本发明公开了一种蜂蜜复合保健固体饮料及其制备方法,所述保健固体饮料由以下组分按重量份数组成:黄芪提取物18‑28份,山楂10‑16份,蜂蜜10‑16份,甘草5‑11份。在制备保健固体饮料的过程中,首先对黄芪进行提取,将山楂打浆成汁,然后与蜂蜜和甘草混合,最后将它们和水按一定比例混匀后灭菌即得;制得的保健固体饮料组分天然,不添加人工合成添加剂,不添加任何人工色素和香精;各组分发挥协同效应,起到补气、益肾、降血压、解毒、保肝、提高人体免疫力,还具有开胃的功能;并且,固体饮料速溶性好,冲水即可饮用,携带方便,为蜂蜜产品的开发利用提供了一个新的思路。

背景技术
蜂蜜是由蜂采集植物的花蜜、分泌物或蜜露,与自身分泌物结合后,经充分酿造而成的天然甜味物质,是一种老少皆宣、营养丰富的滋补品。近年来,国内和国际市场对蜂的需求量不断扩大,尤其是近年来消费者对蜂产品的保健功能越来越认可。药理实验证明,蜂蜜对人体的保健功能主要有对心血管的保护,治疗糖尿病,提高免疫力,杀菌能力强,可以解酒强肝,调节肠胃帮助消化,促进组织再生,治疗鼻炎、鼻窦炎等,因此,蜂蜜又被称为“天然抗生素”。
黄芪,又称戴糁、芰草、百木、黄耆。据《本草纲目》记载:黄芪味甘性温,入脾、肺经,具补气固表利水、养血生肌托毒之功。是中药补气药中最为常用、且功效显著的一味药物,除能治疗因气虚引起的多种病症外,更有良好的保健防病作用。现代药理研究表明,黄芪含有多种对人体健康有益的生物成分与微量元素,如黄芪多糖、单糖、黄酮甙、叶酸、胆碱、多种氨基酸、黏液质、纤维素及硒、硅等,能兴奋中枢神经系统,增强机体的抗病能力与免疫力,调节机体平衡,对改善心肺功能,扩张血管,改善微循环,降血压、降血糖、保护肝肾,促进细胞的新陈代谢及抗病毒、抗菌等,均有良好的作用。
山楂是一种药食同源的果实,含有丰富的黄酮,具有“益肾气、健脾胃、止泄痢、化痰涎、润皮毛”5个方面的功能。除了具有防治心血管疾病的作用之外,还具有降血压的作用。甘草除具有抗溃疡、抗炎症和抗龋齿等特性外,还具有解毒、保肝、镇痛、抗肿瘤和抗衰老等保健作用。
现有市售的蜂蜜大都是透明或半透明的粘稠胶状液体,由于自身特性(高粘度、呈酸性流体,易发酵变质)限制,使其在运输、储藏(易出现结品现象)和使用过程中带来了诸多不便。
日前关于黄芪、蜂蜜、山楂等功能性固体饮料的研究较少,并且大多市场上饮料的食品添加剂较多,可能对人体健康存在一定潜在威胁。基于上述特性,如何在充分利用黄芪、山楂、甘草及蜂蜜营养和保健价值的同时,扩展现有饮料市场的种类成为现实所需。
发明内容
有鉴于此,本发明的目的在于提供一种复合保健固体饮料,该保健固体饮料组方天然,不仅具有营养和保健价值,还具有补气、益肾、降血压、解毒、保肝、提高人体免疫力,还具有开胃的功能;本发明还提供了该保健固体饮料的制备方法,制备方法简单,可以工业化生产。
为达到上述目的,本发明提供如下技术方案:
1、一种蜂蜜复合保健固体饮料,由以下组分按重量份数组成:黄芪提取物18-28份,山楂10-16份,蜂蜜10-16份,甘草5-11份;所述黄芪提取物为黄芪水提物。
优选的,由以下组分按重量份数组成:黄芪提取物23份,山楂10份,蜂蜜13份,甘草5份。
2、所述的复合保健固体饮料的制备方法,步骤如下:
(1)将黄芪粉加水提取,取上清液,得黄芪提取物;
(2)将山楂加水,预煮软化后,打浆成山楂汁,粗滤、纤维素酶和果胶酶酶解,酶解液抽滤得到山楂汁;
(3)将步骤(1)得到的黄芪提取物、步骤(2)得到的山楂汁与蜂蜜和甘草,按配比混匀并真空抽滤;
(4)将抽滤后的混合液置于-20~-30℃条件下冷冻12~48h,然后在30~40℃的真空条件下加热干燥0.5~1.5h,待混合液含水量达到1~3%时结束干燥,即得复合保健固体饮料;所述真空条件的真空度为-0.06~-0.1Mpa。
优选的,步骤(1)中,所述加水提取是按黄芪粉与水质量比1:10于100℃提取60min。
优选的,步骤(2)中,山楂与水的质量比为1:4。
优选的,所述粗滤是将打浆后的山楂汁用300目纱布进行过滤。
优选的,所述酶解是使加入纤维素酶和果胶酶的至纤维素酶和果胶酶的质量分数分别为0.15%和0.02%,在55℃水浴锅内水解3h。
优选的,步骤(3)中,所述真空抽滤后的混合液最大粒度不超过120目。
优选的,所述步骤(4)中将抽滤后的混合液置于-30℃条件下冷冻24h,然后在30℃的真空条件下加热干燥1.5h,待混合液含水量达到1%时结束干燥,即得复合保健固体饮料;所述真空条件的真空度为-0.1Mpa。

(1)取一定量经粉碎过筛的黄芪原料,用黄芪粉与水质量比1:10,于100℃提取60min,取上清液,得黄芪提取物;
(2)将山楂进行清洗后,按质量比1:4加入水,将山楂放到夹层锅里预煮,煮至山楂软化,然后用胶体磨细磨3遍,将山楂打浆成山楂汁;粗滤后用纤维素酶和果胶酶酶解(纤维素酶和果胶酶终浓度质量分数分别为0.15%和0.02%),最后采用抽滤瓶,用分析滤纸为过滤介质,将水解后的山楂汁抽滤得到澄清的山楂汁。
(3)将步骤(1)、(2)得到的黄芪提取物、山楂汁与蜂蜜、甘草,按配比充分混匀并真空抽滤;
(4)将抽滤后的混合液置于-20~-30℃条件下冷冻12~48h,然后在30~40℃的真空条件下加热干燥0.5~1.5h,待混合液含水量达到1~3%时结束干燥,即得复合保健固体饮料;所述真空条件的真空度为-0.1Mpa。
固体饮料最佳配比确定:本发明设计4因素3水平的L9(34)正交试验来优化产品配方。然后请10人组成一个品评组,对各处理批次的色泽、组织状态、风味和口感进行综合评分(设色泽、组织状态、风味和口感的权重分别为20、30、20和30,总分为100分),评出每一种配方的最终得分(10人平均分),并以此综合评分结果作为试验指标,确定产品的最佳配方。其中因素水平表见表1,实验方案设计见表2,评分参考标准见表3。

综合上述实验可以得出,当蜂蜜、黄芪提取物、山楂、和甘草的最佳配比为实施例1所述配比时,固体饮料的口感最好,感官评分最高。
固体饮料的速溶性实验,具体如下:
1)润湿下沉性实验
称取10g本实施例制备的固体饮料粉末,将其散布于250mL,温度为25℃的水面上,分别在静置和搅拌条件下测定全粉全部润湿下沉的时间,分别为105s和7s,这说明该固体饮料速溶性很好。
2)速溶性
准确称取34g本实施例制备的固体饮料粉末,用250mL,温度为40℃的水冲调,搅动后观察冲调情况,结果为:冲调后无团块,杯底无沉淀。这进一步表明固体饮料粉末具有很好的速溶性。
实施例2
一种复合固体饮料,由以下组分按重量份数组成:黄芪提取物18份,山楂13份,蜂蜜16份,甘草8份。
固体饮料的制备方法如下:
(1)取一定量经粉碎过筛的黄芪原料,用黄芪粉与水质量比1:10,于100℃提取60min,取上清液,得黄芪提取物;
(2)将山楂进行清洗后,按质量比1:4加入水,将山楂放到夹层锅里预煮,煮至山楂软化,然后用胶体磨细磨3遍,将山楂打浆成山楂汁;粗滤后用纤维素酶和果胶酶酶解(纤维素酶和果胶酶终浓度质量分数分别为0.15%和0.02%),最后采用抽滤瓶,用分析滤纸为过滤介质,将水解后的山楂汁抽滤得到澄清的山楂汁。
(3)将步骤(1)、(2)得到的黄芪提取物、山楂汁与蜂蜜、甘草,按配比充分混匀并真空抽滤;
(4)将抽滤后的混合液置于-20~-30℃条件下冷冻12~48h,然后在30~40℃的真空条件下加热干燥0.5~1.5h,待混合液含水量达到1~3%时结束干燥,即得复合保健固体饮料;所述真空条件的真空度为-0.06MPa。
实施例2与实施例1相比,口感上过甜,感官评分为77分,速溶性一般,但不及实施例1。
以上所述实施例仅是为充分说明本发明而所举的较佳的实施例,本发明的保护范围不限于此。本技术领域的技术人员在本发明基础上所作的等同替代或变换,均在本发明的保护范围之内。本发明的保护范围以权利要求书为准。
Claims (9)
1.一种蜂蜜复合保健固体饮料,其特征在于,由以下组分按重量份数组成:黄芪提取物18-28份,山楂10-16份,蜂蜜10-16份,甘草5-11份;所述黄芪提取物为黄芪水提物。
2.根据权利要求1所述的复合保健固体饮料,其特征在于,由以下组分按重量份数组成:黄芪提取物23份,山楂10份,蜂蜜13份,甘草5份。
3.权利要求1或2所述的复合保健固体饮料的制备方法,其特征在于,步骤如下:
(1)将黄芪粉加水提取,取上清液,得黄芪提取物;
(2)将山楂加水,预煮软化后,打浆成山楂汁,粗滤、纤维素酶和果胶酶酶解,酶解液抽滤得到山楂汁;
(3)将步骤(1)得到的黄芪提取物、步骤(2)得到的山楂汁与蜂蜜和甘草,按配比混匀并真空抽滤;
(4)将抽滤后的混合液置于-20~-30℃条件下冷冻12~48h,然后在30~40℃的真空条件下加热干燥0.5~1.5h,待混合液含水量达到1~3%时结束干燥,即得复合保健固体饮料;所述真空条件的真空度为-0.06~-0.1Mpa。
4.根据权利要求3所述的复合保健固体饮料的制备方法,其特征在于:步骤(1)中,所述加水提取是按黄芪粉与水质量比1:10于100℃提取60min。
5.根据权利要求3所述的复合保健固体饮料的制备方法,其特征在于:步骤(2)中,山楂与水的质量比为1:4。
6.根据权利要求3所述的复合保健固体饮料的制备方法,其特征在于:所述粗滤是将打浆后的山楂汁用300目纱布进行过滤。
7.根据权利要求3所述的复合保健固体饮料的制备方法,其特征在于:所述酶解是使加入纤维素酶和果胶酶的至纤维素酶和果胶酶的质量分数分别为0.15%和0.02%,在55℃水浴锅内水解3h。
8.根据权利要求3所述的复合保健固体饮料的制备方法,其特征在于:步骤(3)中,所述真空抽滤后的混合液最大粒度不超过120目。
9.根据权利要求3所述的制备方法,其特征在于,所述步骤(4)中将抽滤后的混合液置于-30℃条件下冷冻24h,然后在30℃的真空条件下加热干燥1.5h,待混合液含水量达到1%时结束干燥,即得复合保健固体饮料;所述真空条件的真空度为-0.1Mpa。
