粉、薯类粉(如红薯粉、土豆粉等)、米类粉(大米粉、小米粉等),也可以是它们的混合物。各种谷物中,特别是谷类杂粮对人体营养结构有着重要的作用,只是谷类杂粮口感差,难被人们接受。将谷物杂粮通过发酵工艺激活其生物链,提高生物价,可增添其香味和克服部分杂粮粗糙及有不良味道的缺陷。由于豆腐制品的消费者和消费量巨大,把谷类杂粮掺入豆腐制品中,可以使人们经常性地摄入谷类杂粮的成份,补充人体的多种营养成份。魔芋通过糊化降解为高品质的魔芋甘露聚糖和凝胶,这种凝胶是极好的白乳化剂、增稠剂和天然防腐剂。此工艺与单纯的添加剂加魔芋精粉有着本质上的不同。

Claims (3)

1、用魔芋、谷物、大豆制作豆腐制品的方法,其特征在于:以魔芋、谷物、大豆为原料,按重量份魔芋精粉1~10份,谷物粉4~20份、大豆80~95份配取原料,采取下述步骤制作;
a、魔芋糊化:向魔芋精粉中加入30~100倍的18~25℃温水,拌匀后静置3~5小时,得A品;
b、谷物发酵:按谷物粉重量加入0.6~1.2%的即时发酵剂,再加水发酵,得B品;
c、大豆磨浆:将大豆浸泡、磨浆分离得到的浆液为C品;
d、制浆:将A、B、C品混合拌匀,煮沸,过滤出渣,得到的浆液为D品;
e、制品:将凝固剂加水溶解,倒入温度为80~90℃的D品中拌匀,待浆液凝固后,压制成型得成品豆腐;或将D品直接挑皮制成腐竹。
2、根据权利要求1所述的用魔芋、谷物、大豆制作豆腐制品的方法,其特征在于:步骤a中所述的魔芋精粉是80目以上的无杂质魔芋精粉。
3、根据权利要求1或2所述的用魔芋、谷物、大豆制作豆腐制品的方法,其特征在于:步骤b中所述的加水发酵,是加入温度30~40℃的热水发酵。
