随着生活水平的提高,人们对健康的要求也越来越高,营养保健问题越来越受到关注。微藻中含有多种活性物质,其保健价值逐渐被人们所认知。微藻具有多种功能价值,如作为营养补充剂,补充人体所需的蛋白质、氨基酸、维生素、矿物质、不饱和脂肪酸以及β-胡萝卜素等;微藻中含有的多糖能刺激和调节免疫作用,提高动物体非特异性的细胞免疫功能,此外还具有抗肿瘤、抗病毒、抗衰老、抗氧化、抗辐射、预防和治疗疾病等多种功能。由于其功能性,近来人们不断把微藻加工成粉或提取物,添加到食品中去,以增加其营养保健作用,如各种营养液、功能面制品、减肥食品等。
饮料行业是中国消费品中新的增长点,其品种繁多,如矿泉水、碳酸饮料、果汁、果蔬汁、乳饮料、果酒等,口感已不仅仅是消费者选择的因素,功能性也成为一个新的关注点。将微藻与饮料相结合,可以有效提高单一产品的营养价值和商品价值,能够达到营养和口感的相互补充,值得推广和发展。
中国专利CN201610131466.4 提供了一种含有微藻的固体饮料及其制备方法,每40kg固体饮料包括如下重量的原料:奶粉和植脂末的一种或两种,15~25kg;甜味剂,10~22kg;速溶茶粉,0.5~2.0kg;微藻,0.2~2.0kg;香精,0.05~1.5kg;羧甲基纤维素,0.05~1.0kg;二氧化硅,0.05~1.0kg;乙基麦芽酚,0.01~1.0kg;所述微藻为小球藻、螺旋藻、红球藻的一种或多种;所述羧甲基纤维素和二氧化硅的重量比为1:1。该技术提供的固体饮料中含有小球藻、螺旋藻和/或红球藻,营养价值和保健价值高。但是,通过该技术制备的产品饮用时还需冲泡,费时费力,且不适于外出携带。

本发明的目的是提供一种功能性微藻蛋白饮料及其制备方法,既保留了植物蛋白和微藻的营养成分,具有很好的保健功能,二者又相互配合,去除微藻的腥味,改善了口感,稳定性好,营养价值高。
为实现上述发明的目的,本发明采取的技术方案如下:
一种功能性微藻蛋白饮料,由以下重量份的组分制成:
蛋白粉10-15份、微藻粉2-3份,蔗糖7-12份,柠檬酸1-2份,苹果酸0.5-1份,稳定剂0.5-1份,三聚磷酸钠0.1-0.3份,柠檬酸钠0.05-0.1份,食用香精 0.01-0.1份,水100-120份。
一种功能性微藻蛋白饮料,由以下重量份的组分制成:
蛋白粉10-12份、微藻粉2-3份,蔗糖5-8份,柠檬酸1-2份,苹果酸0.5-0.6份,稳定剂0.6-0.8份,三聚磷酸钠0.1-0.2份,柠檬酸钠0.07-0.08份,食用香精 0.05-0.07份,水110-115份。
本发明的另一个目的是提供一种功能性微藻蛋白饮料的制备方法,包括如下步骤:
(1)原料混合:将蔗糖、稳定剂、三聚磷酸钠、柠檬酸钠加入水中,搅拌并混合均匀,然后加入蛋白粉、微藻粉混合均匀,再加入柠檬酸、苹果酸,使料液pH值为4-4.5,加入香精进行调香;
(2)均质:混合后的料液进行均质,均质温度50℃-65℃,均质的压力为200bar-400bar,均质时间10min;
(3)杀菌,罐装:将均质的溶液在90-100℃条件下杀菌30-40min,罐装即可。
本发明的有益效果是:
(1)以蛋白粉、微藻为原料,即保留植物蛋白和微藻的营养成分,二者又相互配合,去除微藻的腥味,改善了口感。
(2)该配方稳定性好,且能够最大程度的锁住微藻的营养成分,具有很好的保健功能。

蛋白粉10-12份、微藻粉2-3份,蔗糖5-8份,柠檬酸1-2份,苹果酸0.5-0.6份,稳定剂0.6-0.8份,三聚磷酸钠0.1-0.2份,柠檬酸钠0.07-0.08份,食用香精 0.05-0.07份,水110-115份。
3.一种功能性微藻蛋白饮料的制备方法,其特征在于:包括如下步骤:
原料混合:将蔗糖、稳定剂、三聚磷酸钠、柠檬酸钠加入水中,搅拌并混合均匀,然后加入蛋白粉、微藻粉混合均匀,再加入柠檬酸、苹果酸,使料液pH值为4-4.5,加入香精进行调香;
均质:混合后的料液进行均质10-15min;
杀菌,罐装:将均质的溶液杀菌30-40min,罐装即可。
4.根据权利要求3所述的一种功能性微藻蛋白饮料的制备方法,其特征在于:步骤(2)所述的均质温度50℃-65℃,均质的压力为200bar-400bar。
5.根据权利要求3所述的一种功能性微藻蛋白饮料的制备方法,其特征在于:步
骤(3)所述的杀菌温度为90-100℃。
