背景技术
银耳又称作白木耳、雪耳、银耳子等,属于真菌类银耳科银耳属,是门担子菌门真菌银耳的子实体,有“菌中之冠”的美称。
银耳味甘、淡、性平、无毒,既有补脾开胃的功效,又有益气清肠、滋阴润肺的作用。既能增强人体免疫力,又可增强肿瘤患者对放、化疗的耐受力。银耳富有天然植物性胶质,外加其具有滋阴的作用,是可以长期服用的良好润肤食品。
阿胶含有明胶原、骨胶原、蛋白质以多种微量元素、多种氨基酸等,这些都是人体营养重要物质,具有补血滋阴,润燥、抗衰老、缓解疲劳等功效。
目前市面上存在将银耳和阿胶相配合的保健品,其保健品的主要功效为补血滋阴。但是保健品中一般都会添加各种氨基酸等添加剂。而目前市面上还没有将银耳与阿胶相配合的即食食品。因此,急需一种具有补血滋阴、补脾养肾、润肺功效的即食食品。

本发明所采用的技术方案是:一种银耳阿胶糕,包括按重量份计的以下组分:银耳60-80份、阿胶40-60份、黑桑葚10-20份、无花果干10-20份、莲子15-22份、百合干5-8份、冬瓜条1-4份、白莲须1-7份、白果4-10份、山药1-5份、松子仁2-8份、核桃仁2-8份、花生仁2-8份、黑芝麻3-10份、冰糖15-25份和蜂蜜18-30份。

(1)按配比选取银耳、阿胶、黑桑葚、无花果干、莲子、百合干、冬瓜条、白莲须、白果、山药、松子仁、核桃仁、花生仁、黑芝麻、冰糖和蜂蜜,并对原料进行处理;

(5)将半成品倒入模具中冷却成型、切块、包装,即得银耳阿胶糕。

(1)本发明通过银耳、阿胶为君药,辅以黑桑葚、无花果干、莲子、百合干、冬瓜条、白莲须、白果和山药,制作出一种滋阴养血、补脾养肾、润肺的即食食品,便于人们携带和即食食用;
(2)本发明通过熬制和蒸煮,充分将各原料中的有效成分最大限度的提取,并在熬制、蒸煮后再进行浓缩,避免了营养成分的流失。

具体实施方式
下面将结合具体实施例对本发明作进一步详细说明。
实施例1
本实施例提供的银耳阿胶糕及其制备工艺,所述银耳阿胶糕包括按重量份计的银耳60份、阿胶60份、黑桑葚16份、无花果干15份、莲子18份、百合干5份、冬瓜条2份、白莲须3份、白果4份、山药1份、松子仁6份、黑芝麻4份、冰糖18份和蜂蜜26份。
制备上述银耳阿胶糕的方法包括以下步骤:
(1)银耳处理,40份银耳用清水浸泡45min,使其吸水膨胀后洗净,得到发泡银耳备用;20份银耳洗净晾干后粉碎至900目,得到粉碎银耳备用;
阿胶处理,将阿胶粉碎至350目,得到阿胶粉备用;
黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药处理,将黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药混合均匀粉碎至580目,得到混合粉备用;

实施例2
本实施例提供的银耳阿胶糕及其制备工艺,所述银耳阿胶糕包括按重量份计的银耳72份、阿胶53份、黑桑葚13份、无花果干10份、莲子15份、百合干7份、冬瓜条1份、白莲须1份、白果8份、山药3份、核桃仁4份、黑芝麻10份、冰糖15份和蜂蜜30份。
制备上述银耳阿胶糕的方法包括以下步骤:
(1)银耳处理,60份银耳用清水浸泡45min,使其吸水膨胀后洗净,得到发泡银耳备用;12份银耳洗净晾干后粉碎至800目,得到粉碎银耳备用;
阿胶处理,将阿胶粉碎至460目,得到阿胶粉备用;
黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药处理,将黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药混合均匀粉碎至680目,得到混合粉备用;
(2)将发泡银耳放入熬制罐中,并将选取的莲子、白果和冰糖一并加入熬制罐,加水小火熬制13h,得到银耳浆备用;
(3)将阿胶粉放入熬煮罐中,加入清水、蜂蜜以及阿胶粉,中火加热至沸腾,并通过搅拌器沿同一方向匀速搅拌至阿胶粉完全融化,形成糖胶液;
(4)将银耳浆、糖胶液和混合粉加入浓缩罐中,沿同一方向匀速搅拌并在0.5MPa下110℃的条件下浓缩,浓缩至膏状胶液的密度为1.54g/cm3后停止加热加压,然后加入黑芝麻和核桃仁搅拌均匀后制得半成品;
(5)将半成品倒入模具中冷却成型、切块、包装,即得银耳阿胶糕。

黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药处理,将黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药混合均匀粉碎至800目,得到混合粉备用;

1.一种银耳阿胶糕,其特征在于:包括按重量份计的以下组分:银耳60-80份、阿胶40-60份、黑桑葚10-20份、无花果干10-20份、莲子15-22份、百合干5-8份、冬瓜条1-4份、白莲须1-7份、白果4-10份、山药1-5份、松子仁2-8份、核桃仁2-8份、花生仁2-8份、黑芝麻3-10份、冰糖15-25份和蜂蜜18-30份。
2.根据权利要求1所述的银耳阿胶糕,其特征在于:包括按重量份计的银耳60份、阿胶60份、黑桑葚16份、无花果干15份、莲子18份、百合干5份、冬瓜条2份、白莲须3份、白果4份、山药1份、松子仁6份、黑芝麻4份、冰糖18份和蜂蜜26份。
3.根据权利要求1所述的银耳阿胶糕,其特征在于:包括按重量份计的银耳72份、阿胶53份、黑桑葚13份、无花果干10份、莲子15份、百合干7份、冬瓜条1份、白莲须1份、白果8份、山药3份、核桃仁4份、黑芝麻10份、冰糖15份和蜂蜜30份。
4.根据权利要求1所述的银耳阿胶糕,其特征在于:包括按重量份计的银耳80份、阿胶40份、黑桑葚10份、无花果干20份、莲子22份、百合干6份、冬瓜条4份、白莲须6份、白果10份、山药5份、花生仁8份、黑芝麻8份、冰糖25份和蜂蜜18份。
5.根据权利要求1所述的银耳阿胶糕的制作工艺,其特征在于:包括以下步骤:
(1)按配比选取银耳、阿胶、黑桑葚、无花果干、莲子、百合干、冬瓜条、白莲须、白果、山药、松子仁、核桃仁、花生仁、黑芝麻、冰糖和蜂蜜,并对原料进行处理;
银耳处理,部分银耳用清水浸泡30-60min,使其吸水膨胀后洗净,得到发泡银耳备用;部分银耳洗净晾干后粉碎至800-1000目,得到粉碎银耳备用;
阿胶处理,将阿胶粉碎至300-500目,得到阿胶粉备用;
黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药处理,将黑桑葚、无花果干、百合干、冬瓜条、白莲须、山药混合均匀粉碎至500-800目,得到混合粉备用;
(2)将发泡银耳放入熬制罐中,并将选取的莲子、白果和冰糖一并加入熬制罐,加水小火熬制12-14h,得到银耳浆备用;
(3)将阿胶粉放入熬煮罐中,加入清水、蜂蜜以及阿胶粉,中火加热至沸腾,并通过搅拌器沿同一方向匀速搅拌至阿胶粉完全融化,形成糖胶液;
(4)将银耳浆、糖胶液和混合粉加入浓缩罐中,沿同一方向匀速搅拌并进行加压加热浓缩,浓缩至阿胶挂旗后停止加热加压,并加入黑芝麻和松子仁、核桃仁、花生仁中的一种或多种,搅拌均匀后制得半成品;
(5)将半成品倒入模具中冷却成型、切块、包装,即得银耳阿胶糕。
6.根据权利要求5所述的银耳阿胶糕的制作工艺,其特征在于:步骤(4)中在0.5-0.8MPa下100-120℃的温度环境中浓缩至阿胶挂旗。
7.根据权利要求5所述的银耳阿胶糕的制作工艺,其特征在于:步骤(4)中所述阿胶挂旗的判定依据为膏状胶液的密度为1.52g/cm3-1.56g/cm3。
