Claims (4)
1.一种麻辣香锅调味料,由香辣油与底料酱料混合制成,其特征在于,所述的香辣油包括下述重量份的成分:菜籽油60-75份,鸡油35-45份,色拉油180-220份,豆瓣酱45-60份,香料14-16份,青花椒0.5-2份,红花椒0.5-2份,山梨酸钾0.1-0.3份,啤酒4-8份,姜4-6份,大蒜6-8份,大葱4-6份,洋葱8-12份,香菜2-4份,芹菜2-4份,小葱2-4份,糍粑辣椒8-12份;
所述的底料酱料包括下述重量份的成分:菜籽油20-30kg,鸡油18-22kg,色拉油20-30kg,火锅底料90-100kg,香辣酱40-45kg,辣椒酱25-30kg,泡姜4-6公斤,泡椒4-6kg,豆瓣酱35-42kg,麦芽粉1-2kg,山梨酸钾0.1-0.3kg。
2.根据权利要求1所述的一种麻辣香锅调味料,其特征在于:所述的香料包括下述重量份的成分:八角6-8份,山萘8-10份,桂皮8-10k份,肉桂8-10份,草果4-6份,香叶4-6份,白豆扣6-8份,肉蔻4-6份,千里香4-6份,小茴香4-6份,大砂仁2-4份,小香砂2-4份,丁香4-6份,白芷4-6份,良姜4-6份,紫草8-10份,排草8-10份,灵草8-10份,香茅草2-4份,毕卜2-4份,甘草4-6份,干松6-8份,罗汉果12-15份,五加皮8-10份,陈皮2-4份,黄栀子450份,香麻8-12份,红麻8-12份。
3.根据权利要求1所述的一种麻辣香锅调味料,其特征在于:所述的糍粑辣椒由去籽天鹰椒打碎预制而成。
4.根据权利要求1-3所述的一种麻辣香锅调味料,其特征在于:所述的香辣油包括下述重量份的成分:菜籽油70份,鸡油40份,色拉油200份,豆瓣酱50份,香料14.5份,青花椒1份,红花椒1份,山梨酸钾0.2份,啤酒6份,姜5份,大蒜7.5份,大葱5份,洋葱10份,香菜2.5份,芹菜2.5份,小葱2.5份,糍粑辣椒10份;
所述的底料酱料包括下述重量份的成分:菜籽油25份,鸡油20份,色拉油25份,火锅底料96份,香辣酱42份,辣椒酱29.76份,泡姜5公斤,泡椒5份,豆瓣酱40份,麦芽粉1.5份,山梨酸钾0.3份。
