本发明公开了一种香味增效剂、添加剂及应用,其中,该香味增效剂包含有以下的一种或两种呋喃酮衍生物:4‑乙氧基‑2,5‑二甲基‑3(2H)‑呋喃酮和4‑羟基‑2,5‑二甲基‑3(2H)‑呋喃酮‑吡喃葡萄糖苷。

技术领域
本发明涉及一种香味增效剂、添加剂及应用。
背景技术
呋喃酮(CAS 3658-77-3),分子式结构如下:
又被称为4-羟基-2,5-二甲基-3(2H)-呋喃酮,呋喃酮醇,菠萝酮、草莓酮,是一种香味增效剂,化学式为C6H8O3。外观为白色至浅黄色固体,呈强烈的焦糖香气,同时具有浓郁的水果香味及果酱味,稀释后具有复盆子香味。易被空气氧化,商品以丙二醇稀释储存,其香味在弱酸介质中尤为浓厚。天然品存在于菠萝、草莓、葡萄、咖啡、芒果、加热牛肉汤、葡萄酒等之中。微量存在于食品、烟草、饮料中,香味阈值为0.04ppb就具有明显的增香修饰效果,因而广泛用作食品、烟草、饮料的增香剂。
天然呋喃酮在植物细胞中通过甲氧基转移酶(O-methyltransferase(FaOMT)的作用会形成4-甲氧基-2,5-二甲基-3(2H)-呋喃酮,其分子式结构如下:
该成分主要为焦甜香韵,然而在低浓度条件下闻香上呈现果香香韵。
进一步,不论是4-羟基-2,5-二甲基-3(2H)-呋喃酮还是2,5-二甲基-3(2H)-呋喃酮-4-甲氧基醚,其用于烟草加香时主要呈现焦甜香,而无法呈现果甜香韵。这主要是由于在烟草加香中,香气化合物参与了烟草的燃烧或加热反应而不能呈现出果甜感及水果香气。
发明内容
本发明所要解决的技术问题在于一种能呈现果香香韵的香味增效剂,作为卷烟及加热烟加香的焦甜香和果香香韵加香物质,其兼具了4-羟基-2,5-二甲基-3(2H)-呋喃酮的焦甜香特征,同时在烟草燃烧之后仍然保留其果甜感,与水果香气特征。
其所要解决的技术问题可以通过以下技术方案来实施。
一种香味增效剂,其特点为,其中包含有以下的一种或两种呋喃酮衍生物:
4-乙氧基-2,5-二甲基-3(2H)-呋喃酮和4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷。
本发明所要解决的另一技术问题在于提供一种前述的香味增效剂作为添加剂在烟草制品加香中的应用。
进一步,所述的4-乙氧基-2,5-二甲基-3(2H)-呋喃酮的添加量为0.00001-0.002g/烟丝g。
也进一步,所述的4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷的添加量为0.00005-0.002g/烟丝g。
作为本技术方案的更进一步改进,包括将设定的添加量均匀喷洒到烟丝上后,恒温恒湿环境下控制平衡烟丝含水率在11.5-12.5%的步骤。
本发明所要解决的又一技术问题在于提供一种赋予烟草制品果甜香气的添加剂,其包含有前述的香味增效剂。
本发明所要解决的又一技术问题在于提供一种赋予加热不燃烧烟草加香的添加剂,该添加剂内含有4-乙氧基-2,5-二甲基-3(2H)-呋喃酮。
采用上述技术方案的香味增效剂、添加剂及应用,相比于现在已经知道的呋喃酮类化合物,本申请所提供的技术方案,能够更好地提供焦甜香以及掩盖烟草自身的焦苦感。其增香效果优于现有技术已知的4-羟基-2,5-二甲基-3(2H)-呋喃酮。
具体实施方式
下面对本发明的具体实施方式进行进一步的详细说明。
实施例1:不同呋喃酮在X2F烟叶卷烟加香中的作用
选择山东2018年产的X2F无效库存烟叶作为评吸的空白对照,该烟叶杂气大,焦糊味重,苦涩感较强,烟草本香较空,更合适评价呋喃酮的作用。感官评价由具有省级评烟评委资质的评烟师对4-羟基-2,5-二甲基-3(2H)-呋喃酮、4-甲氧基-2,5-二甲基-3(2H)-呋喃酮、4-乙氧基-2,5-二甲基-3(2H)-呋喃酮、4-正丙氧基-2,5-二甲基-3(2H)-呋喃酮、4-异丙氧基-2,5-二甲基-3(2H)-呋喃酮、4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷加香后的烟支进行按烟草添加剂感官评吸方法(参照国标GB 5606.4)进行感官评价,其香气特征及添加剂的作用归纳后整理列于表1中。

按照表1中所列的添加物的添加量,将呋喃酮进行适当稀释添加量均匀喷到X2F烟丝上,然后再恒温恒湿箱中控制平衡烟丝含水率为11.5-12.5%,之后继续平衡24h,之后卷成烟支进行评吸,评吸结果如表1所列。
羟基-2,5-二甲基-3(2H)-呋喃酮和4-甲氧基-2,5-二甲基-3(2H)-呋喃酮,主要为呋喃酮特征的焦甜香气,其无论是高添加量浓度还是低添加量浓度时,主要呈现其特征焦甜香气,同时具有较好的掩盖杂气的效果,然后4-乙氧基-2,5-二甲基-3(2H)-呋喃酮与4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷这两种呋喃酮在烟草加香后,除了焦甜香以外还具有一种高雅的水果香与果甜感,赋予烟草极佳的香气与极具有风格的新特征。
实施例2:加热不燃烧烟中的应用
分别将4-乙氧基-2,5-二甲基-3(2H)-呋喃酮或4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷以饮用水稀释至1g/L溶液,分别吸取25μL,以微量注射器加至加热不燃烧烟的烟弹中,之后将烟弹置于40℃鼓风干燥箱中36h烘干,以IQOS(菲利普·莫里斯国际公司)作为评吸烟具进行评析,以未加入呋喃酮的空白烟弹作为对照,评吸结果发现,4-乙氧基-2,5-二甲基-3(2H)-呋喃酮在抽吸过程中呈现出较好的焦甜香和果甜香,同时使得烟气甜润感增加,烟草本香的香气浓度大幅增加。但是4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷在加热烟模式下未能呈现出水果的果甜香气,仅具有较弱的焦甜香气,这可能是加热烟的加热模式与卷烟的燃烧机制在反应后产物的差异性所导致的。4-乙氧基-2,5-二甲基-3(2H)-呋喃酮比其他呋喃酮更适宜在加热烟加香中使用。
Claims (7)
1.一种香味增效剂,其特征在于,其中包含有以下的一种或两种呋喃酮衍生物:
4-乙氧基-2,5-二甲基-3(2H)-呋喃酮和4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷。
2.权利要求1所述的香味增效剂作为添加剂在烟草制品加香中的应用。
3.根据权利要求2所述的应用,其特征在于,所述的4-乙氧基-2,5-二甲基-3(2H)-呋喃酮的添加量为0.00001-0.002g/烟丝g。
4.根据权利要求2所述的应用,其特征在于,所述的4-羟基-2,5-二甲基-3(2H)-呋喃酮-吡喃葡萄糖苷的添加量为0.00005-0.002g/烟丝g。
5.根据权利要求3或4所述的应用,其特征在于,包括将设定的添加量均匀喷洒到烟丝上后,恒温恒湿环境下控制平衡烟丝含水率在11.5-12.5%的步骤。
6.一种赋予烟草制品果甜香气的添加剂,其特征在于,包含有权利要求1所述的香味增效剂。
7.一种赋予加热不燃烧烟草加香的添加剂,其特征在于,添加剂内含有4-乙氧基-2,5-二甲基-3(2H)-呋喃酮。
