本发明公开了一种具有健脾益胃、美容养颜功能的皮冻及其制备方法。该皮冻由一定计量配比的猪皮与茯苓、白扁豆、山药、莲肉、芡实、麦芽、砂仁、陈皮、甘草等药食同源成分,以及蜂蜜、魔芋胶、卡拉胶、结冷胶、氯化钙以及香辛辅料组成,制成具有健脾益胃、美容养颜功能的皮冻。本发明所制成的皮冻外观光滑、色泽鲜艳,气味香甜,口感弹嫩软滑、清甜滋润,既增加了皮冻的营养价值,更赋予皮冻健脾益胃保健功能。

技术领域
本发明涉及将中药制剂技术应用于休闲食品的技术领域,具体涉及一种具有健脾益胃、美容养颜功能的皮冻及其制备方法。
背景技术
随着社会的进步与发展,工作等的忙碌与压力使很多人出现的腹满作胀、脘腹痛、食少便溏、身重乏力、肢冷,便血、崩漏、紫癜等症都很有可能是脾脏出现了问题,而大多数人并没有护脾的意识。然而,脾脏是机体最大的免疫器官,占全身淋巴组织总量的25%,含有大量的淋巴细胞和巨噬细胞,是机体细胞免疫和体液免疫的中心,不可放松对其的保护;此外,我国有肠胃病患者1.2亿,慢性胃炎发病率高达30%,是当之无愧的“胃病大国”。脾胃是人体纳运食物及化生气血最重要的脏腑,保护脾胃应是当代人的重中之重。
我国素有食疗的饮食习惯,通过食物来保养、疗养身体。通过饮食护理脾胃、预防、治疗脾胃病,不仅符合广大人群的喜好与习惯,更能使人们一定程度上远离苦涩、携带不便、口感不好的药物。
动物皮冻是一种低脂肪、低热量和高蛋白的保健美容休闲食品,尤其是用猪皮制成的产品,脂肪含量极低,富含胶原蛋白,不仅软滑弹嫩、富有嚼劲、入口即化、美味可口,还具有美容养颜、抗衰老及防癌等特殊功效,并且适合减肥等人群食用。然而目前市场上猪皮冻的休闲食品较少,其作为一种具有一定保健功能的休闲食品而开发有会广阔的市场前景。
我国有悠久的的药食同源传统和丰富的具有优良保健功能的食品原料资源,为具有保健功能的食品的研究提供了条件。
发明内容
本发明的目的在于克服上述现有技术存在的缺陷,提供一种一种具有健脾益胃、美容养颜功能的猪皮冻的配方及其制备方法,将皮冻与《灵验良方汇编》的大健脾糕结合,将猪皮与茯苓、白扁豆、山药、莲肉、芡实等药食同源成分,以及蜂蜜、魔芋胶、卡拉胶、结冷胶、氯化钙、香辛料辅料等制备而成,所制成的皮冻外观光滑弹嫩,气味香甜,口感细嫩软滑、清甜滋润、入口即化,既增加了皮冻的营养价值,更赋予皮冻健脾养胃、美容养颜等保健功能。
本发明的目的是通过以下技术方案来实现的:
本发明涉及一种具有健脾益胃、美容养颜功能的猪皮冻,所述皮冻的主要原料按下列重量份配比:猪皮100~110份、药食同源健脾药材提取液30~35份、卡拉胶20~35份、魔芋胶10~15份、结冷胶1~2份、氯化钙0.5~1份、蜂蜜5~10份、料酒5~15份、八角0.05~0.08份,姜0.05~0.07份。
本发明中所述药食同源健脾药材提取液中的药材按下列重量份配比:白扁豆(炒去壳)6~10份,山药(炒)6~10份,莲子(去心)6~10份,芡实(去壳,净炒)6~10份,茯苓0~10份,麦芽(炒)2~6份,砂仁0~6份,甘草(炙)2~6份,陈皮1~3份。
作为本发明的一个实施方案,所述皮冻的主要原料按下列重量份配比:猪皮105份、药食同源健脾药材提取液32份、卡拉胶22份、魔芋胶15份、结冷胶1.5份、氯化钙0.6份、蜂蜜8份、料酒10份、八角0.07份,姜0.05份;其中,所述药食同源健脾药材提取液中的药材按下列重量份配比:白扁豆8份,山药8份,莲子8份,芡实8份,茯苓8份,麦芽4份,砂仁4份,陈皮2份,甘草4份。
本发明还涉及一种前述的具有健脾益胃、美容养颜功能的猪皮冻的制备方法,所述方法包括如下步骤:
A、原料预处理:选择符合食品卫生要求的、新鲜的猪皮,漂洗去污,刮去毛根,加入料酒、八角、姜预煮去腥,用刀刮去皮下脂肪后洗净,根据工艺需要切成细条状;
B、药材提取:选择药食同源健脾药材,进行提取浓缩,得药食同源健脾药材提取液;
C、熬煮:以步骤A处理而得的细条状猪皮为原料,加入水进行熬煮,并以预设速率沿同一方向搅拌;
D、胶液混合:将所述卡拉胶、魔芋胶、结冷胶、氯化钙加入到步骤C熬煮的猪皮胶中,混合;
E、煮胶:选择最佳煮胶温度,在同向搅拌条件下煮胶;
F、调配:待步骤E制得的混合胶液降至预设温度后,加入所述药食同源健脾药材提取液和蜂蜜调味,恒温熬制,搅拌均匀;
G、杀菌:在82~87℃保持10~20min进行灭菌;
H、入模并密封,静置冷却至室温保藏即可。
步骤B中,所述提取浓缩为:按配方取白扁豆(炒去壳)6~10份,山药(炒)6~10份,莲子(去心)6~10份,芡实(去壳,净炒)6~10份,茯苓0~10份,麦芽(炒)2~6份,砂仁0~6份,甘草(炙)2~6份,陈皮1~3份)加水提取三次,合并提取液,浓缩至浓度为0.05g原生药/ml的溶液,4000r/min离心15min,取上清液,进一步浓缩至浓度为0.1g原生药/ml的溶液,即得所述药食同源健脾药材提取液。即所述药食同源健脾药材提取液的浓度为0.1g原生药/ml。
上述加水提取三次中,第一次加水量为药重的30倍,第二次加水量为药重的15倍,第三次加水量为药重的5倍。
步骤C中,细条状猪皮和水以质量比为1∶2.5~3.5的料水比例进行熬煮,熬煮至胶液浸出且细条状猪皮有融化且变少。
优选的,步骤C中,熬煮时间为2~4小时。
步骤D中,复配胶与猪皮胶的复配比为15∶85;所述复配胶为卡拉胶与魔芋胶的混合胶。
步骤D中,在混合胶液中,复配胶浓度为14.2wt%,结冷胶浓度为0.20wt%,氯化钙浓度为0.15wt%;所述复配胶为质量比为9:4的卡拉胶与魔芋胶的混合胶。
步骤E中,所述最佳煮胶温度为72℃~78℃,煮制时间为8~10min,并按同一方向匀速搅拌。防止焦壁和混入过多气泡,使胶液充分混匀。
步骤F中,待步骤E制得的混合胶液降至预设温度后,还可添加果汁和/或乳粉。
药理分析
本发明的药食同源健脾药材提取液中的药材配方选自《灵验良方汇编》卷一的大健脾糕,原方有健脾和胃、渗湿利水、宁心安神等功效。
原方:茯苓8两,白扁豆(炒去壳)8两,山药(炒)8两,莲子(去心)8两,芡实(去壳,净炒)8两,麦芽(炒)4两,砂仁4两,广皮2两,甘草(炙)4两,米5升(半糯米、半晚米,炒至老黄色,同上诸药磨为粉)。饥时用白滚汤加白糖调服。
山药:味甘,平;入肺、脾、肾经;有健脾补肺、固肾益精等功效;治脾虚泄泻,久痢,虚劳咳嗽,消渴等症。
莲子:味甘、涩,性平;归脾、肾、心经;有补脾止泻,止带,益肾涩精,养心安神等功效;主治脾虚泄泻,心悸失眠等症。
芡实:味甘、涩,性平;归脾、肾经;有益肾固精,补脾止泻,除湿止带等功效;主治遗精滑精,遗尿尿频,脾虚久泻,白浊带下等症。
白扁豆:味甘、微温,入脾胃二经;有补脾胃,和中化湿,消暑解毒的功效,主治脾胃虚弱、泄泻、呕吐、暑湿内蕴、脘腹胀痛等症,又能解酒毒。
茯苓:味甘、淡,性平;归心、肺、脾、肾经;有利水渗湿,健脾,宁心等功;主治水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠。
麦芽:味甘,平;归脾、胃经;有行气消食,健脾开胃等功效;主治食积不消,脘腹胀痛,脾虚食少,肝郁胁痛,肝胃气痛等症。
甘草:味甘,性平;归心、肺、脾、胃经;有补脾益气,清热解毒,祛痰止咳,缓急止痛,调和诸药等功效;主治脾胃虚弱,倦怠乏力,心悸气短,咳嗽痰多,脘腹、四肢挛急疼痛,痈肿疮毒,缓解药物毒性、烈性。
砂仁:味辛,性温;归脾、胃、肾经;有化湿开胃,温脾止泻,理气安胎等功效;主治湿浊中阻,脘痞不饥,脾胃虚寒,呕吐泄泻,妊娠恶阻,胎动不安。
广皮:味苦、辛,性温;归肺、脾经;有理气健脾,燥湿化痰等功效;主治脘腹胀满,食少吐泻,咳嗽痰多。
与现有技术相比,本发明具有如下有益效果:
本发明将《灵验良方汇编》卷一的大健脾糕与猪皮冻相结合,用现代技术、药食同源成分制成一款具有健脾养胃、美容养颜功效的猪皮冻,达到表本兼治,治内达表的效果,使脾胃和身体可以真正地、根本上地保持和恢复健康,且产品美味可口、食用方便,是极为必要的,且有着广阔的市场。
具体实施方式
下面结合实施例对本发明进行详细说明。以下实施例将有助于本领域的技术人员进一步理解本发明,但不以任何形式限制本发明。应当指出的是,对本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干调整和改进。这些都属于本发明的保护范围。
实施例1
本实施例涉及一种具有健脾养胃、美容养颜保健功能的皮冻,其原料按下列重量份配比:猪皮105份、药食同源健脾药材提取液32份、卡拉胶22份、魔芋胶15份、结冷胶1.5份、氯化钙0.6份、蜂蜜8份、料酒10份、八角0.07份,姜0.05份;其中药食同源健脾药材提取液中的药材按下列重量份配比:茯苓8份,白扁豆(炒去壳)8份,山药(炒)8份,莲子(去心)8份,芡实(去壳,净炒)8份,麦芽(炒)4份,砂仁4份,陈皮2份,甘草(炙)4份。
该皮冻的制备方法包括以下步骤:
A、原料预处理:选择符合食品卫生要求的、新鲜的猪皮,漂洗去污,刮去毛根,加入料酒、香辛料(八角、姜片)预煮去腥,用刀刮去皮下脂肪后洗净,根据工艺需要切成细条状;
B、药材提取:先取上述配方重量份的茯苓、白扁豆、山药、莲肉、芡实、麦芽、砂仁、陈皮、甘草,加水提取三次:第一次加水(药重的)30倍,第二次加水(药重的)15倍,第三次加水(药重的)5倍,水浴一段时间后过滤,合并提取液,浓缩至浓度为0.05g原生药/ml的溶液,4000r/min离心15min,取上清液,进一步浓缩至浓度为0.1g原生药/ml的溶液,得药食同源健脾药材提取液,备用;
C、熬煮:以步骤A处理而得的细条状猪皮为原料,加水进行煎煮(料水比约为1∶3,水淹没略高于猪皮),熬煮2~4小时(胶液充分浸出且猪皮丝略有融化而变少,具体时间依熬煮温度而变),以一定速率沿同一方向不停搅拌;
D、胶液混合:将所述卡拉胶、魔芋胶、结冷胶、氯化钙加入到步骤C熬煮的猪皮胶中,混合;
E、煮胶:选择最佳煮胶温度(75℃),煮制9min,并以一定方向和速度不断搅拌;
F、调配:待混合胶液降至一定温度后,加入药食同源健脾药材提取液和蜂蜜调味,恒温熬制一段时间,搅拌均匀;
G、杀菌:在85℃保持15min进行灭菌;
H、入模:趁热将混合液倒入已灭菌的容器并密封;
I、静置冷却至室温后冷藏。
上例选自《灵验良方汇编》卷一的大健脾糕,原方有健脾和胃、渗湿利水、宁心安神等功效。本例在此基础上还增加了猪皮和生姜、八角等药食同源的原料,更增添其滋阴润肺、美容养颜等功效。
实施例2
本实施例涉及一种具有健脾养胃、美容养颜保健功能的皮冻,其原料按下列重量份配比:猪皮100份、药食同源健脾药材提取液30份、卡拉胶20份、魔芋胶10份、结冷胶1份、氯化钙0.5份、蜂蜜5份、料酒5份、八角0.05份,姜0.06份;其中药食同源健脾药材提取液中的药材按下列重量份配比:茯苓1份,白扁豆(炒去壳)6份,山药(炒)6份,莲子(去心)6份,芡实(去壳,净炒)6份,麦芽(炒)2份,砂仁1份,陈皮1份,甘草(炙)2份。
该皮冻的制备方法包括以下步骤:
A、原料预处理:选择符合食品卫生要求的、新鲜的猪皮,漂洗去污,刮去毛根,加入料酒、香辛料(八角、姜片)预煮去腥,用刀刮去皮下脂肪后洗净,根据工艺需要切成细条状;

该皮冻的制备方法包括以下步骤:

综上所述,采用上述制备方法,本发明将茯苓、山药、陈皮等药的有效成分提取、浓缩、纯化,加入猪皮胶与卡拉胶、魔芋胶等,所制成的皮冻外观晶莹光滑、透亮美观,色泽鲜艳、口感细嫩弹滑、入口即化、清甜滋润,气味香甜,既增加了皮冻的营养,更赋予皮冻不同的风味口感和健脾养胃、美容养颜等保健功能。

1.一种具有健脾益胃、美容养颜功能的皮冻,其特征在于,所述皮冻的主要原料按下列重量份配比:猪皮100~110份、药食同源健脾药材提取液30~35份、卡拉胶20~35份、魔芋胶10~15份、结冷胶1~2份、氯化钙0.5~1份、蜂蜜5~10份、料酒5~15份、八角0.05~0.08份,姜0.05~0.07份。
2.根据权利要求1所述的具有健脾益胃、美容养颜功能的皮冻,其特征在于,所述药食同源健脾药材提取液中的药材按下列重量份配比:白扁豆6~10份,山药6~10份,莲子6~10份,芡实6~10份,茯苓0~10份,麦芽)2~6份,砂仁0~6份,甘草2~6份,陈皮1~3份。
3.根据权利要求1所述的具有健脾益胃、美容养颜功能的皮冻,其特征在于,所述皮冻的主要原料按下列重量份配比:猪皮105份、药食同源健脾药材提取液32份、卡拉胶22份、魔芋胶15份、结冷胶1.5份、氯化钙0.6份、蜂蜜8份、料酒10份、八角0.07份,姜0.05份;其中,所述药食同源健脾药材提取液中的药材按下列重量份配比:白扁豆8份,山药8份,莲子8份,芡实8份,茯苓8份,麦芽4份,砂仁4份,陈皮2份,甘草4份。
4.一种根据权利要求1~3中任一项所述的具有健脾益胃、美容养颜功能的皮冻的制备方法,其特征在于,所述方法包括如下步骤:
A、原料预处理:选择符合食品卫生要求的、新鲜的猪皮,漂洗去污,刮去毛根,加入料酒、八角、姜预煮去腥,用刀刮去皮下脂肪后洗净,根据工艺需要切成细条状;
B、药材提取:选择药食同源健脾药材,进行提取浓缩,得药食同源健脾药材提取液;
C、熬煮:以步骤A处理而得的细条状猪皮为原料,加入水进行熬煮,并以预设速率沿同一方向搅拌;
D、胶液混合:将所述卡拉胶、魔芋胶、结冷胶、氯化钙加入到步骤C熬煮的猪皮胶中,混合;
E、煮胶:选择最佳煮胶温度,在同向搅拌条件下煮胶;
F、调配:待步骤E制得的混合胶液降至预设温度后,加入所述药食同源健脾药材提取液和蜂蜜调味,恒温熬制,搅拌均匀;
G、杀菌:在82~87℃保持10~20min进行灭菌;
H、入模并密封,静置冷却至室温保藏即可。
5.根据权利要求4所述的具有健脾益胃、美容养颜功能的皮冻的制备方法,其特征在于,步骤B中,所述提取浓缩为:按配方取白扁豆6~10份,山药6~10份,莲子6~10份,芡实6~10份,茯苓0~10份,麦芽2~6份,砂仁0~6份,甘草2~6份,陈皮加水提取三次,合并提取液,浓缩至浓度为0.05g原生药/ml的溶液,4000r/min离心15min,取上清液,进一步浓缩至浓度为0.1g原生药/ml的溶液,即得所述药食同源健脾药材提取液。
6.根据权利要求4所述的具有健脾益胃、美容养颜功能的皮冻的制备方法,其特征在于,步骤C中,细条状猪皮和水以质量比为1∶2.5~3.5的料水比例进行熬煮,熬煮至胶液浸出且细条状猪皮有融化且变少。
7.根据权利要求4所述的功能性彩色皮冻的制备方法,其特征在于,步骤D中,复配胶与猪皮胶的复配比为15∶85;所述复配胶为卡拉胶与魔芋胶的混合胶。
8.根据权利要求4所述的功能性彩色皮冻的制备方法,其特征在于,步骤D中,在混合胶液中,复配胶浓度为14.2wt%,结冷胶浓度为0.20wt%,氯化钙浓度为0.15wt%;所述复配胶为质量比为9:4的卡拉胶与魔芋胶的混合胶。
9.根据权利要求4所述的具有健脾益胃、美容养颜功能的皮冻的制备方法,其特征在于,步骤E中,所述最佳煮胶温度为72℃~78℃,煮制时间为8~10min,并按同一方向匀速搅拌。
10.根据权利要求4所述的具有健脾益胃、美容养颜功能的皮冻的制备方法,其特征在于,步骤F中,待步骤E制得的混合胶液降至预设温度后,还可添加果汁和/或乳粉。
