Abstract
一种干制的即食谷物产品,包含有包括含原始生物微生物的涂料或夹心料的胶凝化淀粉基体。该谷物产品可以做成猫狗食品、早餐谷物食品、婴儿谷物食品或方便食品的形式。该谷物产品的制作方法是煮制淀粉源形成胶凝化淀粉基体;将胶凝化基体做成碎块;干燥这些碎块;用含原始生物微生物的载体涂覆或填充这些碎块。
Description
本发明涉及一种含原始生物(probiotics)微生物的即食谷物产品;例如猫狗食品、早餐谷物食品、婴儿谷物食品或方便食品。在食用中,该谷物产品在人或动物食用时,对其胃肠道具有有益效果,且从而对人或动物具有有益效果。本发明也涉及一种制造该谷物产品的方法,和涉及在人或动物的胃肠道中促进其有益效果的方法。
原始生物微生物是通过改善宿主肠道内微生物平衡而能对宿主以有益影响的微生物(Fuller,R;1989;
J.Applied Bacteriology,66:365-378),一般地,原始生物微生物产生有机酸例如乳酸和醋酸,它们抑制病原细菌例如产气荚膜梭状芽孢杆菌和幽门螺杆菌的生长。因此,据信原始生物细菌在处理和防止由病原细菌引起的环境方面是有用的。而且据信原始生物微生物能抑制腐败细菌的生长和活性,从而抑制有毒胺化合物的产生。也据信原始生物微生物激活宿主的免疫功能。
因此就有了很大的兴趣将原始生物微生物加入食品中。例如,许多含原始生物微生物的发酵乳制品在市场上有售。这些产品通常做成酸奶,且一个例子是LCl酸奶(Societe des Produits Nestle SA)。几种含原始生物微生物的初期的和后继配方产品也在市场上有售;例如BIO NANR配方产品(Societe desProduits Nestle SA)。
同样地,对于动物,已有将原始生物微生物放入动物饲料的兴趣。例如,俄罗斯专利2018313公开了一种基于牛奶且其含某种双歧细菌和链球菌的粉状、喷雾干燥的动物饲料。该动物饲料首先目标是牲畜,虽然它提及了该饲料可以喂养宠物。
但是,将原始生物微生物放入食品中存在两个主要问题。首先,该食品必须做成对消费者适口的形式。其次,原始生物微生物必须在贮藏期间保持活性。对于即食谷物产品,第二个问题是特别成问题的。这些谷物产品不象发酵乳品,需要长的贮藏活性;例如至少一年,而许多原始生物微生物的细胞数在一或两天时间内就完全下降。如果食品水分活度在约0.5以上时,特别会出现这种情况。这种情况通常是对于猫狗食品而言的。
因此需要一种含有原始生物微生物、非常适口的且贮藏稳定的即食谷物产品。
因此,在一方面,本发明提供一种干的即食谷物产品,它包含有包括含有原始生物涂料或夹心料的胶凝化淀粉基体。
已经发现当按配方将涂料或夹心料放入干谷物产品中时,在延长期内原始生物微生物保持活性。这是令人意想不到的,因为原始生物微生物一般很快逐渐死去。对于一般具有水分活度在约0.5以上的干熟化猫狗食品,尤其是这样;在该活度下原始生物微生物一般很快地死去。因此本发明提供的即食谷物食品的优点是非常适口,且含有货架稳定的原始生物微生物源。
谷物产品可以是干的猫狗食品、早餐谷物食品、婴儿谷物食品或方便食品例如压块干粮的形式。对于人吃的食品,胶凝化淀粉基体优选是薄片或膨化的形式。对于猫狗食品,胶凝化淀粉基体优选是碎块或丸的形式。该胶凝化基体优选通过挤压熟化淀粉源制造。
优选该涂料包括其中承载原始生物微生物的载体基质。该夹心料也包括其中承载原始生物微生物的载体基质。例如,该载体基质可以是蛋白消化物、脂肪、牛乳固形物、糖或粒状增香剂。
在另一个方面,本发明提供制备干即食谷物产品的方法,该方法包括将淀粉源熟化成胶凝化淀粉基体;将该胶凝淀粉基体做成块的形式,将这些块干燥;且用含有原始生物微生物的基质涂覆或填装这些块。
在一个实施方案中,通过将胶凝化基体挤压成熟化压出物,且切割并干燥该熟化压出物以形成干燥块,将胶凝化淀粉基体形成块且被干燥。该胶凝化基体在切割和干燥之后,可以使之通过挤压膨化形成膨化块。或者,这些块可以经过成片处理以形成碎片。
在另一个实施方案中,胶凝淀粉基体可以通过滚筒干燥该胶凝化淀粉基体以形成薄片,来形成碎块且被干燥。
在另一个实施方案中,胶凝淀粉基体可以通过挤压将胶凝化基体形成含有孔的熟化挤出物;且切割和干燥这些块,来形成块且被干燥。优选挤压的胶凝淀粉基体具有中央空腔来填充夹心料。

只通过实施例的方式,现在说明本发明的实施方案。本发明提供一种以包括有涂料或夹心料的胶凝淀粉基体形式的干即食谷物产品。该涂料或夹心料含原始生物微生物。该原始生物微生物选自适用于人或动物食用的,且能在人或动物肠道内改善微生物平衡的一种或多种微生物。
合适的原始生物微生物的例子包括酵母例如酵母属、德巴利氏酵母属、假丝酵母属、毕赤氏酵母属和球拟酵母属,霉菌例如曲霉属、根霉属、毛霉属和青霉属和细菌例如双歧杆菌属、拟杆菌属、梭状芽孢杆菌属、梭杆菌属、蜜蜂球菌属(Melissococcus)、丙酸杆菌属、链球菌属、肠道球菌属、乳杆菌属、葡萄球菌属、消化链球菌属、芽孢杆菌属、片球菌属、微球菌属、明串珠菌属、魏斯氏菌属、气球菌属、酒球菌属和乳杆菌属。具体的合适的原始生物微生物的例子是:啤酒酵母、凝结芽孢杆菌、地衣芽孢杆菌、枯草杆菌、双歧双歧杆菌、婴儿双歧杆菌、长双歧杆菌、尿肠球菌、粪肠球菌、嗜酸乳杆菌、消化乳杆菌、干酪乳杆菌干酪亚种、干酪乳杆菌Shirota,弯曲乳芽孢杆菌,德氏乳杆菌乳亚种、香肠乳杆菌(Lactobacillus farciminus)、加氏乳杆菌、瑞士乳杆菌、约氏乳杆菌、路氏乳杆菌、鼠李糖乳杆菌(Lactobacillus GG)、清酒乳杆菌、乳酸乳杆菌、变异微球菌、乳酸片球菌、戊糖片球菌、乳酸片球菌、嗜盐片球菌、粪链球菌、嗜热链球菌、肉葡萄球菌和木糖葡萄球菌。原始生物微生物优选粉状、干制的形式,特别对于形成芽孢的微生物以芽孢的形式存在。而且,如果需要,该原始生物微生物可以包胶,以进一步增加生存的可能性;例如用糖基质、脂肪基质或多糖基质。

该谷物产品可以随心所欲地用许多不同的方式制备。但是特别合适的制作谷物食品的方式是通过挤压熟化。这可以用本领域公知的技术来完成。例如,在一个合适的方法中,将饲料混合物喂入预处理器。该饲料混合物主要由淀粉源和例如糖、食盐、香料、调味料、维生素、矿物质、增香剂、色素、抗氧化剂、蛋白源、脂肪等其它成份组成。如果需要也可以包括不溶性纤维源;例如麦麸、玉米皮、米糠、黑麦麸等。而且,如果需要可以包括可溶性纤维源,例如菊苣纤维、菊粉、呋喃寡糖、大豆寡糖、燕麦麸浓缩物、瓜尔豆胶、角豆胶、呫吨胶等。优选所选的可溶性纤维是所选的微生物的基质,这样可溶纤维和微生物形成协同关系以促进有益效果。可溶性纤维的最大量优选约20wt%,特别是约10wt%。例如,对于猫狗食品,菊苣可以包括进来,以含有占饲料混合物重量的约20%的量,更优选约2%至约10%。
根据所需的谷物产品形式,饲料混合物的淀粉含量可以改变。例如,对干膨化谷物产品,饲料混合物优选包括最多约40wt%的淀粉。但是对于片状产品,在饲料混合物中不需要使用大量的淀粉,因为这样可以使未膨化产品成片。
在预处理器中,将水或蒸汽,或者这两者混入饲料混合物。足够的水或蒸汽混入饲料混合物用以润湿该饲料混合物。如果需要,预处理器中的饲料混合物的温度升至约60℃至约90℃。合适的预处理器在美国专利US 4752139中有描述。使饲料混合物经受预处理不是必需的,但这样做有好处。
离开预处理器,润湿的饲料接着送入挤压机,该挤压机可以是任何合适的单或双螺杆、熟化挤压机。合适的挤压机可以从Wenger Manufacturing Ine,Clextral SA,Bühler AG等获得。在通过挤压机期间,润湿的饲料通过熟化区,其中使其经过机械剪切并加热;例如最高温度高达约150℃,并经过成形区。成形区的表压根据需要调节成约300KPa至约10MPa。如果需要、将水或蒸汽,或这两者引入熟化区。在通过挤压机期间,润湿的饲料的淀粉源被胶凝化,以形成胶凝化淀粉基体。

如果要生产片状产品,这些碎块接着被送入轧片设备。合适的设备在谷物工业领域中是公知的,且广泛使用,而且可以从例如瑞士的Bühler AG购买。如果需要,这些碎块可以在轧片之前部分干燥。
这些碎块接着干燥成水分含量低于约10wt%。按常规在热空气干燥机中方便地进行干燥。对于早餐谷物食品,优选水分含量约1%至约3wt%。
这些碎块打算用作猫狗食品的话,可以是可咀嚼块的形式,这些碎块一般具有水分活度约0.5至约0.7。
打算用作食品的膨化块具有脆性,美观的结构和良好的感观特性。这些片状块也具有好的结构和感观特性。这些碎块具有令人满意的烤制谷物食品的味道。通常,碎块的密度小于约300g/l。在这一点,这些膨化或片状块通常具有水分活度约0.15至约0.3。

用以提高微生物生存能力的保护剂可以加入载体基质。合适的保护剂的例子是维生素例如维生素C和E、氨基酸和其盐例如赖氨酸、甘氨酸、半胱氨酸和谷氨酸钠,糖例如乳糖、海藻糖、蔗糖、糊精和麦芽糖糊精、和蛋白质例如牛乳蛋白质和大豆蛋白质。微量元素和矿物质也可以加入载体基质。
根据例如可口性考虑和原始生物微生物的生存能力因素来选择载体基质,因为在一些载体基质中的一些微生物生存情况好于其它基质。例如发现啤酒酵母在蛋白消化物中比在脂肪中稍微的不稳定。如果在载体基质中使用脂肪,载体基质优选含抗氧化剂以减少氧气对敏感性微生物的作用。但是最佳载体基质的选择只需本领域普通技术人员用试凑法就可以得到。如果必要的话,对该载体基质可以略微加热,来熔化它或减少其粘度。
为了生产涂覆谷物产品,可以采用任何合适的用于涂覆上述碎块的技术。例如,在液体载体基质的情况下,原始生物微生物和载体基质混合物可以喷涂到干碎块上。这可以以任何合适的方式进行。例如,这些碎块可以送入流化床,将混合物喷涂其上。或者,这些碎块可以送入旋转涂布机,将混合物喷涂到其内部。另外还有一种情况,使这些碎块落在幕布内,让涂料混合物喷涂到幕布上。在颗粒性载体基质的情况下,原始生物微生物和载体基质可以进行混合以形成干混合物。热敏成份例如维生素、氨基酸等也可以包括在干混合物中。上述干混合物在使用聚结剂的情况下在干碎块上聚结。合适的方法描述于美国专利US 4,777,056中,其公开作为参考在此引入。脂肪、油和糖溶液是适合的聚结剂的例子。颗粒性载体基质也中可以撒在谷物产品上。

也可以通过将水与谷物产品成份一起混合来生产干谷物产品;例如在预处理器中。该湿润混合物可以接着加工成形为所需的形状;例如使用成形轧辊。该成形混合物可以接着在炉中焙烤;例如在约220℃至约280℃持续约10分钟至约1小时。该干谷物产品具有焙烤饼干的外观。涂覆料或夹心填料可以接着如上述方法施用。
或者谷物产品可以按配方加工成方便食品例如点心等。该谷物产品还可以和坚果、干果、糖或其它甜味剂、色素、或增香剂等混合。合适的粘合剂,例如阿拉伯树胶或明胶可以被接着加入。降低块形食品易碎性的作用物也可以包括进来,例如水解小麦。如果需要,该块形食品用合适的涂料涂覆;例如巧克力。制作点心的方法是公知的,且在现有技术中有描述,例如参见美国专利US4,871,557。
应该理解该干制即食谷物产品可以通过任何合适的方法制作,而不仅限于以上所述的方法。
在食品的情况下,该干制即食谷物产品优选包括营养添加剂。在猫狗食品的情况下,该干制即食谷物产品作为唯一营养源喂给宠物或被其它营养源补充;例如罐头食品。当食用足够量时,该干制即食谷物产品就会在人或动物肠道内产酸,例如乳酸和醋酸。这将抑制病源细菌例如产气荚膜梭状芽孢杆菌或那些对健康产生负面影响的物质生长,且对人或动物产生有益效果。还有,原始生物微生物附着于肠道表面,而且与不希望有的细菌竞争。而且腐败细菌的生长和活性可以被抑制,从而抑制了毒胺化合物的产生。足够量的干制、即食谷物产品也导致了人或动物免疫功能的激活。
干制即食谷物产品被人或动物食用产生有益效果的量,根据人或动物的大小和年龄决定。但干制即食谷物产品的量能提供每日约106至约1012个原始生物微生物细胞的量通常是足够的。
对上述具体实施方案可以进行许多改进。例如,不必要通过挤压熟化制备谷物产品。而可通过任何合适的制备干制即食谷物碎块方法制作该谷物产品。例如饲料可以与水煮制,制成熟化糊状物。该糊状物接着经滚筒干燥,制成干片;通常的厚度是约0.6至约1mm。
现在通过对具体实施例的描述进行进一步说明。
实施例1
一种饲料混合物由玉米、玉米谷蛋白、鸡和鱼粉、盐、维生素和矿物质组成。该饲料混合物送入预处理器并润湿。该润湿饲料离开预处理器接着送入挤压熟化机并胶凝化。该胶凝化基体离开挤压机被强制通过一模子被挤压。该压出物离开模子冲压头被切割成适合于喂养狗的碎块,在约110℃下干燥约20分钟,且冷却形成颗粒。这些颗粒的水分活度是约0.6。
用三种不同的涂料混合物向这些颗粒喷涂。每种涂料混合物含凝结芽孢杆菌,但一种涂料混合物使用氢化大豆脂作涂料基质、一种涂料混合物使用水作涂料基质,而一种涂料混合物使用蛋白消化物作涂料基质。凝结芽孢杆菌以粉状内生孢子的形式存在,且从Sankyo Pharmaceutical Company获得,其商标是Lacris-S。这些颗粒含约1.6×106个细胞/g的凝结芽孢杆菌。对于每种涂料混合物,这些颗粒被分成两组。一组在约25℃下贮藏,且测定该微生物的长期稳定性,另一组在约37℃下贮。在1周、2周、3周和4周之后从各组中拿出1份样品。还有,贮存在37℃组的一份脂肪涂覆样品在第8周时拿出。
测定各样品的细胞数。结果表示于图1。在所有条件下,细胞数基本上保持恒定,显示出优秀的贮藏稳定性。而且,从在37℃下贮藏8周的结果看,上述微生物很可能在一般条件下贮藏一年之后仍然稳定。
实施例2
除了三种不同涂料混合物各自含有枯草芽孢杆菌而不是凝结芽孢杆菌以外,重复实施例1。枯草芽孢杆菌以粉状内生孢子的形式存在且从Hansen A/S获得,其商标是Bioplus 2B。结果示于图2。
在所有条件下,细胞数基本上保持恒定,显示出优秀的贮藏稳定性。但是用脂肪涂覆的颗粒料的细胞数有点低干用水和蛋白消化物涂覆的颗粒料的数量,但仍基本上恒定。从贮藏在37℃达8周时间的结果看,再次显示出上述微生物很可能在一般条件下贮藏一年之后仍然稳定。
实施例3
除了三种不同涂料混合物各自含有乳酸片球菌而不是凝结芽孢杆菌外,重复实施例1。乳酸片球菌以干粉的形式存在,从Lallmand SA获得,商标是Bactocell。贮藏结果如下:

对于使用水或脂肪涂覆的颗粒,细胞数基本上恒定保持在约107cfu/g;显示出优异的贮藏稳定性。对于使用蛋白消化物涂覆颗粒的情况,当贮存在37℃时,细胞数最初下降,但接着稳定在约106cfu/g;这就足够了。
实施例4
除了三种不同涂料混合物各自含有啤酒酵母而不是凝结芽孢杆菌外,重复实施例1。啤酒酵母以干粉形式存在,且从Santel SA获得,商标名是Levucell。贮藏结果如下:

对于使用水或脂肪涂覆颗粒的情况,细胞数基本上恒定保持在约107cfu/g;显示出优良的贮藏稳定性。对于用脂肪涂覆的颗粒的情况,更是如此。但是用蛋白消化物涂覆的颗粒细胞数略低于用水和脂肪涂覆的那些颗粒,但当在25℃贮藏时,仍可以接受。当贮藏在37℃时用蛋白消化物涂覆的颗粒的细胞数降低。
实施例5
用30条狗做实验。在开始实验前一星期给这些狗喂标准干饲料。在实验开始之前,马上对每条狗肠道内菌丛和粪便气味的大小进行测定。
这些狗接着被分成各15条狗的两组。一组狗喂干制的、实施例1的脂肪涂覆颗粒料。另一组狗喂同样的颗粒料,但没有涂覆脂肪和原始生物微生物。给这些狗提供自由接近食物和水的机会。
一周之后,分析每个狗的肠内菌丛。用实施例1的颗粒料喂养的狗其产气荚膜梭状芽孢杆菌的数量降低。而且发现用实施例1的颗粒料喂养的狗中粪便PH值和气味降低。
实施例6
一种饲料混合物由70wt%的玉米粉、17wt%的小麦粉、7wt%的糖、3wt%的麦芽,2wt%的植物油脂和盐组成。该饲料混合物送入预处理器中并润湿。润湿的饲料离开预处理器接着送入挤压机并胶凝化。该胶凝基体离开挤压机,被强制通过一模子且被挤压。该压出物离开模子冲压头时膨化,且被切成约1cm的碎块。然后该碎声被干燥至水分含量约1wt%。
用两种不同涂料混合物喷除这些碎块。每种涂料混合物含有作为载体基质的葵花油但微生物不同。这些微生物是:

实施例7
除了涂料混合物是原始生物微生物和巧克力香精粉(NesqukR粉)的干混合物外,重复实施例6的方法。使用描述于美国专利US4777056的方法将干混合物涂覆于碎块料上,且使用植物油作为聚结剂。
而且,使用下述微生物:

实施例8
如实施例6所述生产的膨化谷物产品,用三种涂料基质涂覆。产品1是通过将植物油喷涂到谷物产品上,且接着撒上含约氏乳杆菌La1的喷雾干燥奶粉而制备的;产品2是通过用植物油涂覆谷物产品,且接着撒上含约氏乳杆菌La1的喷雾干燥奶粉和含可可粉(Nesquik粉)的混合物而制备的;产品3是通过将含约氏乳杆菌La1的喷雾干燥奶粉悬浮于植物油中,并将该油(没有加压)喷涂到谷物产品上而制备的。
测定各产品的细胞数。结果如下:

实施例9
用20名成人自愿者作实验。在实验开始之前,马上测定各自愿者的肠道菌丛。这些自愿者接着分成每10人的两组。一组早餐食用30g实施例8的产品1和冷牛奶。另一组食用同样的谷物产品,但没有脂肪涂料和原始生物微生物。在这些天里提供给自愿者其它餐是普通的饭食。
一周之后,分析各自愿者的肠道菌丛。食用产品1的自原者产生荚膜梭状芽孢杆菌的数量降低。
Claims (10)
1、一种干制、即食谷物产品,包含一种胶凝化淀粉基体,所述胶凝化淀粉基体具有含原始生物微生物的涂料或夹心料。
2、根据权利要求1的谷物产品,做成早餐谷物食品、婴儿谷物食品或方便食品的形式。
3、根据权利要求1的谷物产品,其中胶凝化淀粉基体是片状或膨化的形状。
4、根据权利要求1的谷物产品,做成玩赏动物食品的形式。
5、根据权利要求1的谷物产品,其中胶凝化基体是挤压熟化的淀粉源。
6、根据权利要求1-5中任何一项的谷物产品,其中涂料或夹心料包含有含有原始生物微生物的载体基质。
7、根据权利要求6的谷物产品,其中载体基质是脂肪、蛋白消化物、牛乳固形物、糖或颗粒增香剂。
8、根据权利要求5的谷物产品,还包括在胶凝化淀粉基体上的脂肪层,该脂肪层使含有原始生物微生物的颗粒载体基质附着在胶凝化淀粉基体上。
9、根据权利要求1-5中任何一项的谷物产品,其中原始生物微生物选自凝结芽孢杆菌、地衣形芽孢杆菌、枯草芽孢杆菌、动物双歧杆菌/长双歧杆菌、约氏乳杆菌La1、乳酸片球菌、啤酒酵母、和尿肠球菌SF68。
10、根据权利要求1-5中任何一项的谷物产品,还含有可溶性纤维源。
