本发明涉及一种黄精复合保健饮料,属于保健饮料制备技术领域。
背景技术
黄精,最初载于《雷公炮炙论》,之后历代医药学典籍中都对其有记录,《名医别录》列为上品。黄精的药用历史悠长,距今已有两千多年,是我国著名的食疗补益的中药材。根据现代医学技术对黄精药理作用的研究进展,发现黄精的具有多种药理功效,可开发利用且途径广泛,特别是作为保健食品的开发利用;如黄精饮料,黄精具有良好加工适应性,天然的甜味、香气、色素可构成饮料的良好感官品质,丰富的多糖和粘液质含量可为饮料的稳定性做出巨大贡献。
滇黄精(Polygonatum kingianum Coll.et Hemsl.)是常用滋补中药,为云南地道药材品种,系百合科黄精属多年生草本植物,干燥根茎入药。滇黄精、黄精和多花黄精这三种黄精原生药均为《中华人民共和国药典》(2015年版)黄精项下收录品种。为我国传统大宗药材,具有滋阴润肺,补脾益气的功效。其作为食疗补益的中药材有悠长的使用历史,现代药理学研究成果表明其在抗衰老、调节免疫力、调血脂、改善记忆力、抗肿瘤、抗菌等方面显示出潜在的药用价值,为其记载的传统疗效提供了科学依据,经不断的深入研究,发现其开发利用途径广泛,特别是作为保健食品的开发;目前,对制作黄精中药材的保健饮料研究较少。
黄精性味甘甜,食用爽口。其肉质根状茎肥厚,含有大量淀粉、糖分、脂肪、蛋白质、胡萝卜素、维生素和多种其他营养成分,生食、炖服既能充饥,又有健身之用,可令人气力倍增、肌肉充盈、骨髓坚强,对身体十分有益。黄精根状茎形状有如山芋,山区老百姓常把它当作蔬菜食用;这样的食用方式很难得到推广,且药用价值不高,因此急需寻找一种方便大多数人群食用的黄精产品。
发明内容
本发明的目的在于提供一种黄精复合保健饮料,该饮料具有一定的保健作用并使其口感舒适,大众所能接受,为需要该保健作用的人群提供便利,所述饮料包含黄精提取液、枸杞提取液、苹果提取液、枸杞清提取液;其中,黄精提取液、枸杞提取液、苹果提取液、枸杞清提取液的质量比为5:2:5:10。
优选的,本发明所述黄精提取液的制备方法,具体包括以下步骤:
(1)复水浸提:挑选干黄精用打粉机研磨成粉,过2号筛,按料液比为1:25的比例将黄精粉末与水混合均匀,混合液静置1小时。
(2)回流浸提:连接好回流冷凝装置,把黄精粉末与水的混合液加热煮沸,保持微沸1小时。
(3)冷却过滤:待黄精液冷却至室温后,用滤布过滤,反复挤压至不出汁,即得黄精提取液。
优选的,本发明所述枸杞提取液和枸杞清提取液的制备方法,具体包括以下步骤:
(1)称取新鲜、无虫害、无霉变、无破损的枸杞饮片10g,洗净沥干备用,按料液比为1:3的比例将枸杞饮片置于水中,在90℃恒温水浴锅中复水浸提20min,让枸杞饮片充分复水;将复水好的枸杞捞出捣碎至枸杞中的籽全部裸露,枸杞皮破损成浆的状态。
(2)将捣碎好的枸杞放入步骤(1)中用于复水浸提的余液中,加入40mL无菌水搅匀,放入90℃恒温水浴锅中保温浸提10min;浸提液冷却至室温,将保温浸提好的枸杞汁液倒入滤布上进行过滤,反复挤压出汁,再用40mL无菌水冲洗滤渣挤压出汁,即得枸杞提取液;取上述滤渣用200mL无菌水冲洗,反复挤压出汁即得枸杞清提取液。
优选的,本发明所述苹果提取液的制备方法,具体包括以下步骤:
(1)将苹果洗净晾干,去皮,切苹果块,备用。
(2)取150mL,质量百分比浓度为25%的糖水和100g苹果块加热煮沸,沸腾即可;将煮好的苹果块和糖水倒入容器中迅速冷却,待冷却至室温后用榨汁机榨汁,将榨好的苹果汁液用2层滤布过滤,反复挤压至不出汁即得苹果提取液。
本发明的有益效果:
(1)本发明以食疗中药黄精,枸杞以及保健水果苹果为主要原料,采用适宜的提取方法,得到滇黄精提取液、枸杞提取液、枸杞清提取液和苹果提取液;用以上提取液制备出营养美味并具补肾益精、滋阴润燥等功效的黄精复合型保健饮料。
(2)本发明所述黄精复合保健饮料黄精香气突出,混合香气柔和,顺滑可口,甜酸比合适的弱香型滇黄精复合保健饮料;具有抗衰老、调节免疫力、调血脂、改善记忆力、抗肿瘤等作用,食品添加剂少,是劳累人群的营养加油站,是一种适合男女老少不同群体饮用的养生保健饮料。
(3)口感上,生黄精具麻味,(本身并没有毒,但在服用时会有麻麻的感觉)甚至会刺激喉咙,临床多蒸用;为避免黄精这一缺点,本发明一方面选用了枸杞,因其不含淀粉,而含有丰富的糖类及果胶,可使本发明在口感上让人感到柔和、顺滑可口;另一方面选用了同样含有果胶的苹果,且苹果自身的酸甜成分作为本发明的调味剂,从而避免加入不必要的添加剂。

具体实施方式
下面结合具体实施例本发明作进一步的详细说明,但本发明的保护范围并不限于所述内容。
本发明实施例以云南特有的滇黄精为原料配制黄精复合保健饮料。
实施例1
(1)滇黄精提取液的制备方法:
将挑选出的干滇黄精用打粉机研磨成粉,过2号筛,用称量纸称取6g滇黄精粉末;将6g滇黄精粉末置于250mL圆底烧瓶中加入150mL水,料液比1:25,用保鲜膜封瓶口皮筋扎紧,使滇黄精粉末与水的混合液静置1小时;连接好回流冷凝装置,使用前检查是否安装完全,电热套预热3min;把滇黄精粉末与水的混合液加热煮沸,温度不可太高以免爆沸,煮沸后保持微沸1小时;待滇黄精液冷却至室温后,用2层滤布过滤,反复挤压至不出汁,即得滇黄精提取液,滇黄精提取液制作工艺流程图如图1所示,滇黄精提取液如图2所示。
(2)枸杞提取液的制备方法:选用新鲜个大、无虫害、无霉变、无破损的枸杞饮片,称取10g洗净沥干备用;料液比1:3放入250mL,1号烧杯中,在90℃恒温水浴锅中复水浸提20min,期间适当搅拌,让枸杞饮片充分复水;将复水好的枸杞捞出放入小碗中用勺子捣碎至枸杞中黄色小粒的籽全部裸露,枸杞皮破损成浆的状态为宜;将捣碎好的枸杞放入用于复水浸提的留有余液的1号烧杯中,加入40mL无菌水搅匀,放入90℃恒温水浴锅中保温浸提10min;将1号烧杯拿出冷却至室温,将三层滤布置于2号烧杯上,将保温浸提好的枸杞汁液倒入滤布上过滤,反复挤压出汁,再用40mL无菌水冲洗滤渣挤压出汁,即得枸杞提取液,枸杞提取液工艺流程如图3所示,枸杞提取液如图4所示,枸杞清提取液如图5所示;枸杞清提取液,取上述滤渣用200mL无菌水冲洗,反复挤压出汁即得枸杞清提取液。
(3)苹果提取液的制备方法:
选用市售新鲜成熟、无破损、无烂心的昭通苹果。将挑选好的苹果洗净晾干备用。苹果用水果刀去皮,去皮厚度应小于1mm,减缓氧化速率。迅速切成3cm2大小的苹果块称量100g。取150mL,25%的糖水和100g苹果块在电热锅中加热煮沸,沸腾即可,高温加热可破坏酶活性防止氧化,糖液可保存苹果风味不流失;将煮好的苹果块和糖水倒入250mL烧杯中,用保鲜膜封口,放入冷水中迅速冷却,待冷却至室温后用榨汁机榨汁;将榨好的苹果汁液用2层滤布过滤,反复挤压至不出汁即得苹果提取液,苹果提取液制备流程图如图6所示,苹果提取液如图7所示。
按黄精提取液、枸杞提取液、苹果提取液、枸杞清提取液的质量比为5:2:5:10的比例混合均匀,然后加入0.06%山梨酸钾,灌封,用120℃热压灭菌10-15分钟,冷却即可;饮料成品详见图9,感官评价图如图8所示,此款复合保健饮料滇黄精香、枸杞香、苹果香都有,黄精香气突出,混合香气柔和,顺滑可口,甜酸比合适属弱香型饮料;手持量糖计测得糖值为6%,

1.一种黄精复合保健饮料,其特征在于:所述饮料包含黄精提取液、枸杞提取液、苹果提取液、枸杞清提取液;其中,黄精提取液、枸杞提取液、苹果提取液、枸杞清提取液的质量比为5:2:5:10。

(1)复水浸提:挑选干黄精研磨成粉,过2号筛,按料液比为1:25的比例将黄精粉末与水混合均匀,混合液静置1小时;
(2)回流浸提:连接好回流冷凝装置,把黄精粉末与水的混合液加热煮沸,保持微沸1小时;
(3)冷却过滤:待黄精液冷却至室温后,用滤布过滤,反复挤压至不出汁,即得黄精提取液。
3.根据权利要求1所述黄精复合保健饮料,其特征在于,所述枸杞提取液和枸杞清提取液的制备方法,具体包括以下步骤:
(1)称取新鲜、无虫害、无霉变、无破损的枸杞饮片10g,洗净沥干备用,按料液比为1:3的比例将枸杞饮片置于水中,在90℃恒温水浴锅中复水浸提20min,让枸杞饮片充分复水;将复水好的枸杞捞出捣碎至枸杞中的籽全部裸露,枸杞皮破损成浆的状态;
(2)将捣碎好的枸杞放入步骤(1)中用于复水浸提的余液中,加入40mL无菌水搅匀,放入90℃恒温水浴锅中保温浸提10min;浸提液冷却至室温,将保温浸提好的枸杞汁液倒入滤布上进行过滤,反复挤压出汁,再用40mL无菌水冲洗滤渣挤压出汁,即得枸杞提取液;取上述滤渣用200mL无菌水冲洗,反复挤压出汁即得枸杞清提取液。
4.根据权利要求1所述黄精复合保健饮料,其特征在于,所述苹果提取液的制备方法,具体包括以下步骤:
(1)将苹果洗净晾干,去皮,切苹果块,备用;
(2)取150mL,质量百分比浓度为25%的糖水和100g苹果块加热煮沸,沸腾即可;将煮好的苹果块和糖水倒入容器中迅速冷却,待冷却至室温后用榨汁机榨汁,将榨好的苹果汁液用2层滤布过滤,反复挤压至不出汁即得苹果提取液。
