蛋卷是一种传统的优质高档休闲食品,以其松脆可口而受到广大消费者的喜爱;随着人们生活水平的提高,绿色食品、营养食品、保健食品成为人们日益关注的话题;当前的消费者希望蛋卷能吃饱、好吃的同时,也具备保健效果,且具备较好的口感;所以,传统的蛋卷已不能满足人们的需求;而且蛋卷的原料中含有鸡蛋液,鸡蛋液有较大的腥味,若不去除会影响蛋卷的口味。

(8)将面糊送入蛋卷成型机做成蛋卷;
(9)再经杀菌、包装,抽样检验合格后即成品。

荷叶有清暑利湿、升发清阳、凉血止血等功效;研究证实,荷叶有良好的降血脂、降胆固醇和减肥的作用,且能清热解暑,升发脾阳,可平稳血压,防治高血压、高血脂等疾病;同时脂肪持续代谢出体外,消耗加快,脂肪燃烧速度增加一倍,快速消除小腹赘肉,吃多不胖。
桑叶富含稀有元素有机硒、锗,是天然的强抗氧化剂,可清除体内自由基,使蓄积在人体内的毒素和废物被氧化,增加血液中的含氧量,促进新陈代谢和微循环;对于高血脂、高血糖、糖尿病、脂肪肝、冠心病、高血压、甲、乙型肝炎的治疗以及癌症术后放化疗病人的康复有非常好的辅助作用。

一种蛋卷的制备方法,包括以下步骤:
(1)选择新鲜成熟的绿茶、荷叶、桑叶、青钱柳原料清洗烘干,烘干脱水至含水量小于11%;
(2)选择中药粉碎设备将洗净烘干的各原材料粉碎至D50=60微米;然后选择气流粉碎设备将各原材料再次粉碎至D50=8微米;
(3)然后将粉碎好的各原材料粉体与麦苗粉进行称重并充分混合、搅拌得到混合粉体;
(4)将黄油隔水加热完全溶化,在常温下放置8分钟后加入细砂糖,然后进行搅拌,搅拌至黄油呈现为淡黄色为止;
(5)然后加入鸡蛋液,鸡蛋液分3次均匀加入,第一次鸡蛋液和黄油充分融合后第二次加入鸡蛋液,第二次鸡蛋液和黄油充分融合后第三次加入鸡蛋液,等第三次鸡蛋液和黄油充分融合后,得到黄油蛋液备用;
(6)将低筋面粉过筛后与混合粉体进行混合,搅拌均匀后得到面粉混合粉体备用;
(7)将黄油蛋液加入到面粉混合粉体中,然后进行搅拌,在搅拌过程中加入适量牛奶,直至搅拌成可流动的面糊;
(8)将面糊送入蛋卷成型机做成蛋卷;
(9)再经杀菌、包装,抽样检验合格后即成品。
最后,应当指出,以上实施例仅是本发明较有代表性的例子。显然,本发明不限于上述实施例,还可以有许多变形。凡是依据本发明的技术实质对以上实施例所作的任何简单修改、等同变化与修饰,均应认为属于本发明的保护范围。
Claims (4)
1.一种蛋卷,其特征在于蛋卷由下列重量份的原料组成:黄油50-100、细砂糖50-80、鸡蛋清30-70、低筋面粉100-200、牛奶100-160、鸡蛋液50-80、绿茶30-50、荷叶20-30、桑叶10-20、青钱柳20-30、麦苗粉20-50。
2.根据权利要求1所述一种蛋卷,其特征在于所述黄油中调和有花生油、芝麻油、大豆油中的一种或几种。
3.根据权利要求1所述一种蛋卷,其特征在于所述鸡蛋液为鸡蛋清、蛋黄、食盐、碳酸钠混合后充分搅拌制得。
4.根据权利要求1所述一种蛋卷,其特征在于所述蛋卷的制备方法,包括以下步骤:
(1)选择新鲜成熟的绿茶、荷叶、桑叶、青钱柳原料清洗烘干,烘干脱水至含水量小于10-12%,或者也可以直接购买相关成品原料;
(2)选择中药粉碎设备将洗净烘干的各原材料粉碎至D50=45-80微米;然后选择气流粉碎设备将各原材料再次粉碎至D50=5-14微米;
(3)然后将粉碎好的各原材料粉体与麦苗粉进行称重并充分混合、搅拌得到混合粉体;
(4)将黄油隔水加热完全溶化,在常温下放置5-10分钟后加入细砂糖,然后进行搅拌,搅拌至黄油呈现为淡黄色为止;
(5)然后加入鸡蛋液,鸡蛋液分3次均匀加入,第一次鸡蛋液和黄油充分融合后第二次加入鸡蛋液,第二次鸡蛋液和黄油充分融合后第三次加入鸡蛋液,等第三次鸡蛋液和黄油充分融合后,得到黄油蛋液备用;
(6)将低筋面粉过筛后与混合粉体进行混合,搅拌均匀后得到面粉混合粉体备用;
