本发明涉及一种铁皮石斛叶代餐粉及其制备方法。
背景技术
肥胖已经成为一种严重危害人类健康的慢性疾病并在全球范围内蔓延开来。我国肥胖人口居于世界前列,肥胖人口增加幅度位居世界第一。膳食结构的变化被认为是形成肥胖风潮的重要原因。因此自20世纪以来,研究者们做了大量的研究去探究膳食结构中的脂肪、碳水化合物以及蛋白质与肥胖之间的关系。研究者研究发现碳水化合物特别是精致碳水以及脂肪的摄入是导致肥胖和各种心血管疾病的重要因素。在饮食方面,解决这一问题的重点在于改善饮食中的膳食结构,有效提升饮食中膳食纤维的摄入量,降低淀粉、脂肪的摄入,尤其是开发具有保健效果食物极其重要。与此相适应,以低热量摄入为特征的膳食代餐逐渐被消费者所接受,代餐减肥已成为风行于国际的一种减肥瘦身方法。
苦荞麦是大自然界中很少的既可食用又可药用的农作物之一,其药物功效在《本草纲目》中有详细的记录。苦荞麦的营养成份非常丰富,包括具有抗性的淀粉、高营养价值的蛋白质、多种黄酮类化合物、多种矿质元素、膳食纤维和一些生物活性化合物。据报道,苦荞具有调节血糖、降低血脂、抗癌、抗过敏、抗氧化等多种生理活性。随着人们生活质量意识的提升,苦荞麦逐渐以一种功能性食物的形态进入到人类的生活中。
燕麦加工过程的中最大副产物就是燕麦麸皮。燕麦麸皮中富含膳食纤维、蛋白质、不饱和脂肪酸以及多酚类物质,其中膳食纤维含量高达27.8%,可溶性膳食纤维的含量高达14%。营养学成分测定表明,β-葡聚糖主要存在燕麦麸皮的可溶性膳食纤维中,其含量占燕麦中β-葡聚糖的90%左右,仅有10%的存燕麦中。β-葡聚糖对调节人们身体中的胆固醇和血糖有着良好的作用,同时β-葡聚糖具有较高的黏滞性,能够显著延缓胃排空,促进胃部膨胀,带来强烈的饱腹感。因为其显著的生理活性和饱腹感,燕麦成为了诸多代餐粉产品的重要原料之一。
铁皮石斛作为名贵中药资源,但其资源仍不能得到充分、有效的利用。如具有和茎部类似的多糖有效成分的叶部往往没有被利用起来。铁皮石斛叶中的主要生物活性成分为石斛多糖,其含量约为等重的茎部的多糖成分的1/3。现代药理研究表明,铁皮石斛具有抗肿瘤、抗凝血、降血脂、降血压、降血糖、提高免疫力、抗衰老等功效。叶虽然不是铁皮石斛的药用部位,近年来,人们常作茶食用铁皮石斛叶,发现其对高血压、高血脂、高血糖、心脑血管疾病有辅助治疗作用。
代餐减肥降脂的原理是通过摄入热量限制饮食来降低精制碳水以及脂肪的摄入。通过这种方式肥胖人群减肥的同时,容易导致机体免疫力下降,身体健康指数降低。目前,市场上大多数的代餐产品营养素含量不均衡,微量元素和维生素等缺乏,长期食用可能会导致部分人体必须营养素的缺乏而导致病症。

本发明所要解决的第一个技术问题是提供一种铁皮石斛叶代餐粉,以苦荞麦、燕麦麸皮作为谷物基质,同时添加具有药理功能的中药铁皮石斛的叶部,不仅可以对新食品资源进行有效利用,同时兼具代餐减肥提高免疫力的功效。

为解决上述第一个技术问题,本发明提供了一种铁皮石斛叶代餐粉,包括以下重量份的原料组成:苦荞麦粉10-25份、燕麦麸皮35-50份、山楂2-2.5份、石斛叶15-20份、芝麻粉10-30份、脱脂奶粉40-60份、甜味剂0.1-0.15份。
作为优选的,所述的苦荞麦粉22.5份、燕麦麸皮37.5份、山楂2.5份、石斛叶20份、芝麻粉21.3份、脱脂奶粉58.5份、甜味剂0.13份。
苦荞麦:含有蛋白质、生物类黄酮、多种维生素、纤维素、18种氨基酸、叶绿素及镁、钾、钙、铁、锰、锌、铬、铜、硒等多种成分,是谷类作物中唯一集七大营养素于一身的作物。苦荞麦性味苦、平,能“实肠胃,益气力,续精神,利耳目,能炼五脏滓秽”,认为能“降气宽肠,磨积滞,消热肿风痛”。苦荞麦的麦粒、根及全草皆可入药,可用于治疗肠胃积滞、胀满腹痛、湿热腹泻、痢疾及妇女带下等疾病。
燕麦麸皮:燕麦麸皮中含量丰富的钙、磷、铁、锌、锰、铬等矿物质和微量元素,对预防骨质疏松有一定作用,可促进伤口愈合,以及防止贫血等。燕麦中丰富的维生素B1、B2维生素E及叶酸等,可以改善血液循环等多种生理功能。燕麦麸皮中还含有多种酶类物质,能够帮助延缓细胞的衰老,消除疲劳。
山楂:山楂含多种有机酸。口服后增强胃液酸度,提高胃蛋白酶活性,促进蛋白质的消化;山楂味酸,刺激胃黏膜促进胃液分泌;山楂中含脂肪酶,能促进脂肪的消化;山楂含有维生素C等成分,口服可增进食欲;山楂对胃肠运动功能具有调节作用,对痉挛状态的胃肠平滑肌有抑制作用,对松弛状态的平滑肌有兴奋作用。

(2)将步骤(1)烘干后的铁皮石斛叶用粉碎机粉碎至200目,得到石斛粉末;
(3)将冻干山楂去核并粉碎至80目,再将燕麦麸皮粉碎至80目,并与苦荞麦粉、芝麻粉、脱脂奶粉混合形成混合辅料;
(4)将石斛粉末、混合辅料以及甜味剂混合,进行辐照灭菌后真空包装即可。

Claims (3)
1.一种铁皮石斛叶代餐粉,其特征在于,包括以下重量份的原料组成:苦荞麦粉10-25份、燕麦麸皮35-50份、山楂2-2.5份、石斛叶15-20份、芝麻粉10-30份、脱脂奶粉40-60份、甜味剂0.1-0.15份。
2.根据权利要求1所述的一种铁皮石斛叶代餐粉,其特征在于:所述的苦荞麦粉22.5份、燕麦麸皮37.5份、山楂2.5份、石斛叶20份、芝麻粉21.3份、脱脂奶粉58.5份、甜味剂0.13份。
3.根据权利要求1-2中任意一项所述的一种铁皮石斛叶代餐粉的制备方法其特征在于,包括以下步骤:
(1)将铁皮石斛叶用清水洗净,并置于烘箱中在60℃下烘干;
(2)将步骤(1)烘干后的铁皮石斛叶用粉碎机粉碎至200目,得到石斛粉末;
(3)将冻干山楂去核并粉碎至80目,再将燕麦麸皮粉碎至80目,并与苦荞麦粉、芝麻粉、脱脂奶粉混合形成混合辅料;
(4)将石斛粉末、混合辅料以及甜味剂混合,进行辐照灭菌后真空包装即可。
