为解决上述问题,本发明提出了一种小分子肽球,按照质量比包括以下原料:木薯粉为:50%-52%,阿巴斯甜为:1%-1.7%,维生素C为:3%-7%,鱼胶原小分子蛋白肽为:10%-15%,食用色素为:0.3%-0.5%,香味剂为:0.1%-0.3%,木糖醇为1%-1.7%,余量为水。
优选的,小分子肽球包括以下制备步骤:
S1:准备原料;将阿巴斯甜粉放入容器内,放入水,加热至煮沸;
S2:煮沸之后,倒入木薯粉、维生素C,并混合均匀,反复搅拌成面糊形状,得到糊状物A;
S3:将糊状物A放置桌台,静置常温后,依次切成块,得到块状物面团B;
S4:将块状物面团B揉成圆球状,再在圆球上面撒上木薯粉,得到圆球物C;
S5:将圆球物C放入加热容器中,并反复的搅拌,避免圆球物C粘粘加热容器,至圆球物C全部浮在液面上后,继续加盖焖至15分钟,得到球状物料D;
S6:将球状物料D捞出,用常温水冲洗数次,洗掉浓稠的汤液并降低温度;
S8:温度降低至35℃时,加入深海鱼小分子蛋白肽粉、粉末状的木糖醇,并轻微搅拌;
S9:继续温度降至35℃以下,得到球状物料E;将球状物料E外表均匀粘连小分子蛋白肽粉剂和木糖醇粉剂,得到成品。

本发明提出的一种小分子肽球,按照质量比包括以下原料:
木薯粉为:50%-52%,阿巴斯甜为:1%-1.7%,维生素C为:3%-7%,鱼胶原小分子蛋白肽为:10%-15%,食用色素为:0.3%-0.5%,香味剂为:0.1%-0.3%,木糖醇为1%-1.7%,余量为水。
在一个可选的实施例中,小分子肽球,包括以下制备步骤:
S1:准备原料;将阿巴斯甜粉放入容器内,放入水,加热至煮沸;
S2:煮沸之后,倒入木薯粉、维生素C,并混合均匀,反复搅拌成面糊形状,得到糊状物A;
S3:将糊状物A放置桌台,静置常温后,依次切成块,得到块状物面团B;
S4:将块状物面团B揉成圆球状,再在圆球上面撒上木薯粉,得到圆球物C;
S5:将圆球物C放入加热容器中,并反复的搅拌,避免圆球物C粘粘加热容器,至圆球物C全部浮在液面上后,继续加盖焖至15分钟,得到球状物料D;
S6:将球状物料D捞出,用常温水冲洗数次,洗掉浓稠的汤液并降低温度;
S8:温度降低至35℃时,加入深海鱼小分子蛋白肽粉、粉末状的木糖醇,并轻微搅拌;
S9:继续温度降至35℃以下,得到球状物料E;将球状物料E外表均匀粘连小分子蛋白肽粉剂和木糖醇粉剂,得到成品。
本发明中,鱼胶原小分子蛋白肽:胶原小分子胶原蛋白肽,平常我们食用的胶质,里面含有胶原蛋白但是它是大分子蛋白质,其分子量在30万道尔顿以上,并不能被人体直接吸收并且吸收率很低;而通过酸碱、酶切等技术把分子量控制在6000道尔顿以内的胶原蛋白,称之为胶原蛋白肽肽是介于氨基酸和大分子蛋白质之间的物质,两个或以上的氨基酸脱水缩合形成若干个肽键从而组成一个肽,多个肽进行多级折叠就组成一个蛋白质分子。肽是精准的蛋白质片段,其分子只有纳米般大小,胃肠、血管及肌肤等极易吸收,其吸收率要远远高于大分子蛋白质。分子量6000道尔顿以内的胶原蛋白肽,又分为1000-6000道尔顿的蛋白肽和1000道尔顿以内的蛋白肽。一般寡肽中含有的氨基酸的数目为二到九根据肽中氨基酸的数量不同也有着不同的称呼:由两个氨基酸分子脱水缩合而成的化合物叫做二肽同理类推还有三肽、四肽、五肽等一直到九肽;通常由10~50氨基酸分子脱水缩合而成的化合物叫多肽。血小板与胶原蛋白接触发生生化反应生成血纤维堵住伤口;还能刺激细胞分裂增殖、分化修复受损细胞愈合伤口。
本发明中,维生素C具有酸的性质,又称抗坏血酸。维生素C具有很强的还原性,很容易被氧化成脱氢维生素C,但其反应是可逆的,并且抗坏血酸和脱氢抗坏血酸具有同样的生理功能,但脱氢抗坏血酸若继续氧化,生成二酮古乐糖酸,则反应不可逆而完全失去生理效能。维生素C为抗体及胶原形成,组织修补(包括某些氧化还原作用),苯丙氨酸、酪氨酸、叶酸的代谢,铁、碳水化合物的利用,脂肪、蛋白质的合成,维持免疫功能,羟化5-羟色胺,保持血管的完整,促进非血红素铁吸收等所必需,同时维生素C还具备有抗氧化,抗自由基,抑制酪氨酸酶的形成。
本发明中,木糖醇是一种天然甜味剂。有防龋齿的作用。阿斯巴甜,在室温下以白色粉末的状态存在,是一种天然功能性低聚糖,甜度高、不易潮解、不致龋齿,糖尿病患者可食用。阿斯巴甜因其热量极低,又具有较高的甜度,可添加于饮料、药制品或无糖口香糖中作为糖替代品。1g的阿斯巴甜大约可释放约4186kJ/kg的热量,而且2.8mg/dl的阿斯巴甜就可以让人感觉到甜味,故可以忽略少量阿斯巴甜所产生热量。
本发明中,已制作小分子肽球,基本无色或半透明白色,可根据所需要求加入食用色素调色。
本发明中,已制作小分子肽球,已有甜度,可根据所需求,加入香味剂调香。

Claims (4)
1.一种小分子肽球,其特征在于,包括按照质量比包括以下原料:
木薯粉为:50%-52%,阿巴斯甜为:1%-1.7%,维生素C为:3%-7%,鱼胶原小分子蛋白肽为:10%-15%,食用色素为:0.3%-0.5%,香味剂为:0.1%-0.3%,木糖醇为1%-1.7%,余量为水。
2.根据权利要求1所述的小分子肽球的其制备方法,其特征在于,包括以下制备步骤:
S1:准备原料;将阿巴斯甜粉放入容器内,放入水,加热至煮沸;
S2:煮沸之后,倒入木薯粉、维生素C,并混合均匀,反复搅拌成面糊形状,得到糊状物A;
S3:将糊状物A放置桌台,静置常温后,依次切成块,得到块状物面团B;
S4:将块状物面团B揉成圆球状,再在圆球上面撒上木薯粉,得到圆球物C;
S5:将圆球物C放入加热容器中,并反复的搅拌,避免圆球物C粘粘加热容器,至圆球物C全部浮在液面上后,继续加盖焖至15分钟,得到球状物料D;
S6:将球状物料D捞出,用常温水冲洗数次,洗掉浓稠的汤液并降低温度;
S8:温度降低至35℃时,加入深海鱼小分子蛋白肽粉、粉末状的木糖醇,并轻微搅拌;深海鱼小分子蛋白肽粉的分子量为1000道尔顿;
S9:继续温度降至35℃以下,得到球状物料E;将球状物料E外表均匀粘连小分子蛋白肽粉剂和木糖醇粉剂,得到成品。
3.根据权利要求2所述的小分子肽球的制备方法,其特征在于,在成品加入食用色素调色。
4.根据权利要求2所述的小分子肽球的制备方法,其特征在于,在成品中加入香味剂调香。
