技术领域:
本发明涉及减脂塑身食品技术领域,尤其涉及一种减脂塑身纯素蛋白奶昔饮料及其制备方法。
背景技术:
当人体进食的能量大于其消耗量,过剩的能量就会以脂肪的形式储存在人体中,使体内脂肪细胞数量增多,体积增大,造成肥胖症。常用体重指数(BMI)判断超重及肥胖的程度,按照中国的标准,体重指数24.0-27.9为超重,≥28.0为肥胖。
肥胖不仅影响着人体形态,对人们的身体健康也有着较大影响,研究表明,肥胖人群冠心病、高血压、高胆固醇血症、糖尿病等患病率均高出体重正常人群,此外女性肥胖患者患乳腺癌、子宫癌和宫颈癌的危险性比正常体重人群增加3倍,男性患者患结肠癌、前列腺癌的危险性也明显增加。
控制体重对保持身体健康有着重要意义,合理的饮食是所有减肥方法的基础,在保证营养素平衡的基础上减少每日总热能的摄入,使得摄入的能量小于机体消耗量,通过消耗身体中的一部分脂肪来供能,可以起到减脂目的。目前代餐食品发展较为广泛,为减脂人群节约时间和精力,深受大众喜爱。但现有的代餐奶昔对人们的减肥效果不是特别理想,饱腹感不强,容易产生饥饿感,易造成暴饮暴食,影响减脂效果;且过分追求低卡,营养搭配不均衡,无法满足人体对于营养的需求,长期服用无法代替正常饮食。此外,现有的代餐奶昔常使用全脂乳粉,不适宜乳糖不耐及素食主义者食用。因此,发明一个具有减脂塑身作用且饱腹感强、且营养搭配均衡的纯素蛋白奶昔固体饮料具有较为重要的意义。

本发明的目的在于提供一种减脂塑身纯素蛋白奶昔饮料及其制备方法,从而克服上述现有技术中的缺陷。
实现上述目的,本发明提供了一种减脂塑身纯素蛋白奶昔饮料,包括以下重量百分比原料:谷物杂粮粉30-40%、榛果粉15-25%、燕麦膳食纤维粉5-15%、香蕉粉6-12%、植物蛋白10-20%、赤藓糖醇4-12%、白芸豆提取物2-8%、马铃薯提取物0.1-1%、栗子皮提取物0.1-1%、绿茶粉0.1-1%、EGCG表没食子儿茶素没食子酸酯0.1-1%、复合维生素0.01-0.1%、复合矿物质1-5%。

所述谷物杂粮粉选用黑豆粉、黄豆粉、麦麸粉、薏米粉、小米粉、燕麦粉、葛根粉、核桃粉、白芝麻粉其中的两种或两种以上混合物。
所述植物蛋白选用大豆分离蛋白、豌豆蛋白、小麦蛋白、大米蛋白其中的两种或两种以上混合物。
所述复合维生素选用维生素A、维生素B1、维生素B2和维生素B6其中的两种或两种以上混合物。
所述复合矿物质选用乳酸钙、乳酸锌、乳酸亚铁、硫酸镁其中的两种或两种以上混合物。
一种减脂塑身纯素蛋白奶昔饮料的制备方法,包括以下步骤:
(1)将原料分别过20-40目筛后备用;
(2)将过筛后的原料按等量递增法分5-6次混合均匀,直至混合物料中无肉眼可见杂质、抱团等异常情况,混合均匀后再次过20目筛备用;
(3)步骤(2)的混合物料经金属探测仪探测后分装成25g/袋的小包装即可,其中金属探测仪铁Fe<Ф1.2mm,不锈钢SUS<Ф1.2mm。
所述步骤(1)-(3)均在D级洁净生产区、环境温度18-25℃、相对湿度RH≤50%的条件下进行。
所述步骤(2)混料时在混合机进行混料,其中混合频率为10-20r/min,混合时间为25-35min。
具体的,原料中白芸豆提取物:是Pharmchem公司以非转基因北美白芸豆为原料,利用水萃取技术提取到的全天然、非刺激的碳水化合物阻断剂。可阻断淀粉分解,减少热量吸收,降低升糖指数,从而减少淀粉-糖-脂肪的转化。FDA认证,食用白芸豆提取物,搭配合理的饮食与适度的运动,有助于体重管理,且可降低膳食中淀粉的消化和吸收。
马铃薯提取物:是一种从马铃薯中提取的蛋白质,含有蛋白酶抑制剂(Proteinase Inhibitor 2,PI2),具有控制体重的效果。作为一种蛋白酶抑制剂,PI2能够有效地促进胆囊收缩素(Cholecystokinin,CCK)的释放,释放出的CCK能降低能量的摄取并且诱发饱足感产生。
栗子皮提取物:研究表明,栗子皮提取物可有效抑制淀粉酶与葡萄糖苷酶活性,从而抑制食物中淀粉水解为葡萄糖,避免血糖大幅度升高,进而转化为脂肪堆积。栗子皮抑制淀粉酶能力比同质性原料佳;抑制糖类吸收能力与小麦胚芽乳相当,较番石榴叶佳。
绿茶粉:由不含咖啡因的标准绿茶提取物和大豆磷脂配制而成,主要活性成分为一类含黄烷三醇结构的化合物,一般将其定义为绿茶儿茶素。临床试验结果表明,每日服用300mg,可显著降低目标人群体重、体重指数、腰围、总胆固醇、极限血糖和总甘油三酯等参数。
EGCG表皮没食子儿茶素没食子酸酯:EGCG是茶多酚的主要组成成分,是从茶叶中分离得到的儿茶素类单体,具有抗菌、抗病毒、抗氧化、抗动脉硬化、抗血栓形成、抗血管增生、抗炎及抗肿瘤的作用。
与现有技术相比,本发明的一个方面具有如下有益效果:
(1)本发明原料中以植物奶取代传统乳粉,适合乳糖不耐及素食主义人群服用;多种谷物杂粮,五谷醇香、营养丰富,可避免饮食单一易造成营养不良的问题;多种植物提取物,可有效抑制体内蛋白酶、淀粉酶活性从而诱发饱腹感,避免快速饥饿,长期服用既可保证营养全面,又能有效控制体重,起到减脂塑身作用;
(2)本发明原料中各种物料配比进行了优化,既能起到减脂塑身效果,又能保证营养全面,同时还不失口感;
(3)本发明制备时经过多道过筛处理,更细腻均匀,小包装设计更便于携带食用。

所述步骤(1)-(3)均在D级洁净生产区、环境温度25℃、相对湿度RH≤50%的条件下进行。
所述步骤(2)混料时在混合机进行混料,其中混合频率为15r/min,混合时间为30min。
对采用以上原料及制备方法制成的减脂塑身纯素蛋白奶昔饮料进行减脂效果检测,具体检测方法及检测效果如下:
1、试验对象:
随机选取单纯性肥胖人群100名,即成人BMI≥28,或总脂肪百分率达到男>25%,女>30%的自愿受试者,年龄段在25-35周岁。
受试者排除标准:
排除合并有心、肝、肾和造血系统等严重疾病,精神病患者;
排除短期内服用与受试功能有关的物品,影响到对结果的判断者;
排除未按规定食用受试样品,无法判定功效或资料不全影响功效或安全性判断者。
最终根据排除标准筛选出77名试验对象,其中男性33名,女性44名。
2、试验方法:
受试者连续服用本发明制备的减脂塑身纯素蛋白奶昔饮料35天,取代每天早晚2餐主食,一餐使用一包25g制品冲调150ml温水服用。剩余一餐自由选择时间,其余饮食清淡7分饱,多补充蔬菜水果,少吃精米。各试验指标第0、7、21、35d测定一回,每次平行测试3次,取平均值。

(2)、腰围(WC):
腰围是反映脂肪总量和脂肪分布结构的综合指标,腰围较腰臀比更简单可靠,目前更倾向于用腰围代替腰臀比预测中央性脂肪含量;
具体测量方法如下:被测者站立位,两脚分开25-30cm,体重均匀分配,测量位置在水平位髂前上棘和第12肋下缘连线的中点,测量者坐在被测者的一旁,将软尺紧贴软组织,但不能压迫,测量值精确到0.1cm;
(4)、体脂肪率(%):
体脂肪率是指体内脂肪总量占体重百分率;
具体测量方法如下:采用皮卡钳法,在4个测定位点进行测试,具体4个位点为:A点,右三角肌下缘臂外侧正中点;B点,右肩胛下角;C点,右脐旁3cm;D点右髂前上棘。
4、试验结果:
(1)受试者连续服用本发明制备的减脂塑身纯素蛋白奶昔饮料35天内体重变化如附图1所示;
(2)受试者连续服用本发明制备的减脂塑身纯素蛋白奶昔饮料35天内体重指数(BMI)变化如附图2所示;
(3)受试者连续服用本发明制备的减脂塑身纯素蛋白奶昔饮料35天内腰围(WC)变化如附图3所示;
(4)受试者连续服用本发明制备的减脂塑身纯素蛋白奶昔饮料35天内体脂率变化如附图4所示。
从上述试验及结果看,连续服用本发明制备的减脂塑身纯素蛋白奶昔饮料代餐35天后,单纯性肥胖者中,男性体重平均下降4.37kg,女性体重平均下降3.28kg;男性BMI平均下降2.04kg/m2,女性BMI平均下降2.07kg/m2;男性腰围平均缩小5.5cm,女性腰围平均缩小2.5cm;男性体脂率平均下降2.43%,女性体脂率平均下降1.68%。此外食用本发明食品的77人均未出现恶心、呕吐、心律失常、惊厥等电解质失衡的临床表现,且运动耐力不下降,情绪、工作能力不受影响。本试验排除了运动对减肥功能作用的影响,因此可判定该受试样品具有减肥功能作用,且营养均衡。
