技术领域
本发明涉及食品技术,特别是一种补钙健脾补肝肾的牛奶营养配方粥及其制备方法。
背景技术
就目前的食品市场补钙的食品很多,即有动物和原始植物配方补钙的产品比较少,大部分用的都是碳酸钙或者是乳酸钙,而这些补钙产品人体吸收利用率是比较低的,特别是脾胃不健康,肝肾功能较差的少年、儿童、妇女、中老年人等。加之人体缺乏维生素D而造成钙质流失,造成相当一部分的老、少、妇女缺钙,这是不争的事实。因为缺钙,会引起很多的疾病,例如青少年会骨密度不高,妇女和中老人骨质疏松、抽筋、失眠、蛀牙、视力模糊、免疫力低下等等。还有因缺钙而影响未成年人的身高,特别是女性及智力发育等。
发明内容
为了解决目前食品市场存在的一些不足以解决人体的健康问题,本发明设计提出一种补钙健脾补肝肾的牛奶营养配方粥及其制备方法。
这种补钙健脾补肝肾的牛奶营养配方粥,其特征在于,包括以下各组份重量份数原料:
全脂奶粉15-30份、黑芝麻10-30份、白扁豆5-10份、鸡蛋25-50份、无核干红枣1-3份、炙干草1.5-3份、黑豆5-10份、黑米5-10份、燕麦5-10份、山药5-10份、芡实5-10份、无心莲子5-10份。
这种补钙健脾补肝肾的牛奶营养配方粥的制备方法,其特征在于,包括以下步骤,
一、选取优质全脂奶粉待用。
二、选取优质黑芝麻,洗干净、凉干水份、放锅中用小火炒至芝麻壳能用木槌轻槌就能碎为好,出锅待用。
三、选取优质白扁豆,洗干净、凉干水份、放锅中用小火炒至微黄,能用木槌槌碎为好,出锅待用。
四、选取优质黑豆,洗干净、凉干水份、放锅中用小火炒至用木槌槌碎为好,出锅待用。
五、选取优质黑米,洗干净、凉干水份、放入锅中用小火炒至用木槌槌碎为好,出锅待用。
六、选取优质山药(干),待用。
七、选取优质燕麦待用。
八、选取优质无心莲子待用。
九、选取优质芡实待用。
十、选取优质鸡蛋,用水冲洗干净,凉干水份,用打蛋机去壳,同时并加入奶粉和炙干草粉用搅拌机顺时针方向搅拌3分钟取出待用。
十一、选取优质无核干红枣待用。
十二、选取优质炙干草,用破壁机磨成粉待用。
十三、将黑芝麻、黑豆、白扁豆、山药、莲子、芡实、红枣、燕麦、黑米放入干湿两用机中磨成粉待用。
十四、是将奶粉蛋液放入搅拌机内加第十三的九种原料粉,再加入原料的350%的水搅拌,同时加入1%的白沙糖,0.07%的甘草苷甜蜜素和0.01%的柠檬酸钠搅拌均匀后,放入高压锅内蒸15分钟(从来大气开始计时)后,停火待用。
十五、是将蒸好的原料趁热装入分装设备内分装,然后装入高压灭菌锅内,超高压瞬间灭菌5-7秒,待冷至25℃后出锅抽样检验合格后,入冷库待售。
本发明有益效果:第一、牛奶的营养价值与功效,牛奶中含有丰富的碳水化合物,含有优质动物高蛋白质、酪蛋白、乳清蛋白和共同沉淀物,其生物学价值为85,而谷蛋白介于50-65之间。并含有人体需要的全部氨基酸,包括人体不能自身合成的8种必须氨基酸,含有500多种不同的脂肪酸和脂肪酸衍生物。乳脂含66%饱和脂肪酸、30%不饱和脂肪酸和4%多不饱和脂肪酸。含有高达135%毫克左右的钙,73%毫克左右的磷、11%毫克的镁、3.3%毫克左右的锌和1.94%微克的硒,含有丰富的维生素,特别是维生素A、D含量特别高。
牛奶能给人体提供容易吸收的优质钙,促进人体的生长发育和促进智力发育及提高记忆力,提高未成年人的身高。预防因人体缺钙而造成妇女和中老人骨质疏松,丰富的维生D能有效减缓人体内钙质的流失,并能预防视力模糊,提高人体的免疫功能等。还可预防高血压和脑血管病的发生。牛奶也是美容护肤的佳品,因含丰富的维生素B2。
第二、鸡蛋的营养价值,鸡蛋是自然界的一个奇迹,是人类已知的最古老最完美的食品之一,含有除维生素C以外的所有营养素,是仅次于母乳的营养最全面、最均衡的高级营养佳品。它所含有的蛋白质包含所有的氨基酸,含有能维持生命和促进生长所需要的全部的八种人体不能自身合成氨基酸,被营养学家称为“完全蛋白质模式”。它还含有丰富的矿物质和丰富维生DHA和卵磷脂,鸡蛋也是仅次鱼肝油的维生素D的丰富的天然来源。由于鸡蛋营养丰富,因此,它既有补钙(因100含高达112毫克的钙)又有预防钙质流失和预防中老年骨质疏松和提高青少年儿童骨密度的功效与作用,并能促进青少年儿童生长发育(包括神经系统),有健脑益、增高、提高记忆力和身高的作用。还有能促进肝细胞再生从而保护肝脏的功效与作用。并还有避免老年人智力衰退和改善各个年龄段的记忆力的功效与作用。还含有丰富的维生素B2,因此有分解和氧化人体内的致癌物质,所以具有预防癌症的功效与作用。
第三、黑芝麻,黑芝麻含有丰富的脂肪和蛋白质,糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成份。它具有补钙的功效与作用,并有滋润五脏,增加气力的功效与作用,黑芝麻中的亚油酸可降低血液中的胆固醇,预防冠状动脉硬化、降血脂、降血糖的辅助功效与作用,有健脾胃、保护肝脏,促进红细胞生长的功效与作用。
第四、黑豆,黑豆含有的蛋白质生物学价值可与鱼肉相媲美,是植物蛋白中的佼佼者。黑豆蛋白属完全蛋白质,其氨基酸的组成和人体必须氨基酸它几乎都有。并含有丰富的卵磷脂、亚油酸、多种维生素、烟酸和大量的钙,100克含高达224毫克的钙,磷,钾、铁等及皂茸。因此它有补钙和治疗骨质疏松的作用。可以补五脏,暖胃肠,补血活血,明目,解百毒的功效。黑豆中的亚油酸不含胆固醇,不但有益于人体的神经、血管、大脑的生长发育,而且还可预防心血管和肥胖疾病。因黑豆中含有大量的异黄酮,它可预防多种癌症,例如妇女的乳腺癌和其他人群的结肠癌、肺癌、胃癌等。大豆中的皂苷,可清除体内的自由基,具有抗氧化和降低过氧脂质的作用,还有降低血中胆固醇和甘油三脂的含量,对预防动脉硬化和心脑血管疾病有一定的功效和作用。
第五、黑米,黑米含有的蛋白质丰富,所含的锰、锌、铜、硒等无机盐,更含有白大米所缺乏的维生素C、叶绿素、花青素、胡萝卜素及强心苷等特殊成份。因此,黑米有健脾胃,是健脾益胃补血佳品,滋肾水,止肝火补血明目,少年白发,妇女虚弱,肾虚都有很好的补养作用。
第六、山药,山药性平,味甘,功效主治和作用:补脾养胃,生津益肺,补肾,治消渴(降血糖)。山药含有的营养成份和黏液汁、淀粉酶等有滋补作用,能助消化、补疲劳、益气力、长肌肉。能刺激小肠运动,促进肠道内容物排空,抑制胃排空运动,还有增强小肠吸入功能,抑制血清淀粉酶的分泌。有耐低氧,抗衰老,止泻去痰,提高免疫功能的作用。
第七、白扁豆,白扁豆性温,味甘,主要功能有健脾胃,用于脾胃虚弱,食欲不振,大便溏泻,胸闷腹胀,妇女白带过多等症。白扁豆还含有对病毒的抑制成份,这种活性成份在水容性的高份子和低份子都有,能有效地抑制病毒的生长,并含有多种微量元素,能刺激骨髓造血功能,有补血作用。还有防治白细胞减少的作用。可促进淋巴细胞转化,增强对肿瘤的免疫力,有防癌抗癌功效和作用。
第八、莲子,莲子健脾胃、滋肾脏。它含有丰富的抗氧化成份,能提高人身的免疫功能,能预防心脑血管疾病,并有防癌抗癌的作用和降血压、安神的功效。
第九、红枣,红枣性温,味甘,功效主治,补脾和胃,益气生津,调营卫,解药毒,治营卫不和,治胃虚食少,气血津液不足等。经研究发现,红枣能提高人体的免疫功能,能促进白细胞的生成,降低血清胆固醇,提高人血中的白蛋白,保护肝脏。并还含有抑制癌细胞,使癌细胞向正常细胞转化的物质。还含有芦丁成份,能软化血管,降低血压。红枣中富含钙和铁,对防治骨质疏松和贫血具有重要作用。对生长发育高峰期的青少年儿童和女性贫血都有食疗的功效和作用。还有抗过敏,除腥嗅怪味,增强食欲,补养肝脏,健脑益智,宁心安神,镇静降压,杀菌的功效与作用。
第十、燕麦,燕麦的药用作用,主要是健脾,益肝,它性平,味甘。它含丰富的B族维生素和锌,这两种元素对糖类和脂肪有调节作用。还含有丰富的果胶,可以有效降低人体的胆固醇。含有的维生素E,能改善血液循环,缓解生活和工作压力。它含有的钙、磷、铁、锌等矿物质,可预防骨质疏松,促进伤口愈合,预防贫血,有补血作用,也是补钙的佳品。燕麦中含油量为4-16%,而且不饱和脂酸类比较大,常食对动脉粥样硬化与冠心病、高血压等均有很好的疗效。经常食用对心脑血管疾病能起到一定的预防作用。吃配方燕麦粥,完全可满足人们早上补充营养的需求。
第十一、茨实,芡实具有补脾止泻,能提高脾胃功能和缓解脾胃虚弱的功能,并是除脾胃内湿的高手,因脾胃内湿会严重影响脾胃功能,因此它是本配方很重要的选择。
第十二、甘草,甘草性平,味甘,主要药食功能是补脾益气,清热解毒,祛瘘止咳,缓急止痛,调和药食。甘草还具有食疗保健作用,如甘草的甘草酸可有效地防止肝损伤,短期应用甘草酸治疗可有效降低血清ALT水平,肝组织损伤也得以改善,长期应用可以预防肝细胞癌症的发生。甘草酸还具有降血脂抗动脉粥样硬化的作用,其强度可能超过抗动脉硬化药,对血脂增高有明显的抑制作用。本品可减轻脑组织的脂质过氧化反映,对脑神经细胞凋亡有显著的保护作用和抗衰老、延年益寿的作用。
本发明补钙配方设计的理由及原料之间的关系。既然本发明的目的是补钙,首先是为什么要补钙,本发明在背景技术及发明内容里面作了较为详细的说明,这里就不再陈述了。依据凡事都要一分为二看和几千年来的中医理论,既然涉及到药食同原物品,那就依照各物品(原料)的作用来配方以期达到即补钙、补得上钙的目的。要达到补得上钙这个目的,首先要考虑的是吃进体内的补钙原料能否能充分的被吸收利用的问题。因此,就必须考虑人体内负责吸收利脏腑是谁,按照中医理论的介定,当然首当其中的是脾胃和肝肾脏腑。那么需解决的问题就理所当然的是它们了。所以配方设计组方就少不了健脾和胃,补肝肾的食药原料了。本发明中,特别是应该说明的是甘草,因为它有升高血压的副作用,但时间短,在10分后就开始下降,而且用量是以能起作用的基本用量,不会影响身体副作用,通过试验,只有在超过20克以上的用量,才对身体发生副作用。
其次是在选择甘草时为什么选择炙甘草,因为甘草为生、炙两种,炙甘草原料是以健脾胃为主,而生甘草是以止咳化痰为主。但通配方比例和原料之间的取长补短而解决了食品安全问题。本发明的配方产品,经过两年零七个月的临床试验,作为有72岁高龄的发明人,现通过第三方的微量元素的化验,钙含量以达到1.47mmo/L正常范围。
一、本发明专利的主要收获,一是成功设计了一个即补钙又健脾胃、补肝肾的好配方。二是试验出了一套良好的制备方法。三是本发明专利的补钙产品对人体确实取得了满意的效果。
二、本发明专利的补钙配方和制作方法解决了消费者补钙效果的问题:
第一是吃进的钙能被大部分的吸收利用,第二是能留得住所被利用的钙,第三解决了牛奶单一的动物补钙的问题。因加入了原始自然植物补钙原料,而牛奶所添加的碳酸钙或乳酸钙是不能代替原始自然的植物补钙原料的。

以下结合具体实施例对本发明做进一步详细说明:
实施例一
一种补钙健脾补肝肾的牛奶营养配方粥,其特征在于,包括以下各组份重量份数原料:
全脂奶粉15-30份、黑芝麻10-30份、白扁豆5-10份、鸡蛋25-50份、无核干红枣1-3份、炙干草1.5-3份、黑豆5-10份、黑米5-10份、燕麦5-10份、山药5-10份、芡实5-10份、无心莲子5-10份。

全脂奶粉15-30份、黑芝麻10-30份、白扁豆5-10份、鸡蛋25-50份、无核干红枣1-3份、炙干草1.5-3份、黑豆5-10份、黑米5-10份、燕麦5-10份、山药5-10份、芡实5-10份、无心莲子5-10份。
2.一种补钙健脾补肝肾的牛奶营养配方粥的制备方法,其特征在于,包括以下步骤,
一、选取优质全脂奶粉待用;
