一、技术领域:
本发明涉及食品领域,具体涉及的是一种具有清热解毒功效的杂粮粥及其制备方法。
二、背景技术:
现代文明给人类带来了前所未有的便捷,同时也带来了空气污染、噪音污染、化学药剂、电磁辐射;随着人民生活水平的提高,食物中的营养长期处于过剩状态,加上运动量少,因此在人体内积存了很多高能量物质,这些物质沉积在血管壁上,使血管变窄,导致高血压和动脉硬化等疾病,而随着各种食品添加剂、农药及大气污染等污染的日益加重,食品中越来越多的有毒物质积存在人体内不能排出,日夜积累形成宿便,而宿便是人体肠道排毒的根源,被重吸收的毒素会重新浸入身体,降低人体免疫力。外来之毒与内生之毒留存于体内,可阻滞气机、阻碍气血的正常运行,耗气伤津,破坏脏腑的正常功能以及脏腑之间相互滋生、制约协调统一的关系,最终使阴阳失衡而发生疾病,加速人体衰老。体内积蓄大量的毒素垃圾常常外化为皮肤晦暗、瘙痒、易长黄褐斑、痤疮、酒糟鼻等;除了影响容颜,还诱发肥胖、口臭、便秘、慢性胃炎、胃溃疡等,严重危害人类的健康。
自古以来,中医都强调“药食同源”,即食物也有辅疗疾病的功效。当疾病处于萌芽状态的时候并不为我们所知,它有个缓慢渐进的过程。药膳就能在“健康”与“疾病”之间起到一个平衡协调的作用,能治未病之病,属于上医。防治兼宜,效果显著。利用食疗自疗既可治病又可强身防病,这是有别于药物治疗的特点之一。药膳多是平和之品,但如长期食用,其防治疾病和健身和养生的效果却是比较显著的。
杂粮具有非常丰富营养价值,其中的纤维素和矿物质是普通白米的数倍,所含的维生素A、维生素B1、维生素B2、维生素C、维生素E和钙、钾、铁、锌等微量元素更为丰富,杂粮是膳食纤维的主要来源,且大都含有较多的不饱和脂肪酸,能够提供人体必需的大多数营养素。现代营养学证实,杂粮对我们的身体健康有绝妙的好处,在日常饮食中,利用杂粮替代一部分饮食,可有效丰富我们的食物组成和营养元素的组成,而由于杂粮特殊的食用局限性,所以如何将杂粮更好的加工食用使我们目前应该关注的问题。
因此本发明提出一种具有清热解毒功效的杂粮粥及其制备方法,以杂粮为主要原料,辅以同样具有清热解毒功效的中草药,具有制作简单、易于人体吸收、食用方便、排出人体毒素、清热去火等功效,适合体内积蓄大量毒素的人群长期食用。
三、发明内容:
本发明的一个目的是提供一种具有清热解毒功效的杂粮粥,这种具有清热解毒功效的杂粮粥将杂粮与中药的结合,兼有食品的色、香、味等特性,还具有中药的药效,通过对其调配及精细的加工来实现清热解毒的目的;本发明的另一个目的是提供这种具有清热解毒功效的杂粮粥的制备方法。
本发明解决其技术问题所采用的技术方案是:这种具有清热解毒功效的杂粮粥由包括杂粮原料、中药原料、辅料的制备原料制备而成,按重量份数计,所述杂粮原料为绿豆15-20份、薏米10-15份;所述中药原料:连翘5-7份、金银花6-8份、荷叶5-10份、枸杞子5-7份;所述辅料包括:香蕉10-20份、胡萝卜10-15份、冬瓜5-10份、苦瓜3-5份、蜂蜜3-5份、魔芋胶2-4份、蔗糖7-9份;其中按所述配比,将连翘、金银花、荷叶制备成微细化中药混合粉,放入冷水中,使用辅助超声波震动并过滤后,得到中药汤汁,将杂粮原料倒入中药汤汁中,熬制,再微波炉干燥,得到速食杂粮粥原料。
上述方案中杂粮原料中:绿豆18份、薏米13份,所述中药原料中:连翘6份、金银花7份、荷叶8份、枸杞子6份,所述辅料中:香蕉15份、胡萝卜13份、冬瓜8份、苦瓜4份、蜂蜜4份、魔芋胶2份、蔗糖7份。
上述具有清热解毒功效的杂粮粥的制备方法:
步骤1、将绿豆、薏米混合,分拣、除杂、清洗,置于50℃清水中浸泡3-4 h;
步骤2、将香蕉、胡萝卜、冬瓜、苦瓜进行去皮、去蒂、清洗,切1-2mm薄片,平铺摆放置于-45℃的冷冻机中低温冷冻5h,将真空冷冻干燥机的冷井预冷0.5h,将预冻好的果蔬片置于冷冻干燥机中,抽真空至10Pa以下,调节温度为10℃加热4h,调节温度为24℃加热6h,取出冻干的果蔬置于球磨机中粉碎,过50目筛,得到粗复合果蔬粉;
步骤3、取连翘、金银花、荷叶,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过300-500目筛,得微细化中药混合粉;
步骤4、将微细化中药混合粉,放入7倍重量的冷水中,使用辅助超声波震动30-40分钟后进行过滤,过滤的滤液取出后通入抽滤装置进行二次过滤,得到中药汤汁;
步骤5、将步骤1中浸泡好的杂粮原料倒入中药汤汁中,使中药汤汁与杂粮原料的比例为8:1,放入锅中调节温度100-120℃熬制10-20min,熬制过程中每间隔5 min对锅中的材料进行搅拌,使其混合均匀,熬制完成后熄火,放入微波炉中高中低火微波干燥9-11min,得到速食杂粮粥原料;
步骤6、将步骤2中粗复合果蔬混合粉同步骤5中速食杂粮粥原料混合,同时加入枸杞子、蜂蜜、魔芋胶、蔗糖,得到一种清热解毒功效的速食杂粮粥。
上述方案步骤4中超声波震荡频率范围为50-60Khz。
本发明所选用低温密闭超微粉碎对中药进行特异性粉碎,原料经超微粉碎后,细胞壁破碎,细胞内的有效成分充分暴露出来,其释放速度及释放量相比常规粉碎会大幅度提高,经低温超微粉碎后的中药,放入冷水中使用辅助超声波震动进行萃取,可最大限度保留药物中的活性成分,可极大限度提升人体对中药药用成分的吸收。
本发明所提供的一种具有清热解毒功效的杂粮粥,其主要杂粮原料为:
绿豆:绿豆是一种豆科、蝶形花亚科豇豆属植物,原产印度、缅甸地区,在中国已有两千余年的栽培史。绿豆是我国人民的传统豆类食物,富含的多种维生素、钙、磷、铁等矿物质都比粳米多,又因其营养丰富,可作豆粥、豆饭、豆酒或作饵顿糕等,故有“食中佳品,济世长谷”之称,具有清热解毒、抗菌抑菌、抗过敏、降血脂、护肾脏的功效。
薏米:薏米,又名薏苡仁、苡仁、六谷子,为禾本科植物薏苡的种仁,在我国栽培历史悠久,我国汉代已有栽培,东汉马缓曾从交趾引进优良品种,是我国古老的药食皆佳的粮种之一。薏米的营养价值很高,被誉为“世界禾本科植物之王”,在欧洲,它被称为“生命健康之友”。薏米富含维生素B族、矿物质、膳食纤维,具有健脾养脾、养胃健胃、养肾补肾、补气益气、调理肠胃、滋阴补阴、安神镇定、清肺润肺、祛湿、降血脂、祛风、提高代谢、控制食欲、养颜、抗衰老的功效。
本发明的中药组方,是在传统验方的基础上,经过多年的实际经验,精心调配出来的,该中药组方的各味药材是:
连翘:连翘具有较强的抗菌作用,有明显的抗炎作用,可促进炎性屏障的形成,降低毛细血管通透性,减少炎性渗出,消除青春痘引起的局部红肿。对皮脂腺分泌有一定的抑制作用,减少皮肤过度油腻,对油性皮肤有改善肤质的功效。此外,连翘能保护正常皮肤,减少青春痘和毛囊炎的发生。
金银花:甘寒气芳香,甘寒清热而不伤胃,芳香透达又可祛邪,具有健脾养脾、养胃健胃、补气益气、安神镇定、清肺润肺、消暑解暑的功效。
荷叶:荷叶,又称莲花茎、莲茎,是莲科莲属多年生草本挺水植物莲荷的叶;主治暑热烦渴,头痛眩晕,水肿,食少腹胀,泻痢,白带,脱肛,吐血,衄血,咯血,便血,崩漏,产后恶露不净,损伤瘀血。
枸杞:枸杞,是茄科、枸杞属植物,枸杞为人们对商品枸杞子、植物宁夏枸杞、中华枸杞等枸杞属下物种的统称。人们日常食用和药用的枸杞子多为宁夏枸杞的果实“枸杞子”,具有养肝,滋肾,润肺的功效。
本发明所提供的一种具有清热解毒功效的杂粮粥,其主要辅料为:
香蕉:味甘、性寒。不仅具有清热解毒的功效,在日常生活中也是很好的润肠通便的食物。
胡萝卜:胡萝卜是有效的解毒食物,与体内的汞离子结合之后,能有效降低血液中汞离子的浓度,加速体内汞离子的排出。同时胡萝卜含有大量胡萝卜素,在肝脏及小肠粘膜内经过酶的作用,其中50%变成维生素A,有补肝明目的作用,胡萝卜素中含的槲皮素、山柰酚能增加冠状动脉血流量,降低血脂,促进肾上腺素的合成,因而有降压强心的作用。
冬瓜:冬瓜有利水消痰、清热解毒的功效。湿热体质者若有水肿、胀满、痰多、暑热烦闷、消渴、湿疹、疖肿等均可食用,并可解酒。
苦瓜:苦瓜具有清凉解渴、清热解毒、清心明目、益气解乏、益肾利尿的作用。苦瓜中含有多种维生素、矿物质,含有清脂、减肥的特效成分,可以加速排毒。此外它还含有一种具有明显抗癌功效的活性蛋白质,能够激发体内免疫系统的防御功能,增加免疫细胞的活性,清除体内的有害物质。
有益效果:
1、本发明通过将具有清热解毒功效的中药材与具有类似功效的杂粮进行混合添加,在煮制过程中考虑其营养活性的保留,严格控制时间温度和原料处理方法,最大程度保留所需的营养成分,使其在保证营养均衡的同时也能达到一定的清热解毒的功效。
2、本发明选用的杂粮只有绿豆和薏米,选取时充分考虑到了二者口感的融合性和在营养元素的互补性,在发挥其共同的清热解毒的功效之外,也将其中所富含的营养元素释放出来,除主要具有清热解毒功效外,大量维生素和矿物元素,也起到了美容养颜、提高免疫力的作用。
3、本发明选用连翘、金银花、荷叶、枸杞子作为中药原料,在对多种具有清热解毒功效的中药进行筛选排除后,选取了四种无论是在药效还是口感均较为出色,在发挥药用价值的同时,添加到粥里食用并不影响粥的口感,而且还具有清凉爽口的作用,食用口感较好。
4、本发明除了选择杂粮和中药作为清热解毒主要的原料之外,还添加了具有清热解毒功效的果蔬,为更好的发挥果蔬的作用,先进行冻干粉碎,后添加到粥中,不仅增加了粥的风味,而且在清热解毒这一功效上也发挥了药用价值,除此之外,果蔬中含有的大量维生素和矿物质组成是杂粮和中药并不具备的,因此果蔬作为辅料的添加也丰富了杂粮粥的营养组成,使其更具药用价值和保健功效;冻干粉碎工艺极大限度的保留了果蔬中的营养成分,并减少了本产品的生产成本,增加了生产效率。
5、本发明中药的处理工艺分三步:(1)初粉碎、低温密闭超微粉碎;(2)冷水超声波振动;(3)二次过滤;本发明所选用低温密闭超微粉碎对中药进行特异性粉碎,经低温超微粉碎后的中药,可最大限度保留药物中的活性成分,可极大限度提升人体对中药药用成分的吸收。而杂粮处理工艺为:浸泡、混合二次熬制。通过不同的工艺结合能够使中药、杂粮、辅料的营养成分相结合,在具有良好配伍性的同时,降低了营养物质的流失,提高人体对所含营养物质的吸收,实现中药、杂粮、辅料协同作用增强改善肝功能、清热去火、排毒解毒的功效。

一种具有清热解毒功效的杂粮粥,按照重量份由以下原料制成,包括杂粮原料、中药原料和辅料,所述杂粮原料组分及重量份数配比为:绿豆15份、薏米10份;所述中药原料组分及重量份数配比为:连翘5份、金银花6份、荷叶5份、枸杞子5份;所述辅料组分及其重量份数配比为:香蕉10份、胡萝卜10份、冬瓜5份、苦瓜3份、蜂蜜3份、魔芋胶2份、蔗糖7份。。
其制备方法如以下步骤:
步骤1、将绿豆、薏米混合,分拣、除杂、清洗,将清洗好的杂粮置于50℃清水中浸泡3h,有利于其淀粉糊化。
步骤2、将香蕉、胡萝卜、冬瓜、苦瓜进行去皮、去蒂、清洗,切1mm薄片,平铺摆放置于-45℃的冷冻机中低温冷冻5h,后将真空冷冻干燥机的冷井预冷0.5h,将预冻好的果蔬片置于冷冻干燥机中,抽真空至10Pa以下,调节温度为10℃加热4h,调节温度为24℃加热6h,取出冻干的果蔬置于球磨机中粉碎,过50目筛,得到粗复合果蔬粉,备用。
步骤3、取连翘、金银花、荷叶,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过300目筛,得微细化中药混合粉,备用。
步骤4、取步骤3中微细化中药混合粉,放入7倍重量的冷水中,使用辅助超声波震动30分钟后进行过滤,过滤的滤液取出后通入抽滤装置进行二次过滤,得到中药汤汁,备用。
步骤5、将步骤1中杂粮倒入步骤4中药汤中,使中药汤与杂粮原料的比例为8:1,放入锅中调节温度100℃熬制10min,熬制过程中每间隔5 min对锅中的材料进行搅拌,使其混合均匀,熬制完成后熄火,沥干水分放入微波炉中高中低火微波干燥9min,得到速食杂粮粥原料,备用。
步骤6、将步骤2中粗果蔬混合粉同步骤5中速食杂粮粥原料混合,同时加入枸杞子、蜂蜜、魔芋胶、蔗糖,得到一种清热解毒功效的速食杂粮粥。
步骤7、真空包装,制得本发明杂粮粥。
实施例2:
一种具有清热解毒功效的杂粮粥,按照重量份由以下原料制成,包括杂粮原料、中药原料和辅料,所述杂粮原料组分及重量份数配比为:绿豆18份、薏米13份;所述中药原料组分及重量份数配比为:连翘6份、金银花7份、荷叶8份、枸杞子6份;所述辅料组分及其重量份数配比为:香蕉15份、胡萝卜13份、冬瓜8份、苦瓜4份、蜂蜜4份、魔芋胶3份、蔗糖8份。。
其制备方法如以下步骤:
步骤1、将绿豆、薏米混合,分拣、除杂、清洗,将清洗好的杂粮置于50℃清水中浸泡4 h有利于其α化。
步骤2、将香蕉、胡萝卜、冬瓜、苦瓜进行去皮、去蒂、清洗,切1.5mm薄片,平铺摆放置于-45℃的冷冻机中低温冷冻5h,后将真空冷冻干燥机的冷井预冷0.5h,将预冻好的果蔬片置于冷冻干燥机中,抽真空至10Pa以下,调节温度为10℃加热4h,调节温度为24℃加热6h,取出冻干的果蔬置于球磨机中粉碎,过50目筛,得到粗复合果蔬粉,备用。
步骤3、取连翘、金银花、荷叶,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过350目筛,得微细化中药混合粉,备用。
步骤4、取步骤3中微细化中药混合粉,放入7倍重量的冷水中,使用辅助超声波震动35分钟后进行过滤,过滤的滤液取出后通入抽滤装置进行二次过滤,得到中药汤汁,备用。
步骤5、将步骤1中杂粮倒入步骤4中药汤中,使中药汤与杂粮原料的比例为8:1,放入锅中调节温度110℃熬制15min,熬制过程中每间隔5 min对锅中的材料进行搅拌,使其混合均匀,熬制完成后熄火,沥干水分放入微波炉中高中低火微波干燥10min,得到速食杂粮粥原料,备用。
步骤6、将步骤2中粗果蔬混合粉同步骤5中速食杂粮粥原料混合,同时加入枸杞子、蜂蜜、魔芋胶、蔗糖,得到一种清热解毒功效的速食杂粮粥。
步骤7、真空包装,制得本发明杂粮粥。
实施例3:
一种具有清热解毒功效的杂粮粥,按照重量份由以下原料制成,包括杂粮原料、中药原料和辅料,所述杂粮原料组分及重量份数配比为:绿豆20份、薏米15份;所述中药原料组分及重量份数配比为:连翘7份、金银花8份、荷叶10份、枸杞子7份;所述辅料组分及其重量份数配比为:香蕉20份、胡萝卜15份、冬瓜10份、苦瓜5份、蜂蜜5份、魔芋胶3份、蔗糖8份。

步骤6、将步骤2中粗果蔬混合粉同步骤5中速食杂粮粥原料混合,同时加入枸杞子、蜂蜜、魔芋胶、蔗糖,得到一种清热解毒功效的速食杂粮粥。
步骤7、真空包装,制得本发明杂粮粥。
实施例4:
具有清热解毒功效的速食杂粮粥感官评定。
感官评定方法:感官评价小组成员由10名经培训的食品专业人员组成,通过色泽、气味、外观、滋味、口感,这四个因素方面分别对实施例1、2、3具有清热解毒功效的速食杂粮粥进行评价。感官评定标准详见表1。

通过表1、表2可知,三个不同实施例具有清热解毒功效的速食杂粮粥均具有较高的感官评分。
典型实验例:
肖某华,女,33岁,某国企员工,面色发暗、黄褐斑增多、痤疮增多、便秘。经诊断为体内毒素淤积引起的病变。接收本发明志愿受试后,每日早饭、晚饭食用本发明杂粮粥150克,受试过程中增加运动量,每日跑步2公里,并保持良好的作息时间,连续服用1个月面色发暗、黄褐斑增多、痤疮增多、便秘症状明显消退,继续食用3个月面色发暗、黄褐斑增多、痤疮增多、便秘症状完全消退,未见任何副作用。
实验结果表明:本发明具有清热解毒功效的杂粮粥在改善人体健康方面具有明显的功效。

Claims (4)
1.一种具有清热解毒功效的杂粮粥,其特征在于:这种具有清热解毒功效的杂粮粥由包括杂粮原料、中药原料、辅料的制备原料制备而成,按重量份数计,所述杂粮原料为绿豆15-20份、薏米10-15份;所述中药原料:连翘5-7份、金银花6-8份、荷叶5-10份、枸杞子5-7份;所述辅料包括:香蕉10-20份、胡萝卜10-15份、冬瓜5-10份、苦瓜3-5份、蜂蜜3-5份、魔芋胶2-4份、蔗糖7-9份;其中按所述配比,将连翘、金银花、荷叶制备成微细化中药混合粉,放入冷水中,使用辅助超声波震动并过滤后,得到中药汤汁,将杂粮原料倒入中药汤汁中,熬制,再微波炉干燥,得到速食杂粮粥原料。
2.根据权利要求1所述的具有清热解毒功效的杂粮粥,其特征在于:所述的杂粮原料中:绿豆18份、薏米13份,所述中药原料中:连翘6份、金银花7份、荷叶8份、枸杞子6份,所述辅料中:香蕉15份、胡萝卜13份、冬瓜8份、苦瓜4份、蜂蜜4份、魔芋胶2份、蔗糖7份。
3.一种权利要求1或2所述的具有清热解毒功效的杂粮粥的制备方法,其特征在于:
步骤1、将绿豆、薏米混合,分拣、除杂、清洗,置于50℃清水中浸泡3-4 h;
步骤2、将香蕉、胡萝卜、冬瓜、苦瓜进行去皮、去蒂、清洗,切1-2mm薄片,平铺摆放置于-45℃的冷冻机中低温冷冻5h,将真空冷冻干燥机的冷井预冷0.5h,将预冻好的果蔬片置于冷冻干燥机中,抽真空至10Pa以下,调节温度为10℃加热4h,调节温度为24℃加热6h,取出冻干的果蔬置于球磨机中粉碎,过50目筛,得到粗复合果蔬粉;
步骤3、取连翘、金银花、荷叶,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过300-500目筛,得微细化中药混合粉;
步骤4、将微细化中药混合粉,放入7倍重量的冷水中,使用辅助超声波震动30-40分钟后进行过滤,过滤的滤液取出后通入抽滤装置进行二次过滤,得到中药汤汁;
步骤5、将步骤1中浸泡好的杂粮原料倒入中药汤汁中,使中药汤汁与杂粮原料的比例为8:1,放入锅中调节温度100-120℃熬制10-20min,熬制过程中每间隔5 min对锅中的材料进行搅拌,使其混合均匀,熬制完成后熄火,放入微波炉中高中低火微波干燥9-11min,得到速食杂粮粥原料;
步骤6、将步骤2中粗复合果蔬混合粉同步骤5中速食杂粮粥原料混合,同时加入枸杞子、蜂蜜、魔芋胶、蔗糖,得到一种清热解毒功效的速食杂粮粥。
4.根据权利要求3所述的具有清热解毒功效的杂粮粥的制备方法,其特征在于:所述步骤3中超声波提取频率为55Khz。
