本发明公开了一种哺乳期产妇用多肽蛋白营养复合饮料,涉及蛋白饮品技术领域,包括以下重量百分含量的原料:3%‑5%的高良姜汁、3%‑5%的红枣汁、3%‑5%的乌梅汁、1.0%‑1.5%的苹果汁、1.3%‑1.4%的鲈鱼蛋白肽粉、1.3%‑1.4%的大豆肽粉、0.5%‑1.5%的菊粉、0.5%‑1.5%的葡萄糖酸钙、0.05%‑0.15%的磷脂、0.06%‑0.07%的小茴香粉、0.06%‑0.07%的食用香料、0.06%‑0.07%的发酵木瓜粉、0.03%‑0.04%的乳清蛋白粉、0.03%‑0.04%的DHA藻油、0.006%‑0.007%的维生素E、0.0003%‑0.0005%的维生素D3,采用高压均质技术制成液体复合型饮品。本发明具有通过补充哺乳期乳母的核心营养和促进泌乳的成分,为产妇提供全面的营养,以提升母乳中核心营养,提高母乳质量,并且促进乳汁的分泌,采用液体饮用的形式,通过高压均质技术,提高人体吸收率,同时具有方便食用的效果。
Description
技术领域
本发明涉及蛋白饮品技术领域,尤其涉及一种哺乳期产妇用多肽蛋白营养复合饮料。
背景技术
一直以来,母乳都被人们认为是婴儿营养的黄金标准,是0-6个月婴儿最合理的“营养配餐”,能够提供6个月内婴儿所需的所有营养。母乳含有3%-5%的脂肪,0.8%-0.9%的蛋白质,6.9%-7.2%的碳水化合物(乳糖),0.2%的矿物质,以及其他生物活性物质等,提供60-75kcal/100ml的能量。母乳中丰富的抗体和免疫蛋白等物质可增强婴儿的抗感染能力;母乳中的消化酶、乳糖酶、脂肪酶等能够促进婴儿的胃肠道消化与吸收;母乳喂养还可以减少婴儿成年后患代谢性疾病如肥胖、高血压等的几率。研究表明,母乳喂养不仅有益于婴儿的生长发育,还可以降低母亲患乳腺癌和卵巢癌的危险。
母乳的直接来源是哺乳期妇女的泌乳,因此,对于哺乳期妇女在泌乳期是否有足够的乳汁,其重要性也是不容忽视。女性由于营养不足、或是由于婴儿对乳头的吸吮不足够,会影响乳汁的分泌量。女性在哺乳期产生大量的乳汁,蛋白质、糖类化合物、脂质、矿物质等的摄入需要明显增加,也需要额外添加营养元素以补充乳汁中所需要的额外营养。当营养摄入不足时乳汁中基本成分的含量不变,但是这些营养成分是来自于产妇自身的储备。例如当膳食中的钙不足时,骨骼中储备的钙会被发掘直至分泌的乳汁达到正常水平。当产妇营养不足时乳汁的分泌量会明显降低。
目前市场上用于哺乳期产妇的营养品大体有五大类:
一、是以补充维生素和矿物质为主的孕妇营养品:例如拜尔公司的一款elevit爱乐维哺乳期黄金素,产品配方为:维生素B1 1.4mg、维生素B2 1.6mg、维生素B3 17mg、维生素B57mg、维生素B6 2mg、维生素B12 2.8mcg、维生素C 60mg、维生素D3 600IU 15mcg、维生素E10mg、维生素H 35mcg、钙120mg,锌10mg、硒55mg、浓缩Omega-3 425.6mg、叶酸500mcg、叶黄素250mcg、β-胡萝卜素6.5mg;
又例如多乐益宝多种维生素和矿物质片,产品配方为:维生素A260μg、维生素B20.43mg、维生素C 24mg、维生素B1 0.3mg、维生素B6 0.56mg、维生素E 2.78mg、泛酸1.2mg、叶酸0.135mg、铁4.53mg、硒10.5μg、烟酸3.45mg、生物素7μg、锌3.08mg;
再例如一款知名品牌挪威小鱼为哺乳期乳母综合补充营养素,产品配方为:维生素A 5000μg、维生素D 100μg,维生素E 11mg,维生素B11.6mg,维生素B21.7mg,维生素B320mg、维生素B5 6mg、维生素B6 1.5mg、维生素B12 2.60μg、叶酸4000μg、生物素1500μg、维生素C1000μg、铁18mg、锌11mg、铜1300μg、锰2mg、碘2000μg、硒600μg、铬500μg、蓝莓提取物80mg、钙300mg,镁125mg、DHA450mg、EPA 250mg;
中国营养学会建议,乳母应在正常妇女基础上每日增加蛋白质20g,达到每日85g/天,其中一部分应为优质蛋白质;目前的以补充维生素和矿物质为主的孕妇营养品营养成分不含蛋白质类的成分,在对乳母的营养补充上还是存在成分缺陷的。
二、是以复合营养为主的乳母营养品:以复合营养为主的乳母营养品并不多见,多数产品仍是以维生素+矿物质+复合营养素来强化某种特定功效,例如英国VITABIOTICS品牌,产品配方里含有维生素D100μg、维生素E 400mg、维生素C80mg、维生素C 80mg、维生素B18mg、维生素B2 4mg、维生素B3 18mg、维生素B6 8mg、叶酸4000μg、维生素B2 200μg、生物素1500μg、泛酸40mg、钙400mg、镁75mg、铁14mg、锌15mg、铜10000μg、锰0.5mg、硒1000μg、铬400μg、碘1500μg、马尾提取物200mg、水解海洋胶原蛋白200mg、柑橘属植物15mg、辅酶q1010mg、葡萄籽提取物15mg、蛋氨酸30mg、L-胱氨酸30mg、天然类胡萝卜素2mg;
三、是以植物蛋白和动物蛋白为主的乳母营养品:例如江中集团一款初元牌复合肽营养饮品(III),含动物蛋白及少量矿物质成分,产品配方为:海洋鱼低聚肽粉、鱼胶原蛋白、泰和乌鸡、水解乳清蛋白、抗性糊精(水溶性膳食纤维)、纯化水、食品添加剂(麦芽糊精,柠檬酸,柠檬酸锌,三氯蔗糖)、食品营养强化剂(酪蛋白膦酸肽,葡萄糖酸锌)、食用香精;
四、是以补充某种单一营养,具有特定功效的乳母营养品,包括预防便秘,补充牛初乳等。
五、是以植物提取物(葫芦巴)或卵磷脂为主,促进泌乳的孕妇营养品:例如Nature's Own一款催乳下奶胶囊,产品成分为以葫芦巴籽提取物为主;例如活力妈妈卵磷脂产品,产品成分以大豆卵磷脂为主。
目前五种类型的产品除了复合配方类产品,很少从补充核心营养增强产妇自身免疫能力以及促进泌乳等角度综合去设计产品的配方。
基于上述问题,我们设计出了一种能提升母乳中核心营养、提高产妇自身免疫能力、促进乳汁分泌并提高母乳吸收率的哺乳期产妇用多肽蛋白营养复合饮料。
发明内容
本发明的目的是为了解决现有技术中存在的缺点,而提出的一种哺乳期产妇用多肽蛋白营养复合饮料。
为了实现上述目的,本发明采用了如下技术方案:
一种哺乳期产妇用多肽蛋白营养复合饮料,包括以下重量百分含量的原料:3%-5%的高良姜汁、3%-5%的红枣汁、3%-5%的乌梅汁、1.0%-1.5%的苹果汁、1.3%-1.4%的鲈鱼蛋白肽粉、1.3%-1.4%的大豆肽粉、0.5%-1.5%的菊粉、0.5%-1.5%的葡萄糖酸钙、0.05%-0.15%的磷脂、0.06%-0.07%的小茴香粉、0.06%-0.07%的食用香料、0.06%-0.07%的发酵木瓜粉、0.03%-0.04%的乳清蛋白粉、0.03%-0.04%的DHA藻油、0.006%-0.007%的维生素E、0.0003%-0.0005%的维生素D3、5.09%-7.76%的添加剂,其余为水。
进一步的,所述添加剂包括4%-6%的阿拉伯胶、0.1%-0.3%的甜菊糖苷、0.75%-0.8%的柠檬酸、0.2%-0.6%的黄原胶、0.04%-0.06%的山梨酸钾。
进一步的,所述食用香料采用葫芦巴籽浸膏制成。
进一步的,所述小茴香粉采用小茴香与麦芽糊精组合制成。
进一步的,所述高良姜汁采用高良生姜制成。
进一步的,所述发酵木瓜粉采用青木瓜制成。
一种哺乳期产妇用多肽蛋白营养复合饮料的制备方法,包括所述的原料,采用高压均质技术制成,包括以下步骤:
1)、将所述原料备齐;
2)、在快溶桶中,依次加入配方量的菊粉、磷脂、葫芦巴籽浸膏、小茴香粉、麦芽糊精、发酵木瓜粉、乳清蛋白粉、鲈鱼蛋白肽粉、大豆肽粉、DHA藻油、维生素E、维生素D3、阿拉伯胶、黄原胶,加热,边加边搅拌,搅拌至完全融化混合均匀,冷却;
3)、依次将配方量的葡萄糖酸钙、甜菊糖苷、柠檬酸、山梨酸钾投入到调配桶中,并混合所述步骤2)所得的溶液,搅拌均匀,备用;
4)、将所述步骤3)制得的溶液,通过过滤器得到滤液;
5)、将高良姜汁、乌梅汁、红枣汁、苹果汁混合成一定质量分数的水溶液,缓慢加入所述步骤4)所得溶液中,混匀;
6)、将所述步骤4)制得的溶液进行补水定容后,测定液体的pH为3.8-4.5;
7)、将所述步骤5)中的溶液经过平衡缸高压均质,使用HTST灭菌,并保持管持温度,使用热充填到裸包,入盒后,冷风风干冷却到盒表面温度。
进一步的,所述步骤2)中加热温度为70-85℃,所述步骤7)冷却温度<50℃。
进一步的,所述步骤7)中均质压力为300-400bar,灭菌条件为:灭菌温度85℃,保持管持温时间为15-30s。
与现有技术相比,本发明的有益效果是:本发明中,通过各种原料的合理配制,以补充哺乳期乳母的核心营养和促进泌乳的成分,提升母乳中核心营养和促进乳汁分泌,为乳母提供全面的营养,提高母乳质量;并且采用高压均质技术的生产工艺,将传统的乳母复合营养品由固体、粉末状的形态改为液态饮用的形式,可直接饮用,食用方便;同时使得本发明中的多肽蛋白复合饮料对人体的吸收率大大提高,配合抗光抗氧化包装技术,完整保留有效性成分的稳定,完美吸收水溶及油溶营养素。
具体实施方式
下面将结合本发明实施例中的附图,对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。
本发明实施例中食用香料采用葫芦巴籽浸膏制成;小茴香粉采用小茴香与麦芽糊精组合制成;高良姜汁采用高良生姜制成;发酵木瓜粉采用青木瓜制成。
本发明实施例中鲈鱼胜肽的取得,是以鲈鱼为原料获得。
本发明实施例中的大豆胜肽的取得,是利用大豆为原料制造取得的。
以下将进一步详细说明。
实施例1
一种哺乳期产妇用多肽蛋白营养复合饮料,包括以下重量百分含量的原料:5%的高良姜汁、5%的红枣汁、3%的乌梅汁、1.5%的苹果汁、1.33333%的鲈鱼蛋白肽粉、1.33333%大豆肽粉、1%菊粉、1%的葡萄糖酸钙、0.1%的磷脂、0.06667%的小茴香粉、0.06667%的食用香料、0.06667%的发酵木瓜粉、0.03333%乳清蛋白粉、0.03333%DHA藻油、0.00667%的维生素E、0.0004%的维生素D3、6.425%的添加剂,其余为水。
添加剂包括5%的阿拉伯胶、0.15%的甜菊糖苷、0.77%的柠檬酸、0.4%的黄原胶、0.05%的山梨酸钾。
一种哺乳期产妇用多肽蛋白营养复合饮料的制备方法,包括原料,采用高压均质技术制成,包括以下步骤:
1)、将原料备齐;
2)、在快溶桶中,依次加入配方量的菊粉、磷脂、葫芦巴籽浸膏、小茴香粉、麦芽糊精、发酵木瓜粉、乳清蛋白粉、鲈鱼蛋白肽粉、大豆肽粉、DHA藻油、维生素E、维生素D3、阿拉伯胶、黄原胶,加热,边加边搅拌,搅拌至完全融化混合均匀,冷却;
3)、依次将配方量的葡萄糖酸钙、甜菊糖苷、柠檬酸、山梨酸钾投入到调配桶中,并混合所述步骤2)所得的溶液,搅拌均匀,备用;
4)、将步骤3)制得的溶液,通过过滤器得到滤液;
5)、将高良姜汁、乌梅汁、红枣汁、苹果汁混合成一定质量分数的水溶液,缓慢加入所述步骤4)所得溶液中,混匀;
6)、将步骤4)制得的溶液进行补水定容后,测定液体的pH为3.8-4.5;
7)、将步骤5)中的溶液经过平衡缸高压均质,均质压力为300-400bar,脱气桶脱气,使用HTST灭菌,杀菌温度85℃,并保持管持温时间为15-30S,灭菌后的溶液使用热充填到裸包,热充温度78℃,入盒后,冷风风干冷却到盒表面温度<50℃。
采用本发明制得的多肽蛋白营养复合饮料,能够提供母乳所需的核心营养包括:由乳清蛋白、鲈鱼胜肽、大豆胜肽提供的蛋白质;由磷脂提供的卵磷脂;由天然藻油提供的DHA;以及包含VE、VD3、VB12的维生素和包含葡糖糖酸钙的矿物质。
其中,蛋白质是保证机体健康最重要的营养素,孕妇补充蛋白质对婴儿大脑的发育具有重要作用,鲈鱼胜肽在提高免疫能力方面有着显著的效果;卵磷脂也是脑部发育关键营养,同时具有疏通乳腺的功能;DHA是可以促进婴儿的脑部以及视力的发育;维生素可促进泌乳,提高母乳质量;矿物质的补充同样可提高母乳质量。本发明中的营养复合饮料能实现对营养的全面提供,帮助哺乳期产妇提高母乳质量,有助于婴儿的发育。
本发明所制得的多肽蛋白营养复合饮料有效增加了哺乳期产妇营养品所需的营养成分的多样性。
同时,本发明制得的多肽蛋白营养复合饮料,还能够提供促进泌乳的成分,促进泌乳的成分来自于采用葫芦巴制得的食用香料、采用小茴香制得的茴香粉、采用高良生姜制得的高良姜粉以及采用青木瓜制得的发酵木瓜粉。
本发明采用高压均质技术后,天然植物胶体等营养元素在高压均质技术的作用下化为微米级的功能微粒,有效提升生物利用率,使得制得的多肽蛋白营养复合饮料对人体的吸收率可以达到5.5倍。
采用液体饮用的形式,可直接饮用,方便哺乳期产妇食用,无需熬煮、无需刻量以及无需清洁,极大的方便了产妇的生活。
此外,本发明制得的饮品搭配抗光抗氧化包装技术,可以完整保留效性成分的稳定,完美吸收水溶及油溶营养素。
试验例1
取本行业现有的一种母乳饮品,作为对比例,与实施例1所得的多肽蛋白营养复合饮料对比试验。
随机选取一名哺乳期妇女,记录人体在饮用实施例1与对比例饮品后,连续24小时内,人体血浆吸收EPA+DHA含量。
试验结果如图1所示,人体血浆吸收EPA+DHA含量为未高压均质组的5.5倍。
由上述结果可以看出,哺乳期妇女在饮用本发明中多肽蛋白营养复合饮料后,人体血浆吸收营养成分含量最高可达5.5倍。
试验例2
利用qPCR技术分子人体单核球细胞THP-1中免疫相关基因之mRNA相对表现量,THP-1细胞经过LPS处理3小时后会提升细胞激素IL-1β、IL-8与TNF-α基因表现,而本发明饮料配方中鲈鱼胜肽可更有效增加IL-1β、IL-8与TNF-α基因表現,浓度1%相对于LPS处理组分别增加4.9、7.6与3.1倍,浓度2%时分别增加8.0、6.3与3.4倍。
试验结果如图2所示,图中鲈鱼胜肽为萃取出的鲈鱼精华。
由上述结果可以看出,本发明中鲈鱼胜肽成分会影响免疫相关基因的表现,可有效强化非专一性免疫反应,以对抗细菌与病毒至侵袭,从而提高人体免疫能力。

1.一种哺乳期产妇用多肽蛋白营养复合饮料,其特征在于,包括以下重量百分含量的原料:3%-5%的高良姜汁、3%-5%的红枣汁、3%-5%的乌梅汁、1.0%-1.5%的苹果汁、1.3%-1.4%的鲈鱼蛋白肽粉、1.3%-1.4%的大豆肽粉、0.5%-1.5%的菊粉、0.5%-1.5%的葡萄糖酸钙、0.05%-0.15%的磷脂、0.06%-0.07%的小茴香粉、0.06%-0.07%的食用香料、0.06%-0.07%的发酵木瓜粉、0.03%-0.04%的乳清蛋白粉、0.03%-0.04%的DHA藻油、0.006%-0.007%的维生素E、0.0003%-0.0005%的维生素D3、5.09%-7.76%的添加剂,其余为水。
2.根据权利要求1所述的一种哺乳期产妇用多肽蛋白营养复合饮料,其特征在于,所述添加剂包括4%-6%的阿拉伯胶、0.1%-0.3%的甜菊糖苷、0.75%-0.8%的柠檬酸、0.2%-0.6%的黄原胶、0.04%-0.06%的山梨酸钾。
3.根据权利要求1所述的一种哺乳期产妇用多肽蛋白营养复合饮料,其特征在于,所述食用香料采用葫芦巴籽浸膏制成。
4.根据权利要求1所述的一种哺乳期产妇用多肽蛋白营养复合饮料,其特征在于,所述小茴香粉采用小茴香与麦芽糊精组合制成。

7.一种哺乳期产妇用多肽蛋白营养复合饮料的制备方法,包括如权利要求1-6任一项所述的原料,其特征在于,采用高压均质技术制成,包括以下步骤:
1)、将所述原料备齐;
2)、在快溶桶中,依次加入配方量的菊粉、磷脂、葫芦巴籽浸膏、小茴香粉、麦芽糊精、发酵木瓜粉、乳清蛋白粉、鲈鱼蛋白肽粉、大豆肽粉、DHA藻油、维生素E、维生素D3、阿拉伯胶、黄原胶,加热,边加边搅拌,搅拌至完全融化混合均匀,冷却;
3)、依次将配方量的葡萄糖酸钙、甜菊糖苷、柠檬酸、山梨酸钾投入到调配桶中,并混合所述步骤2)所得的溶液,搅拌均匀,备用;
4)、将所述步骤3)制得的溶液,通过过滤器得到滤液;
5)、将高良姜汁、乌梅汁、红枣汁、苹果汁混合成一定质量分数的水溶液,缓慢加入所述步骤4)所得溶液中,混匀;
6)、将所述步骤4)制得的溶液进行补水定容后,测定液体的pH为3.8-4.5;
7)、将所述步骤5)中的溶液经过平衡缸高压均质,使用HTST灭菌,并保持管持温度,使用热充填到裸包,入盒后,冷风风干冷却到盒表面温度。
8.根据权利要求7所述的哺乳期产妇用多肽蛋白营养复合饮料的制备方法,其特征在于,所述步骤2)中加热温度为70-85℃,所述步骤7)冷却温度<50℃。
