Abstract
本发明公开了一种降血压牛乳配方奶粉及其制备方法,在原料鲜牛乳中,通过按照重量份额称取添加酪蛋白酶解物、紫薯提取物花青素、β环糊精、大豆磷脂等营养物质,满足高血压人群对降血压的需求,同时补充生长代谢所需的营养,并消除了多肽的苦味,使奶粉更能被人接受。

技术领域
本发明涉及乳制品加工技术领域,更具体的说是涉及一种降血压牛乳配方奶粉及其制备方法。
背景技术
高血压是目前最常见的慢性病,也是心脑血管病最主要的危险因素,容易导致中风、冠心病等疾病。其具有患病率高、致残率高、死亡率高的特点。根据最新统计,我国目前高血压患病人口已达2.7亿,每年新增患者约600万。
但是,人们应用降压药需十分谨慎,不能随便用药。因为有些降压药物可能会产生毒副作用。同时对于有轻微高血压的患者使用降压药物也是不太适宜的。采用食物治疗的方法成了一个新的热点,但目前市面上已有的预防高血压的产品多效果不明显。
因此,如何提供一种可以预防并能降低高血压牛乳配方奶粉及其制备方法是本领域技术人员亟需解决的问题。
发明内容
有鉴于此,本发明提供了一种供成年人食用,食用后可以预防并且降低高血压的牛乳配方奶粉及其制备方法,与现有的降血压奶粉相比,效果显著,生产方便,工艺先进。
为了实现上述目的,本发明采用如下技术方案:
一种降血压牛乳配方奶粉,基于每100重量份的奶粉,包括以下重量份原料:
鲜牛乳600~700份、酪蛋白酶解物0.2~0.4份、紫薯提取物花青素0.1~0.2份、β环糊精0.4~1份、大豆磷脂0.1~0.3份、钙0.5~0.6份、钠0.45~0.5份、低聚果糖0.5~1份、低聚麦芽糖0.5~1份。
优选的,上述原料还包括营养学上可接受量的维生素和微量元素。
优选的,基于每100重量份的奶粉,还包括:维生素A0.0005~0.001份、维生素D0.000005~0.00001份、维生素E0.01~0.015份、维生素B20.0005~0.0008份、维生素B120.0008~0.001份、维生素C0.05~0.01份、镁0.03~0.04份、铁0.007~0.008份、锌0.0035~0.004份。
一种降血压牛乳配方奶粉的制备方法,具体包括:
(1)称取原料:称取上述原料,备用;
(2)过滤:采用300目过滤网过滤原料乳,除去牛乳中的机械杂质,上皮细胞和白血球;
(3)脱脂:对过滤后的牛乳进行脱脂,使脱脂后稀奶油与脱脂乳的质量比为1:9即可,因为孕妇不可食用过多脂肪,每100份的原料乳分离出含脂率0.05%的脱脂乳90.4份,含脂率为40%的稀奶油9.6份;
(4)配料:在脱脂乳中加入酪蛋白酶解物、紫薯提取物花青素、β环糊精、低聚果糖、低聚麦芽糖、钙、钠以及维生素和微量元素,得混料乳;
(5)均质及乳化:将混料乳进行均质,均质温度40~45℃,均质压力15~20Mpa,在4000r/min下乳化15~20min;
(6)灭菌:在85~95℃保持10~25s;
(7)浓缩:真空浓缩至混料乳体积的23~27%,奶中固形物质量分数在30~40%;
(8)喷雾干燥:在干燥塔内进行高压喷雾干燥,其进风温度设置为140~160℃,排风温度设置为70~80℃;再经流化床二次干燥,并经流化床冷却至28~32℃时将大豆磷脂加入,混合均匀并加热至63~67℃,在压缩空气作用下,大豆磷脂均匀分散到粉表面,即得成品奶粉;
(9)晾粉:将成品奶粉迅速降低至室温。
一种降血压牛乳配方奶粉在预防和抑制成年人高血压症状中的应用。
经由上述的技术方案可知,与现有技术相比,本发明具有如下有益效果:
1、本发明的降血压奶粉中,主要是利用酪蛋白酶解物中的丰富的降血压肽和紫薯提取物中丰富的花青素联合作用。降血压肽具有抑制血管紧张素I转化酶(Angiotensin I-converting Enzyme,ACE)活性,从而起到降血压的效果。因此被认为是一种天然的绝对安全的功能性降压佳品。而紫薯提取物富含的花青素具有护肝、抗高血压、抗高血糖、抗氧化、抗动脉粥样硬化、降血脂减肥等功能。所以联合使用这两种物质,可以起到抗高血压和改善心脏的功能。
而奶粉中添加活性肽后,容易产生苦味。苦味产生的原因是由于牛乳蛋白质中酪蛋白和乳清蛋白经生物酶解后产生的具有生物活性的短链多肽,它的苦味源于疏水性基团,疏水性基团被暴露与人的味蕾接触产生苦味。所以通过使用β环糊精对苦味肽进行包埋,使奶粉风味口感更易于让人接受。
2、本发明中添加的低聚果糖和低聚麦芽糖是一种水溶性的膳食纤维,对肠道益菌有增殖作用,可以促进营养的吸收,尤其是钙的吸收。
3、本发明中添加了大豆磷脂和钙、钠。选用大豆磷脂一方面可以增加营养,另一方面是在制备奶粉的喷雾干燥过程中使用,可以改善奶粉的冲调性能。钙、钠的添加则有利于保证成年人营养的需求。
4、本发明中还可进一步添加营养学上可接受量的维生素和微量元素,维生素是成年人维持正常的生理功能而必须从食物中获得的一类微量有机物质,在人体生长、代谢、发育过程中发挥着重要的作用。
本发明产品中的原料中各维生素和微量元素的量为营养学上的可接受量,即添加量小于营养学上推荐的最高量。
5、本发明中奶粉是鲜牛乳经脱脂、过滤、灭菌、浓缩、喷雾干燥制成的粉末,因经喷雾干燥处理,蛋白质凝块变得细小、柔软,相比于鲜奶其更易于消化和保藏。

下面对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1
一种降血压牛乳配方奶粉,基于每100g的奶粉,包括以下重量份原料:
鲜牛乳600g、酪蛋白酶解物0.2g、紫薯提取物花青素0.1g、β环糊精0.4g、大豆磷脂0.1g、钙0.5g、钠0.45g、低聚果糖0.5g、低聚麦芽糖0.5g。
进一步的,本发明中的降血压牛乳配方奶粉中还包括:维生素A0.0005g、维生素D0.000005g、维生素E0.01g、维生素B20.0005g、维生素B120.0008g、维生素C0.05g、镁0.03g、铁0.007g、锌0.0035g。
实施例2
一种降血压牛乳配方奶粉,基于每100g的奶粉,包括以下重量份原料:
鲜牛乳700g、酪蛋白酶解物0.4g、紫薯提取物花青素0.2g、β环糊精1g、大豆磷脂0.3g、钙0.6g、钠0.5g、低聚果糖1g、低聚麦芽糖1g。
进一步的,本发明中的降血压牛乳配方奶粉中还包括:维生素A0.001g、维生素D0.00001g、维生素E0.015g、维生素B20.0008g、维生素B120.001g、维生素C0.01g、镁0.04g、铁0.008g、锌0.004g。
实施例3
一种降血压牛乳配方奶粉,基于每100重量份的奶粉,包括以下重量份原料:
鲜牛乳650g、酪蛋白酶解物0.3g、紫薯提取物花青素0.15g、β环糊精0.7g、大豆磷脂0.2g、钙0.55g、钠0.47g、低聚果糖0.5g、低聚麦芽糖1g。
进一步的,本发明中的降血压牛乳配方奶粉中还包括:维生素A0.00075g、维生素D0.0000075g、维生素E0.012g、维生素B20.0006g、维生素B120.0009g、维生素C0.055g、镁0.035g、铁0.0075g、锌0.0037g。
实施例4
一种降血压牛乳配方奶粉的制备方法
(1)称取原料:称取上述实施例1-3中的各原料备用,其中,鲜牛乳按国家标准GB19301-2010进行检验,即要求蛋白质质量分数≥2.8%,非脂乳固体质量分数≥8.1%,脂肪的质量分数≥3.1%,酸度12~18°T,杂质度≤4mg/kg,各项指标检验合格后才可收购;
(2)过滤:采用300目过滤网过滤,保留过滤后的乳,运输保藏需在0~4℃内;
(3)脱脂:采用乳脂分离机将过滤后的乳进行脱脂,使脱脂后稀奶油与脱脂乳的质量比约为1:9即可;
(4)配料:开动高速搅拌器,将酪蛋白酶解物、紫薯提取物花青素、β环糊精、低聚果糖、低聚麦芽糖按顺序和比例缓缓倒入混料缸内,与脱脂乳充分混合,再将维生素、微量元素等提前用纯净水溶好,液体打入缸内,充分混合;
(5)均质及乳化:将混料乳经均质机进行均质,均质温度40℃,均质压力15Mpa,混合加热同时乳化,在4000r/min下乳化15min;
(6)灭菌:高温灭菌,在85℃下灭菌25s;
(7)浓缩:真空浓缩,在浓缩过程中,间断性的从回流口取样,用波美计测量料液浓度,待料液浓度达到30%时,浓缩至混料乳体积的23%,然后将浓缩后的浓奶用高压泵打入干燥塔进行喷雾干燥;
(8)喷雾干燥:在干燥塔内进行高压喷雾干燥,进风温度设置为140℃,排风温度设置为70℃,从干燥塔出来的粉再经流化床(一级)二次干燥后,经流化床(二级)冷却到30℃,此时将大豆磷脂混合后并加热到65℃,在压缩空气作用下,均匀分散到粉表面,使颗粒附聚增加其颗粒度和速溶性;
(9)晾粉:喷雾结束后将成品粉迅速降低到室温,防止出现脂肪游离和堆积,保证品质。
实施例5
一种降血压牛乳配方奶粉的制备方法
(1)称取原料:称取上述实施例1-3中的各原料备用,其中,鲜牛乳按国家标准GB19301-2010进行检验,即要求蛋白质质量分数≥2.8%,非脂乳固体质量分数≥8.1%,脂肪的质量分数≥3.1%,酸度12~18°T,杂质度≤4mg/kg,各项指标检验合格后才可收购;
(2)过滤:采用300目过滤网过滤,保留过滤后的乳,运输保藏需在0~4℃内;
(3)脱脂:采用乳脂分离机将过滤后的乳进行脱脂,使脱脂后稀奶油与脱脂乳的质量比约为1:9即可;
(4)配料:开动高速搅拌器,将酪蛋白酶解物、紫薯提取物花青素、β环糊精、低聚果糖、低聚麦芽糖按顺序和比例缓缓倒入混料缸内,与脱脂乳充分混合,再将维生素、微量元素等提前用纯净水溶好,液体打入缸内,充分混合;
(5)均质及乳化:将混料乳经均质机进行均质,均质温度45℃,均质压力20Mpa,混合加热同时乳化,在4000r/min下乳化20min;
(6)灭菌:高温灭菌,在95℃下灭菌10s;
(7)浓缩:真空浓缩,在浓缩过程中,间断性的从回流口取样,用波美计测量料液浓度,待料液浓度达到40%时,浓缩至混料乳体积的27%,然后将浓缩后的浓奶用高压泵打入干燥塔进行喷雾干燥;
(8)喷雾干燥:在干燥塔内进行高压喷雾干燥,进风温度设置为160℃,排风温度设置为80℃,从干燥塔出来的粉再经流化床(一级)二次干燥后,经流化床(二级)冷却到32℃,此时将大豆磷脂混合后并加热到67℃,在压缩空气作用下,均匀分散到粉表面,使颗粒附聚增加其颗粒度和速溶性;
(9)晾粉:喷雾结束后将成品粉迅速降低到室温,防止出现脂肪游离和堆积,保证品质。
实施例6
一种降血压牛乳配方奶粉的制备方法
(1)称取原料:称取上述实施例1-3中的各原料备用,其中,鲜牛乳按国家标准GB19301-2010进行检验,即要求蛋白质质量分数≥2.8%,非脂乳固体质量分数≥8.1%,脂肪的质量分数≥3.1%,酸度12~18°T,杂质度≤4mg/kg,各项指标检验合格后才可收购;

(3)脱脂:采用乳脂分离机将过滤后的乳进行脱脂,使脱脂后稀奶油与脱脂乳的质量比约为1:9即可;
(4)配料:开动高速搅拌器,将酪蛋白酶解物、紫薯提取物花青素、β环糊精、低聚果糖、低聚麦芽糖按顺序和比例缓缓倒入混料缸内,与脱脂乳充分混合,再将维生素、微量元素等提前用纯净水溶好,液体打入缸内,充分混合;
(5)均质及乳化:将混料乳经均质机进行均质,均质温度43℃,均质压力17Mpa,混合加热同时乳化,在4000r/min下乳化17min;
(6)灭菌:高温灭菌,在90℃灭菌15s;
(7)浓缩:真空浓缩,在浓缩过程中,间断性的从回流口取样,用波美计测量料液浓度,待料液浓度达到35%时,浓缩至混料乳体积的25%,然后将浓缩后的浓奶用高压泵打入干燥塔进行喷雾干燥;
(8)喷雾干燥:在干燥塔内进行高压喷雾干燥,进风温度设置为150℃,排风温度设置为75℃,从干燥塔出来的粉再经流化床(一级)二次干燥后,经流化床(二级)冷却到30℃,此时将大豆磷脂混合后并加热到65℃,在压缩空气作用下,均匀分散到粉表面,使颗粒附聚增加其颗粒度和速溶性;
(9)晾粉:喷雾干燥结束后将成品粉迅速降低到室温,防止出现脂肪游离和堆积,保证品质。
实施例7
本发明中所制备的降血压牛乳配方奶粉的使用方法:
包装形式:900g/罐;
保质期:2年;
使用说明:每天2杯,取6勺约56g加入250ml的50℃温水调制,可以少量多次,可以喝3~4杯,可以冲调浓度增加至2倍,可自行加糖或加冰块,搅拌均匀即可饮用。
实施例8
目前测产品的降血压效果,主要是测产品的ACE抑制活性。ACE抑制活性检测主要包括体外检测和体内检测(动物降血压试验)。体外检测模型简单,快速、准确,重复性高,在初期的研究和工艺筛选过程中,往往使用体外检测。
通过加入血管紧张素Ⅰ的模拟底物,在一定条件下与ACE作用,产生具有特异吸收特性的物质。通过检测加入产品前后这种物质吸收特性的差异,计算产品的ACE抑制率。
实验通过用ACE将FAPGG水解成FAP和GG,通过酶标仪测定FAPGG在340nm处吸光值计算ACE的活性,进而根据添加降血压牛乳配方奶粉产品前后ACE酶活的变化反映其抑制活性。
降血压牛乳配方奶粉生产前,原料中酪蛋白酶解物配置成4mg/ml的溶液,测出其ACE抑制率为54.22~59.91%,接近实验室最佳反应条件下酪蛋白多酶水解的ACE抑制率。紫薯提取物花青素清除DPPH自由基能力在34.2~34.5%,接近维生素C。可见初始原料即具有较高的降血压能力和抗氧化活性。
按照实施例1-6生产出的降血压牛乳配方奶粉,56g溶于250ml温水,即配置成约0.2g/ml的奶粉溶液,经检测其ACE抑制率为33.6~34.5%,清除DPPH自由基能力在9.6~10.7%,具有有效的降血压能力和抗氧化活性。
本说明书中各个实施例采用递进的方式描述,每个实施例重点说明的都是与其他实施例的不同之处,各个实施例之间相同相似部分互相参见即可。对于实施例公开的装置而言,由于其与实施例公开的方法相对应,所以描述的比较简单,相关之处参见方法部分说明即可。

Claims (5)
1.一种降血压牛乳配方奶粉,其特征在于,基于每100重量份的奶粉,包括以下重量份原料:
鲜牛乳600~700份、酪蛋白酶解物0.2~0.4份、紫薯提取物花青素0.1~0.2份、β环糊精0.4~1份、大豆磷脂0.1~0.3份、钙0.5~0.6份、钠0.45~0.5份、低聚果糖0.5~1份、低聚麦芽糖0.5~1份。
2.根据权利要求1所述的一种降血压牛乳配方奶粉,其特征在于,所述原料还包括营养学上可接受量的维生素和微量元素。
3.根据权利要求1-2任一所述的一种降血压牛乳配方奶粉,其特征在于,基于每100重量份的奶粉,还包括:维生素A0.0005~0.001份、维生素D0.000005~0.00001份、维生素E0.01~0.015份、维生素B20.0005~0.0008份、维生素B120.0008~0.001份、维生素C0.05~0.01份、镁0.03~0.04份、铁0.007~0.008份、锌0.0035~0.004份。
4.一种降血压牛乳配方奶粉的制备方法,其特征在于,具体包括:
(1)称取原料:称取权利要求3所述原料,备用;
(2)过滤:采用300目过滤网过滤原料乳,除去牛乳中的机械杂质,上皮细胞和白血球;
(3)脱脂:对过滤后的牛乳进行脱脂,使脱脂后稀奶油与脱脂乳的质量比为1:9;
(4)配料:在脱脂乳中加入酪蛋白酶解物、紫薯提取物花青素、β环糊精、低聚果糖、低聚麦芽糖、钙、钠以及维生素和微量元素,得混料乳;
(5)均质及乳化:将混料乳进行均质,均质温度40~45℃,均质压力15~20Mpa,在4000r/min下乳化15~20min;
(6)灭菌:在85~95℃保持10~25s;
(7)浓缩:真空浓缩至混料乳体积的23~27%,奶中固形物质量分数在30~40%;
(8)喷雾干燥:在干燥塔内进行高压喷雾干燥,其进风温度设置为140~160℃,排风温度设置为70~80℃;再经一级流化床二次干燥,并经二级流化床冷却至28~32℃时将大豆磷脂加入,混合均匀并加热至63~67℃,在压缩空气作用下,大豆磷脂均匀分散到粉表面,即得成品奶粉;
(9)晾粉:将成品奶粉迅速降低至室温即可。
5.一种降血压牛乳配方奶粉的应用,其特征在于,如权利要求3所述的降血压牛乳配方奶粉在预防和抑制成年人高血压症状中的应用。
