Abstract
本发明公开了一种百香果龙眼果酒及其酿造方法,属于酿酒技术领域。本百香果龙眼果酒由以下重量份数的原料制成:百香果内容物50‑60份,龙眼果肉60‑70份,水25‑30份,龙眼核粉10‑15份、龙眼壳粉8‑10份、龙眼叶粉5‑8份,百香果壳提取液10‑15份,桑叶提取液5‑10份,南瓜汁5‑7份,酿酒酵母0.16‑0.22份,果胶酶0.04‑0.06份,高岭土0.16‑0.20份。通过将龙眼果肉和百香果内容物打浆后加入其他原料酿制而成。本百香果龙眼果酒不仅口感好,香味足,色泽佳,营养丰富,而且对降低血糖有很明显的功效。

技术领域
本发明属于酿酒技术领域,具体涉及一种百香果龙眼果酒及其酿造方法。
背景技术
龙眼是一种水果,每年7~8月果实成熟呈黄褐色时采摘,龙眼果供生食或加工成干制品。龙眼性温味甘,益心脾,补气血,具有良好有滋养补益作用,可用于心脾虚损、气血不足所致的失眠、健忘、惊悸、眩晕等症。营养学家研究发现,每100克龙眼果肉中含全糖12%-23%、葡萄糖26.91%、酒石酸1.26%、蛋白质1.41%、脂肪0.45%、维生素C163.7毫克、维生素K196.6毫克,还有维生素B1、B2、P等,经过处理制成果干,每百克含糖分74.6克,铁35毫克,钙2毫克,磷110毫克,钾1200毫克等多种矿物质,还有多种氨基酸、皂素、X-甘氨酸、鞣质、胆碱等,这是其强大滋补能力的来源。据药理研究证实,龙眼含葡萄糖、蔗糖和维生素A、B等多种营养素,其中含有较多的是蛋白、脂肪和多种矿物质。这些营养素对人体都是必需的,特别对于劳心之人,耗伤心脾气血,更为有效。龙眼营养丰富,是珍贵的滋养强化剂。龙眼果实除鲜食外,还可制成罐头、酒、膏、酱等,亦可加工成龙眼干肉等。
百香果,是西番莲科西番莲属的草质藤本植物;茎具细条纹,无毛;花瓣5枚,与萼片等长;基部淡绿色,中部紫色,顶部白色,浆果卵球形,直径3~4厘米,无毛,熟时紫色;种子多数,卵形,花期6月,果期11月。百香果味甘;酸;性平归心;大肠经,功能主治:清肺润燥;安神止痛;和血止痢。主咳嗽;咽干;声嘶;大便秘结;失眠;痛经;关节痛;痢疾。百香果含有17种氨基酸,丰富的蛋白质、脂肪、糖、维生素、钙、磷、铁、钾、SOD酶和超纤维等165种对人体有益物质,更被称为水果中的VC(维生素)之王,口感独特。百香果天然纯净、浓郁甘美、酸甜可口,生津止渴;能提神醒脑、润肠通便,预防大肠癌;能补肾健身、排毒养颜;能解酒护肝、消除疲劳;对高血压、高血糖、降低胆固醇有功效;对口腔溃疡、牙周炎、咽喉炎有功效;对结肠炎、肠胃病有功效;能调节血糖、有助预防糖尿病;能提高人体免疫力,预防疾病。
龙眼和百香果的营养物质十分丰富,能提供很多人体必需的矿物质、维生素等,并且能滋养补益和防治各种疾病,但是龙眼和百香果均是季节性的水果,以生食为主,如果是生鲜食果肉的话,则不能一年四季都能吃到。其中,龙眼干的加工技术已经成熟,龙眼果中的一部分会被加工成龙眼干。但是,龙眼肉本身属温热性食物,吃多了容易上火,加工成龙眼干后温热性更强,很多消费者都会有所顾忌。
目前也有生产企业把百香果或者龙眼果酿造成果酒后进行销售,但是目前该类果酒还存在以下问题:1、果酒成品的味道不够醇厚,甚至伴有酸涩味;2、果酒的香味较淡,如龙眼果酒的龙眼味道不足,百香果酒的百香果香气不够浓郁,不能吸引消费者;3、果酒的色泽不够澄清透亮,影响消费者的视觉感受,或者果酒存储一段时间后会出现浑浊或沉淀现象,质量不够稳定。
糖尿病是一种常见的内分泌系统疾病,是由于体内的一种激素——胰岛素的绝对缺乏或相对不足,或是该物质本身质量及其他原因造成不能发挥正常生理作用,而引起的以糖代谢为主的糖、脂肪、蛋白质三大物质的代谢混乱的一种综合病症。目前糖尿病患者通常是采取服用降糖化学药进行治疗,而降糖化学药通常会有很多副作用,如会引起低血糖,发生皮疹、水肿、腹泻、腹痛、有一定的肝肾损害,很多药物是患有心肝肺肾病的患者不能服用的。目前缺少一种无毒副作用、口感好,同时对糖尿病有很好防治作用的产品。
发明内容
本发明的目的是为了解决现有技术存在的上述问题,提供一种能克服龙眼和百香果季节性食用问题,并且口感好、香味足、色泽好、营养丰富、还能有效降低血糖,对糖尿病有防治作用的百香果龙眼果酒及其酿造方法。
为了实现上述目的,本发明采用的技术方案如下:
一种百香果龙眼果酒,由以下重量份数的原料制成:百香果内容物50-60份,龙眼果肉60-70份,水25-30份,龙眼核粉10-15份、龙眼壳粉8-10份、龙眼叶粉5-8份,百香果壳提取液10-15份,桑叶提取液5-10份,南瓜汁5-7份,酿酒酵母0.16-0.22份,果胶酶0.04-0.06份,高岭土0.16-0.20份;
所述百香果内容物为百香果除壳后的所有物质。
上述技术方案,作为优选,百香果龙眼果酒由以下重量份数的原料酿造而成:百香果内容物56份,龙眼果肉65份,水27份,龙眼核粉13份、龙眼壳粉9份、龙眼叶粉7份,百香果壳提取液12份,桑叶提取液7份,南瓜汁6份,酿酒酵母0.19份,果胶酶0.05份,高岭土0.18份。
上述百香果龙眼果酒的酿造方法,包括如下步骤:
(1)将龙眼果去壳、去核,得到龙眼肉,将百香果去壳得到百香果内容物,将龙眼肉、百香果内容物和水混合打浆,得到龙眼百香果原浆;
(2)在步骤(1)制得的龙眼百香果原浆中加入酿酒酵母进行发酵,发酵温度为25-28℃,发酵时间为10-15天,发酵完成后得到发酵酒;
(3)将龙眼核、龙眼壳和龙眼叶清洗干净后烘干,分别磨成100-200目的粉末,得到龙眼核粉、龙眼壳粉和龙眼叶粉;
(4)在步骤(2)制得的发酵酒中加入龙眼核粉、龙眼壳粉和龙眼叶粉,混合均匀,密封静置6-7天,得混合果酒液;
(5)在步骤(4)制得的混合果酒液中加入百香果壳提取液、南瓜汁和桑叶提取液,混合均匀,密封静置50-60天,过滤除渣,得到百香果龙眼果酒半成品;
(6)将步骤(5)制得的百香果龙眼果酒半成品在25-30℃经过4-6个月陈酿后,先加入果胶酶混合均匀,放置24h后,再加入高岭土混合均匀,静置5-7天后,取上清液即为百香果龙眼果酒。
上述技术方案,作为优选,步骤(5)中,所述百香果壳提取液的制备方法如下:将百香果壳洗净,然后烘干,粉碎,得百香果壳粉末;取百香果壳粉末置于容器中,再倒入1.5倍重量的酒精度为38%的食用酒精至完全浸没百香果壳粉末,即百香果壳粉末与食用酒精的重量比为1:1.5,静置30-40min后,超声波振荡15-20min,过滤,取滤液,完成提取,按上述方法将百香果壳粉末进行反复提取三次,并且收集三次的滤液混合均匀,得到百香果壳提取液。
上述技术方案,作为优选,步骤(5)中,所述桑叶提取液的制备方法如下:取生鲜的桑叶,切碎后用水提取3次,每次所用的水的质量为桑叶质量的7-8倍,每次提取3-4h,过滤,合并三次水提液后进行浓缩,制成干膏,粉碎后将碎末加入酒精度为45%的食用酒精中,使碎末完全浸没在食用酒精中,静置20-30min后,超声波振荡20-30min,过滤,取滤液进行离心,离心后取上清液即为桑叶提取液。
上述技术方案,作为优选,步骤(5)中,南瓜汁的制备方法如下:取生鲜的南瓜,切碎后打浆,过滤后取滤液,即可得到南瓜汁。
上述技术方案,作为优选,所述南瓜在打浆时加入0.3-0.5倍重量的食用酒精进行混合打浆,所述食用酒精的酒精度为38%。
上述技术方案,作为优选,步骤(2)中,所述发酵温度为26℃,发酵时间为14天。
上述技术方案,作为优选,步骤(6)中,百香果龙眼果酒半成品的陈酿温度为28℃,陈酿时间为5个月。本百香果龙眼果酒经过多次试验得出,陈酿5个月最适宜,因为在这段时间内,百香果龙眼果酒经过各组分的缔合反应,使百香果龙眼果酒更稳定,味道更好。
上述技术方案,作为优选,步骤(6)中,加入高岭土混合均匀,静置7天后,取上清液即为百香果龙眼果酒。
本百香果龙眼果酒的部分原料的性能及作用原理如下:
龙眼壳,为无患子科植物龙眼的果皮,含有槲皮素、黄酮类化合物、没食子酸甲酯、6-甲氧基-6-甲基-香豆素、木栓酮。甘、温;归肺经。功效:散风;解毒,敛疮;生肌。具散风疏表,凉血清热之功。主治:心虚头晕、耳聋、眼花。用法:内服:煎汤;外用:煅存性研末干撒或调敷。
龙眼核,含肥皂草素及脂肪。微苦,味涩,有理气止痛、止血、收湿等功效,可用于疝气疼痛、外伤出血、疥癣、湿疮等。能散风邪风,治心虚头晕、耳聋、眼花。能温肾利尿,止血,定痛,理气,化湿。研究表明,龙眼核提取液能有效地缓解经四氧嘧啶诱发的糖尿病小鼠体内的高血糖症状,降血糖率达77.4%,具有良好的降血糖效果。
龙眼叶,含谷甾醇、豆甾醇、豆甾醇葡萄糖甙、16-卅一烷醇、槲皮素、槲皮甙。甘淡、平。清热,解毒,燥湿;能治感冒,疟疾,疔肿,痔疮;作茶饮可明目。
百香果壳,即百香果皮,据分析,每100g百香果实中果皮质量有50-55g,占整果的百分之五十以上,它的营养成分也十分丰富,含有大量的蛋白质、果胶、纤维素、有机酸、黄酮和多酚类物质、维生素、矿物质(富含Na、K、Ca、Mg、Zn、Fe、Ge)等。百香果皮中含有的氨基酸并不比果肉少,氨基酸参与着身体各部分的生理活动,对于促进人体新陈代谢有很好的作用。百香果皮中含有的纤维素可以清除肠道内的污垢,和滞留物一起排出体外,对于肠道的清洁和排便有很好的效果。百香果皮中含有的维生素和胡萝卜素,具有抗氧化的作用,其还能保护身体不受自由基的伤害,达到缓解衰老的效果。同时,百香果壳的香味十分浓郁,经过提取后加入果酒中酿造,对果酒成品有很好的增香效果。
桑叶提取液,具有疏散风热的作用,能调和龙眼果肉的温热。桑叶提取液中的生物碱和桑叶多糖具有显著的降血糖和抑制血脂升高的作用。桑叶提取液的降血糖作用是通过两个途径实现的:一是通过生物碱DNJ(1-脱氧野尻霉素)对二糖类分解酶活性产生抑制作用,从而抑制小肠对双糖的吸收,降低食后血糖的高峰值(DNJ在植物界中,唯桑叶独有);二是通过桑叶生物碱fagomine及桑叶多糖促进β细胞分必胰岛素,而胰岛素可以促进细胞对糖的利用、肝糖原合成以及改善糖代谢,最终达到降血糖的效果。桑叶提取液的多羟基去甲莨菪碱具有很强的糖苷酶抑制作用;在桑叶提取液中还含γ-氨基丁酸,能刺激胰岛素的分泌从而降低血糖。
南瓜汁,南瓜果实含有丰富的营养物质,如瓜氨酸、天门氨酸、葫芦巴碱、腺嘌呤、果胶、甘露醇以及多种维生素和微量元素铬、锌、铜等。南瓜具有补中、补肝气、益心气、益肺气、益精气的作用,而气虚是糖尿病的主要病因,因此治疗的关键一部分就在于益气补气,南瓜与龙眼肉的结合,能起到补气的作用。同时,南瓜中所含的南瓜多糖是南瓜主要的降血糖活性成分,南瓜多糖还具有一定降血脂的功效。南瓜中的铬含量居各类蔬菜之首,可促进体内胰岛素的释放,使糖尿病患者胰岛素分泌正常,这对降血糖十分有效。本发明在制作南瓜汁的过程中加入适量酒精度为38%的食用酒精进行打浆,在打浆的过程中,南瓜中降血糖的有效成分就溶入到酒精中从而提取到所需的有效成分。
有益效果:
1、本百香果龙眼果酒综合了龙眼果和百香果的营养,再通过其他原料组分的相互配合,使本果酒营养丰富;通过龙眼的甜味和百香果的酸涩味相互调和以及本发明的酿造工艺,能调和出口感好、香味足、色泽好、质量稳定的果酒成品;本酿造方法不仅能很大程度地保留百香果和龙眼果的各种功效,而且解决了龙眼和百香果的食用有季节性的问题。
2、龙眼肉性属温热,性热助火;龙眼壳甘;温,具散风疏表,凉血清热之功;龙眼核微苦,味涩,有收湿功效,龙眼壳和龙眼核一个祛风,一个祛湿,都是泄的,而龙眼肉的补的,三者药效相结合,补泻平衡,比较平和,能达到很好的保健效果;龙眼叶淡、平,有清热解毒,燥湿的功效,能促进调和以上三者药效的平衡关系,使保健的效果达到最大化,同时能解决单吃龙眼容易上火的问题。
3、本发明在酿制过程中,通过百香果、龙眼核本身具有的降血糖作用,再加入了其他的降血糖原料,使各原料中降血糖的有效组分相互融合,能充分发挥各组分的作用,使酿成的百香果龙眼果酒降血糖的效果更好,解决了各原料单一使用时的效果不够理想的问题。通过百香果、龙眼核粉、南瓜汁、桑叶提取液的协同作用,本果酒饮用后能调节血糖,经试用统计,降糖率达88%,对糖尿病的防治有突出的作用,并且无毒副作用,避免了糖尿病患者服用化学降糖药出现的各种副作用。
4、本发明在配方中加入了龙眼壳、龙眼核、百香果壳,三者在果实中的占比较大,本发明通过回收利用果壳和果核,不仅能减少原料的浪费,而且能减少果实在食用或使用过程产生垃圾,减轻环境负担。
具体实施方式
下面结合具体的实施例对本发明做进一步的说明。
实施例1
一种百香果龙眼果酒,由以下重量份数的原料酿造而成:百香果内容物56份,龙眼果肉65份,水27份,龙眼核粉13份、龙眼壳粉9份、龙眼叶粉7份,百香果壳提取液12份,桑叶提取液7份,南瓜汁6份,酿酒酵母0.19份,果胶酶0.05份,高岭土0.18份;
所述百香果内容物为百香果除壳后的所有物质。
上述的百香果龙眼果酒的酿造方法如下:
(1)将龙眼果去壳、去核,得到龙眼肉,将百香果去壳得到百香果内容物,将6.5kg龙眼肉、5.6kg百香果内容物和2.7kg水混合打浆,得到龙眼百香果原浆;
(2)在步骤(1)制得的龙眼百香果原浆中加入19g酿酒酵母进行发酵,发酵温度为26℃,发酵时间为14天,发酵完成后得到发酵酒;
(3)将龙眼核、龙眼壳和龙眼叶清洗干净后烘干,分别磨成200目的粉末,得到龙眼核粉、龙眼壳粉和龙眼叶粉;
(4)在步骤(2)制得的发酵酒中加入1.3kg龙眼核粉、0.9kg龙眼壳粉和0.7kg龙眼叶粉,混合均匀,密封静置7天,得混合果酒液;
(5)在步骤(4)制得的混合果酒液中加入1.2kg百香果壳提取液、0.6kg南瓜汁和0.7kg桑叶提取液,混合均匀,密封静置55天,过滤除渣,得到百香果龙眼果酒半成品;
百香果壳提取液的制备:将百香果壳洗净,然后烘干,粉碎,得百香果壳粉末;取0.5kg百香果壳粉末置于容器中,再倒入0.75kg酒精度为38%的食用酒精至完全浸没百香果壳粉末,静置35min后,超声波振荡20min,超声波的功率为300W,温度为20℃,水位为80,过滤,取滤液,完成提取,按上述方法将百香果壳粉末进行反复提取三次,并收集三次的滤液混合均匀,得到百香果壳提取液。
南瓜汁的制备:取1kg生鲜的南瓜,切碎后打浆,在打浆时加入0.4kg酒精度为38%的食用酒精进行混合打浆,过滤后取滤液,即可得到南瓜汁。
桑叶提取液的制备:取1kg生鲜的桑叶,切碎后用水提取3次,每次所用的水的质量为7kg,每次提取4h,过滤,合并三次水提液后进行浓缩,制成干膏,粉碎后取0.5kg碎末加入1kg酒精度为45%的食用酒精中,静置25min后,超声波振荡20min,超声波的功率为250W,温度为20℃,水位为80,过滤,取滤液进行离心,离心后取上清液即为桑叶提取液。
(6)将步骤(5)制得的百香果龙眼果酒半成品在28℃经过5个月陈酿后,先加入5g果胶酶混合均匀,放置24h后,再加入18g高岭土混合均匀,静置7天后,取上清液即为百香果龙眼果酒。
实施例2
一种百香果龙眼果酒,由以下重量份数的原料制成:百香果内容物50份,龙眼果肉60份,水25份,龙眼核粉10份、龙眼壳粉8份、龙眼叶粉5份,百香果壳提取液10份,桑叶提取液5份,南瓜汁5份,酿酒酵母0.16份,果胶酶0.04份,高岭土0.16份。
上述的百香果龙眼果酒的酿造方法如下:
(1)将龙眼果去壳、去核,得到龙眼肉,将百香果去壳得到百香果内容物,将6kg龙眼肉、5kg百香果内容物和2.5kg水混合打浆,得到龙眼百香果原浆;
(2)在步骤(1)制得的龙眼百香果原浆中加入16g酿酒酵母进行发酵,发酵温度为25℃,发酵时间为15天,发酵完成后得到发酵酒;
(3)将龙眼核、龙眼壳和龙眼叶清洗干净后烘干,分别磨成100目的粉末,得到龙眼核粉、龙眼壳粉和龙眼叶粉;
(4)在步骤(2)制得的发酵酒中加入1kg龙眼核粉、0.8kg龙眼壳粉和0.5kg龙眼叶粉,混合均匀,密封静置6天,得混合果酒液;
(5)在步骤(4)制得的混合果酒液中加入1kg百香果壳提取液、0.5kg南瓜汁和0.5kg桑叶提取液,混合均匀,密封静置50天,过滤除渣,得到百香果龙眼果酒半成品;
百香果壳提取液的制备:将百香果壳洗净,然后烘干,粉碎,得百香果壳粉末;取0.4kg百香果壳粉末置于容器中,再倒入0.6kg的酒精度为38%的食用酒精至完全浸没百香果壳粉末,静置30min后,超声波振荡15min,超声波的功率为350W,温度为20℃,水位为80,过滤,取滤液,完成提取,按上述方法将百香果壳粉末进行反复提取三次,并收集三次的滤液混合均匀,得到百香果壳提取液。
南瓜汁的制备:取1kg生鲜的南瓜,切碎后打浆,在打浆时加入0.3kg酒精度为38%的食用酒精进行混合打浆,过滤后取滤液,即可得到南瓜汁。
桑叶提取液的制备:取1kg生鲜的桑叶,切碎后用水提取3次,每次所用的水的质量为7.5kg,每次提取3.5h,过滤,合并三次水提液后进行浓缩,制成干膏,粉碎后取0.5kg碎末加入0.8kg酒精度为45%的食用酒精中,静置20min后,超声波振荡30min,超声波的功率为150W,温度为20℃,水位为80,过滤,取滤液进行离心,离心后取上清液即为桑叶提取液。
(6)将步骤(5)制得的百香果龙眼果酒半成品在25℃经过6个月陈酿后,先加入4g果胶酶混合均匀,放置24h后,再加入16g高岭土混合均匀,静置5天后,取上清液即为百香果龙眼果酒。
实施例3
一种百香果龙眼果酒,由以下重量份数的原料制成:百香果内容物60份,龙眼果肉70份,水30份,龙眼核粉15份、龙眼壳粉10份、龙眼叶粉8份,百香果壳提取液15份,桑叶提取液10份,南瓜汁7份,酿酒酵母0.22份,果胶酶0.06份,高岭土0.20份;
上述百香果龙眼果酒的酿造方法如下:
(1)将龙眼果去壳、去核,得到龙眼肉,将百香果去壳得到百香果内容物,将7kg龙眼肉、6kg百香果内容物和3kg凉开水混合打浆,得到龙眼百香果原浆;
(2)在步骤(1)制得的龙眼百香果原浆中加入22g酿酒酵母进行发酵,发酵温度为28℃,发酵时间为10天,发酵完成后得到发酵酒;
(3)将龙眼核、龙眼壳和龙眼叶清洗干净后烘干,分别磨成120目的粉末,得到龙眼核粉、龙眼壳粉和龙眼叶粉;
(4)在步骤(2)制得的发酵酒中加入1.5kg龙眼核粉、1kg龙眼壳粉和0.8kg龙眼叶粉,混合均匀,密封静置7天,得混合果酒液;
(5)在步骤(4)制得的混合果酒液中加入1.5kg百香果壳提取液、0.7kg南瓜汁和1kg桑叶提取液,混合均匀,密封静置60天,过滤除渣,得到百香果龙眼果酒半成品;其中,百香果壳提取液、南瓜汁和桑叶提取液的制备同实施例1;
(6)将步骤(5)制得的百香果龙眼果酒半成品在30℃经过4个月陈酿后,先加入6g果胶酶混合均匀,放置24h后,再加入20g高岭土混合均匀,静置6天后,取上清液即为百香果龙眼果酒。
实施例1-3酿造所得的百香果龙眼果酒综合了龙眼果、百香果、南瓜、桑叶、龙眼叶、龙眼核、龙眼壳和百香果壳的营养元素、功能及酒的特性,营养丰富,口感好,受到了广大试用者的喜爱。百香果龙眼果酒不仅能降低血糖,防治糖尿病,常年饮用也可强壮身体,提高免疫力,本百香果龙眼果酒清香可口,相比化学降糖药而言,饮用者更容易接受,更喜欢饮用,而且本果酒健康安全,适宜做日常保健品。
将实施例1-3酿造所得的百香果龙眼果酒随机分给80个群众试用,试用者对本果酒进行了感官方面的评分,具体见表1。

从表1可以看出,试用者对本百香果龙眼果酒在感官方面的评分较高,总分值是100分,本果酒综合平均了80个试用者的分值,得到了93.7分。
在外观和色泽方面,本发明在步骤(6)中,采用果胶酶和高岭土进行混合使用来达到澄清的效果。本发明经过多次试验发现,果胶酶可以分解果胶质,使其粘度下降,从而加速果胶的沉淀,但是,单用果胶酶处理,则澄清效果和稳定性并不理想;如果单用高岭土,则不能去除果胶,仍会存在果胶浑浊;本发明经过果胶酶分解了果胶质后,再加入高岭土则更容易吸附沉淀,澄清效果更好,果酒更稳定。经试验,实施例制备所得的百香果龙眼果酒经过放置3个月后,外观仍清澈透亮,光泽度好,无悬浮物,说明本果酒的稳定性好。
在香气方面,本发明针对百香果和龙眼果的特性,经过特殊的处理步骤,使得酒香柔和,另外添加了百香果壳提取液和龙眼壳粉进行发酵,最后酿出的百香果龙眼果酒果香浓郁,香气怡人,能增进消费者的食欲。
在口感方面,经本发明的酿造工艺及综合各原料的特点,能避免原料单吃口感不够理想等问题,达到酸甜适宜,醇厚丰满的效果
总体来说,本百香果龙眼果酒在外观、色泽、香气、口感方面都得到了试用者的认可,受到试用者的喜欢。
另外,将实施例1-3酿造所得的百香果龙眼果酒分给100例糖尿病患者试用,糖尿病患者每日早晚各饮用一次百香果龙眼果酒,每次30mL,经统计降糖有效率达88%。有效降糖的评判标准为:饮用本百香果龙眼果酒的1个月内,空腹血糖和餐后2h血糖的降低值均达到3mmol/L以上。
本发明还记录了上述100例糖尿病患者试用中的典型应用例,试用组1-3为依次使用实施例1-3制备所得的百香果龙眼果酒,对照组为患者服用普通的化学降糖药。具体见表2。

备注:血糖正常值:空腹血糖3.9-6.1mmol/L(高于7.0mmol/L则诊断为糖尿病);餐后2h血糖<7.8mmol/L。
从表2可以看出,本百香果龙眼果酒的降血糖效果十分明显,能有效地对糖尿病进行治疗。试用组与对照组相比,在不服用化学降糖药的情况下就可以达到同样的效果,降低了服药后对身体的伤害。本果酒饮用方便,无毒副作用,对身体无害,使用者每天只需按量取用即可,能减轻饮用者的食用负担。另外,除了能治疗已经是高血糖的患者外,常年饮用本果酒也可以调节血糖,预防糖尿病。
虽然本发明已以较佳实施例揭示如上,然其并非用以限制本发明,任何本领域技术人员,在不脱离本发明的精神和范围内,当可做些许的修改和完善,因此本发明的保护范围当以权利要求书所界定的为准。
Claims (9)
1.一种百香果龙眼果酒,其特征在于,由以下重量份数的原料酿造而成:百香果内容物50-60份,龙眼果肉60-70份,水25-30份,龙眼核粉10-15份、龙眼壳粉8-10份、龙眼叶粉5-8份,百香果壳提取液10-15份,桑叶提取液5-10份,南瓜汁5-7份,酿酒酵母0.16-0.22份,果胶酶0.04-0.06份,高岭土0.16-0.20份;
所述百香果内容物为百香果除壳后的所有物质;
所述的百香果龙眼果酒的酿造方法,包括如下步骤:
(1)将龙眼果去壳、去核,得到龙眼肉,将百香果去壳得到百香果内容物,将龙眼肉、百香果内容物和水混合打浆,得到龙眼百香果原浆;
(2)在步骤(1)制得的龙眼百香果原浆中加入酿酒酵母进行发酵,发酵温度为25-28℃,发酵时间为10-15天,发酵完成后得到发酵酒;
(3)将龙眼核、龙眼壳和龙眼叶清洗干净后烘干,分别磨成100-200目的粉末,得到龙眼核粉、龙眼壳粉和龙眼叶粉;
(4)在步骤(2)制得的发酵酒中加入龙眼核粉、龙眼壳粉和龙眼叶粉,混合均匀,密封静置6-7天,得混合果酒液;
(5)在步骤(4)制得的混合果酒液中加入百香果壳提取液、南瓜汁和桑叶提取液,混合均匀,密封静置50-60天,过滤除渣,得到百香果龙眼果酒半成品;
(6)将步骤(5)制得的百香果龙眼果酒半成品在25-30℃经过4-6个月陈酿后,先加入果胶酶混合均匀,放置24h后,再加入高岭土混合均匀,静置5-7天后,取上清液即为百香果龙眼果酒。
2.如权利要求1所述的百香果龙眼果酒,其特征在于,由以下重量份数的原料酿造而成:百香果内容物56份,龙眼果肉65份,水27份,龙眼核粉13份、龙眼壳粉9份、龙眼叶粉7份,百香果壳提取液12份,桑叶提取液7份,南瓜汁6份,酿酒酵母0.19份,果胶酶0.05份,高岭土0.18份。
3.如权利要求1所述的百香果龙眼果酒,其特征在于:步骤(5)中,所述百香果壳提取液的制备方法如下:将百香果壳洗净,然后烘干,粉碎,得百香果壳粉末;取百香果壳粉末置于容器中,再倒入1.5倍重量的酒精度为38%的食用酒精至完全浸没百香果壳粉末,静置30-40min后,超声波振荡15-20min,过滤,取滤液,完成提取,按上述百香果壳提取液的制备方法将百香果壳粉末进行反复提取三次,并收集三次的滤液混合均匀,得到百香果壳提取液。
4.如权利要求1所述的百香果龙眼果酒,其特征在于:步骤(5)中,所述桑叶提取液的制备方法如下:取生鲜的桑叶,切碎后用水提取3次,每次所用的水的质量为桑叶质量的7-8倍,每次提取3-4h,过滤,合并三次水提液后进行浓缩,制成干膏,粉碎后将碎末加入酒精度为45%的食用酒精至完全浸没,静置20-30min后,超声波振荡20-30min,过滤,取滤液进行离心,离心后取上清液即为桑叶提取液。
5.如权利要求1所述的百香果龙眼果酒,其特征在于:步骤(5)中,南瓜汁的制备方法如下:取生鲜的南瓜,切碎后打浆,过滤后取滤液,即可得到南瓜汁。
6.如权利要求5所述的百香果龙眼果酒,其特征在于:所述南瓜在打浆时加入0.3-0.5倍重量的食用酒精进行混合打浆,所述食用酒精的酒精度为38%。
7.如权利要求1所述的百香果龙眼果酒,其特征在于:步骤(2)中,所述发酵温度为26℃,发酵时间为14天。
8.如权利要求1所述的百香果龙眼果酒,其特征在于:步骤(6)中,百香果龙眼果酒半成品的陈酿温度为28℃,陈酿时间为5个月。
9.如权利要求1所述的百香果龙眼果酒,其特征在于:步骤(6)中,加入高岭土混合均匀,静置7天后,取上清液即为百香果龙眼果酒。
