本发明涉及食品领域,尤其涉及一种猴头菇芡实燕窝粥及其制备方法。
背景技术
中医记载燕窝味甘淡平,具有大养肺阴,化痰止嗽,补而能清的作用,自明代起民间便有食用燕窝的记录;糯米有补虚、补血、健脾暖胃、止汗等作用;猴头菇在中国既是食用珍品,又是重要的药用菌。猴头菇是中国八大“山珍”之一,自古就有“山珍猴头,海味燕窝”之说,与熊掌、海参和鲨鱼翅并列为四大名菜,肉嫩味香,鲜美可口,营养丰富,色、香、味上乘。另外,猴头菇也是中国传统的贵重中药材,具有滋补健身、助消化、利五脏的功能。现代研究表明,其含有多肽、多糖、脂肪和蛋白质等活性成分,对消化道肿瘤、胃溃疡和十二指肠溃疡、胃炎、腹胀等有一定疗效。芡实,中药名。为睡莲科植物芡Euryale ferox Salisb.的干燥成熟种仁。分布于从黑龙江至云南、广东等地。具有益肾固精,补脾止泻,除湿止带之功效。常用于遗精滑精,遗尿尿频,脾虚久泻,白浊,带下。
粥是人们所喜爱的食品,人们在许多情况下将喝粥与保健联系在一起,喝粥能够防病养生,成了人们的共识。粥类食品种类繁多,而燕窝粥有健脾润肺,润肤养颜的功效,燕窝粥既可作补养容颜之常用食品,又可作滋润肺燥的辅助治疗食品。目前尚无猴头菇芡实燕窝粥的报导。
发明内容
本发明的目的在于克服现有技术的不足,提供一种猴头菇芡实燕窝粥及其制备方法。本发明将养胃健脾的猴头菇和性质温平的燕窝放在一起制备成猴头菇芡实燕窝粥,能够非常有效的帮助我们治疗一些胃部的疾病。
为实现上述目的,本发明采取的技术方案为:提供一种猴头菇芡实燕窝粥,包括以下重量份原料:燕窝、山药丁、白糯米、猴头菇粉、薏米、白芡实和冰糖。
本发明猴头菇芡实燕窝粥所采用的原料中,燕窝中的氨基酸种类丰富,富含苯丙氨酸、缬氨酸、亮氨酸、酪氨酸和精氨酸等。燕窝中的水解氨基酸含量达42.272%,且必需氨基酸含量占氨基酸总量的42%;同时,呈鲜味特征的氨基酸(天门冬氨酸和谷氨酸)和呈芳香味特征的氨基酸(酪氨酸和苯丙氨酸)含量较高,表明燕窝的味道鲜美。食物营养价值的优劣主要取决于所含氨基酸的种类、数量和比例。联合国粮农组织和世界卫生组织提出了食品中必需氨基酸参考模式谱,规定了人体必需氨基酸占总氨基酸的质量比以及必需氨基酸与非必需氨基酸的质量比分别为40%和60%。燕窝中的蛋白质含量较高,但与其品种关系紧密。试验选用的马来西亚金丝燕燕窝,其含量达50.26%。唾液酸又称燕窝酸,是燕窝主要的生物活性成分,在燕窝中主要以N-乙酰神经氨酸形式存在。据报道,一般燕窝的唾液酸含量可达7%以上,这也是初步鉴定真假燕窝的手段。
本发明猴头菇芡实燕窝粥所采用的原料中,猴头菇具有以下药用价值:(1)抗炎和抗溃疡:猴头菇提取物可治疗胃黏膜损伤、慢性萎缩性胃炎,而且能显著提高幽门螺旋杆菌根除率及溃疡愈合率;(2)抗肿瘤:抗肿瘤中猴头菇的子实体提取物及菌丝体提取物发挥着重要的作用;(3)降血糖:猴头菇菌丝体提取物能够对抗四氧嘧啶引起的高血糖,其作用机理可能是猴头菇多糖与细胞膜上的特定受体结合,通过环磷酸腺苷将信息传至线粒体,提高糖代谢酶系的活性,从而使糖的氧化分解加快,达到降低血糖的目的。(4)抗氧化和抗衰老:猴头菇子实体的水提物和醇提物都有清除自由基的能力,豆腐乳清中的猴头菇菌丝体的三部分内切多糖,评估其潜在的抗氧化和保肝作用,结果表明他们在不同的体系中有不同的活性,而且在体外和体内表现出很强的抗氧化和保肝作用。
本发明猴头菇芡实燕窝粥所采用的原料中,芡实别名:鸡头米、卵菱、鸡瘫、鸡头实、雁喙实、鸡头、雁头、乌头、鸿头、水流黄、水鸡头、刺莲蓬实、刀芡实、鸡头果、苏黄、黄实。芡实,具有益肾固精,补脾止泻,除湿止带之功效。常用于遗精滑精,遗尿尿频,脾虚久泻,白浊,带下。
作为本发明所述猴头菇芡实燕窝粥的优选实施方式,所述燕窝为燕窝粥专用燕窝。
作为本发明所述猴头菇芡实燕窝粥的优选实施方式,所述山药丁不能全部是碎丁。
作为本发明所述猴头菇芡实燕窝粥的优选实施方式,包括以下重量份原料:燕窝0.2~0.8份、山药丁0.5~4份、白糯米16~20份、猴头菇粉0.2~0.8份、薏米8~12份、白芡实3~7份和冰糖4~8%。
作为本发明所述猴头菇芡实燕窝粥的优选实施方式,包括以下重量份原料:燕窝0.4~0.6份、山药丁1~3份、白糯米17~19份、猴头菇粉0.4~0.6份、薏米9~11份、白芡实4~6份和冰糖5~6%。
作为本发明所述猴头菇芡实燕窝粥的优选实施方式,包括以下重量份原料:燕窝0.5份、山药丁2份、白糯米18份、猴头菇粉0.5份、薏米10份、白芡实5份和冰糖5.5%。
本发明同时提供所述的猴头菇芡实燕窝粥的制备方法,所述制备方法具体包括以下步骤:把准备好的山药丁、白糯米、猴头菇粉、薏米、白芡实放入锅内,加水,用武火烧沸,加入燕窝,文火炖煮l小时,加入冰糖融化即成。
作为本发明所述猴头菇芡实燕窝粥的制备方法的优选实施方式,所述原料包括以下准备事项:将燕窝放入温水中浸泡至松软后,洗净沥干,撕成细条;山药去皮切丁;白糯米、薏米和白芡实淘洗干净;冰糖打碎。
本发明同时提供所述的猴头菇芡实燕窝粥在制备养胃食品中的应用。
本发明还提供所述的猴头菇芡实燕窝粥在制备降低血脂和血液中的胆固醇含量的食品中的应用。
本发明的有益效果:
(1)本发明的猴头菇芡实燕窝粥能够帮助我们延缓衰老,也能让身体变得更加年轻的功效和作用非常的明显。而且猴头菇还具有治疗我们一些神经衰弱的功效,对于辅助治疗失眠具有非常有效的效果。
(2)本发明的猴头菇芡实燕窝粥中猴头菇和燕窝都具有非常好的健脾养胃的功效,且现代的相关的医学有相关的研究发现,猴头菇芡实燕窝粥能够非常有效的帮助我们治疗一些胃部的疾病。有相关研究发现,对于那些经常吃猴头菇的人来说,他们身体的免疫能力非常的高。而且燕窝中的唾液酸和集落刺激因子也有增强免疫力的功效。所以经常吃猴头菇芡实燕窝粥,能够帮助我们非常有效的提高身体的抵抗能力。
(3)本发明的猴头菇芡实燕窝粥中含有能够帮助人们降低血脂和血液中的胆固醇含量的不饱和脂肪酸,对于我们体内的血液循环也具有非常多的好处,对于那些患有心脑血管疾病的人来说,可以多吃一些猴头菇芡实燕窝粥。由于猴头菇芡实燕窝粥中含有一些多糖类的物质和燕窝酸,这些物质能够有效的抑制癌细胞在体内的生长发育,而且还能够防止体内细胞出现病变的现象,所以猴头菇芡实燕窝粥具有非常好的防癌抗癌的功效和作用。

为更清楚地表述本发明的技术方案,下面结合具体实施例进一步说明,但不能用于限制本发明,此仅是本发明的部分实施例。
实施例1
本实施例提供一种猴头菇芡实燕窝粥,包括以下重量份原料:燕窝0.2份、山药丁4份、白糯米16份、猴头菇粉0.8份、薏米12份、白芡实3份和冰糖8%。
实施例2
本实施例提供一种猴头菇芡实燕窝粥,包括以下重量份原料:燕窝0.8份、山药丁0.5份、白糯米20份、猴头菇粉0.2份、薏米8份、白芡实7份和冰糖4%。
实施例3
本实施例提供一种猴头菇芡实燕窝粥,包括以下重量份原料:燕窝0.5份、山药丁2份、白糯米18份、猴头菇粉0.5份、薏米10份、白芡实5份和冰糖5.5%。
实施例4
本实施例提供一种猴头菇芡实燕窝粥的制备方法,具体包括以下步骤:
(1)将燕窝放入温水中浸泡至松软后,洗净沥干,撕成细条;山药去皮切丁;白糯米、薏米和白芡实淘洗干净;冰糖打碎;
(2)把准备好的山药丁、白糯米、猴头菇粉、薏米、白芡实放入锅内,加水,用武火烧沸,加入燕窝,文火炖煮l小时,加入冰糖使溶即成。
采用的燕窝优选为燕窝粥专用燕窝,山药丁不能全部是碎丁。中医以冰糖具有润肺、止咳、清痰和去火的作用,也是泡制药酒、炖煮补品的辅料,所以如果想要吃甜燕窝的话最好以冰糖进行调配,不要用白砂糖和红糖。
最后所应当说明的是,以上实施例仅用以说明本发明的技术方案而非对本发明保护范围的限制,尽管参照较佳实施例对本发明作了详细说明,本领域的普通技术人员应当理解,可以对本发明的技术方案进行修改或者等同替换,而不脱离本发明技术方案的实质和范围。

1.一种猴头菇芡实燕窝粥,其特征在于,包括以下重量份原料:燕窝、山药丁、白糯米、猴头菇粉、薏米、白芡实和冰糖。
2.根据权利要求1所述的猴头菇芡实燕窝粥,其特征在于,所述燕窝为燕窝粥专用燕窝。
3.根据权利要求1所述的猴头菇芡实燕窝粥,其特征在于,所述山药丁不能全部是碎丁。
4.根据权利要求1所述的猴头菇芡实燕窝粥,其特征在于,包括以下重量份原料:燕窝0.2~0.8份、山药丁0.5~4份、白糯米16~20份、猴头菇粉0.2~0.8份、薏米8~12份、白芡实3~7份和冰糖4~8%。
5.根据权利要求4所述的猴头菇芡实燕窝粥,其特征在于,包括以下重量份原料:燕窝0.4~0.6份、山药丁1~3份、白糯米17~19份、猴头菇粉0.4~0.6份、薏米9~11份、白芡实4~6份和冰糖5~6%。
6.根据权利要求5所述的猴头菇芡实燕窝粥,其特征在于,包括以下重量份原料:燕窝0.5份、山药丁2份、白糯米18份、猴头菇粉0.5份、薏米10份、白芡实5份和冰糖5.5%。
7.权利要求1-6任一所述的猴头菇芡实燕窝粥的制备方法,其特征在于,具体包括以下步骤:把准备好的山药丁、白糯米、猴头菇粉、薏米、白芡实放入锅内,加水,用武火烧沸,加入燕窝,文火炖煮l小时,加入冰糖融化即成。
8.根据权利要求7所述的制备方法,其特征在于,所述原料包括以下准备事项:将燕窝放入温水中浸泡至松软后,洗净沥干,撕成细条;山药去皮切丁;白糯米、薏米和白芡实淘洗干净;冰糖打碎。
9.权利要求1-6任一所述的猴头菇芡实燕窝粥在制备养胃食品中的应用。
