Abstract
本发明涉及一种营养减肥代餐粉及其制备方法,配方中各原料的重量配比为:黑米43份,黑糯米16.49份,黑豆12份,黑芝麻11份,红枣7份,黑桑葚7份,大豆肽2份,黑枸杞1份,核桃0.5份,食用盐0.01份;将黑米与红枣丁混合后进入三段式膨化机膨化放凉待用;将黑桑葚与黑枸杞低温烘干;将黑糯米、黑豆、黑芝麻、核桃、食用盐混合炒制后加入烘干的黑桑葚和黑枸杞继续炒制,将混合物料放凉待用;将放凉待用的两部分物料混合后粉碎;最后加入大豆肽混合,出料,分装,即制得本发明的营养减肥代餐粉。本发明方法简单,易于操作,产品具有减肥、调节脾胃功能、延缓衰老、乌发生发、提高身体免疫力以及缓解三高的功效。

技术领域:
本发明涉及一种代餐粉及其制备方法,特别是涉及一种营养减肥代餐粉及其制备方法,属于减肥食品加工技术领域。
背景技术:
肥胖症是一组常见的代谢症群。当人体进食热量多于消耗热量时,多余的热量以脂肪形式储存于人体内,其量超过正常的生理需要量,且达一定值时遂演变为肥胖症。肥胖可造成高血压、冠心病、糖尿病、心脑血管疾病,骨骼肌肉病变及内分泌系统的紊乱等等。目前市面上减肥的产品多种多样,大多数的减肥方法以减脂减重为主要目的,忽略身体的正常需求,会对身体造成各种各样的危害。
各种减肥药、减肥茶等产品容易对人的身体健康造成的危害主要有:一是导致腹泻。绝大多数的减肥药、减肥茶都会造成腹泻,腹泻不但不会起到通便排毒的作用,还会造成胃肠负担加重,造成消化系统功能紊乱。二是造成营养不良。很多减肥产品倡导控制饮食,或者不控制但是腹泻严重,人体所需营养成分大量流失,长时间会造成严重的营养不良,使人体处于亚健康状态。三是造成电解质紊乱。多数减肥茶、减肥药为了快速达到减肥瘦身的效果,会加入利尿成分,排出体内水分,起到迅速减重的效果。大量的水分流失,会造成体内电解质的紊乱,使人体处于脱水状态。
能引发体内脂质过氧化反应对人体健康造成损害的自由基是人体氧化反应过程产生的有害化合物,具有强氧化性,同时也加快机体衰老。黑色食品所含的黑色素、花青素等物质能捕获自由基,减少过氧化物的产生,并能充当起超氧化物歧化酶(SOD)的作用,同时还具有谷胱甘肽(GSH)的抗氧化能力,从多方面清除体内的自由基。
黑色食品种类繁多,市面上常见的有黑米、黑豆、黑糯米、黑芝麻、黑枸杞、黑桑葚等等。其不仅给人以质朴、味浓、壮实的食欲感,而且经临床实践证明,经常食用对调节人体生理功能大有裨益。
黑枸杞是迄今为止发现的原花青素含量最高的野生植物,主产于中国青海省东部、新疆北部、甘肃、西藏等地。尤其是出产于青海柴达木盆地的黑枸杞(德令哈、都兰、格尔木等地),生长在海拔2800米-3200米的盆地沙漠地带,海拔高气候干旱、生态环境洁净、无污染。经测定,黑枸杞含有17种氨基酸,13种微量元素,其中钙、镁、铜、锌、铁的含量也高于红枸杞,被誉为“软黄金”。黑枸杞独有的微量元素,使其具有养肝明目、补肾益精、延缓衰老的功效。
黑桑葚具有防脱生发、改善脾脏功能,促进消化的功效。
大豆肽是将大分子的大豆蛋白质,利用生物技术酶合成的由2-10个氨基酸组成的小分子片段。大豆肽富含22种氨基酸,其中包含9种人体不能合成的必需氨基酸。大豆肽为小分子的蛋白质,非常容易被人体吸收,适合蛋白质消化吸收不佳的人群食用,如中老年人、手术后恢复期病人、肿瘤及放化疗病人、胃肠功能不佳者等。此外,大豆肽还具有提高免疫力、增强体力、缓解疲劳、降三高等功效。
研发原料源于自然,具有养生功效,能够满足人体基础的热量以及营养代谢需求的减肥食品,符合广大消费者追求美丽、绿色、健康的生活理念,具有广阔的市场推广前景。
发明内容:
本发明的目的在于克服现有技术的缺点,提供一种营养减肥代餐粉及其制备方法。本发明的营养减肥代餐粉的减肥原理是满足人体基础的热量以及营养代谢需求,让人有饱腹感,并且饱腹感时间长,减少食物的摄入量,代谢体内贮存的原有脂肪,达到减肥的目的。
为了实现上述发明目的,本发明的营养减肥代餐粉以黑色食品作为主要原料,加入红枣、核桃以及大豆肽等养生物料,经过炒制、粉碎、高温挤压膨化、混合等工艺加工而成,配方中各原料的重量配比为:
本发明的一种营养减肥代餐粉的制备方法,按照如下工艺步骤操作:
第一步,按照配方重量比称取原料,配方为黑米43份,黑糯米16.49份,黑豆12份,黑芝麻11份,红枣7份,黑桑葚7份,大豆肽2份,黑枸杞1份,核桃0.5份,食用盐0.01份;
第二步,将去核后水分含量质量比为6%左右的红枣切至直径约为3-5mm的红枣丁;
第三步,将黑米与切好的红枣丁投入混料罐混合20分钟后进入三段式膨化机膨化,膨化温度前区为120℃,中区为150℃,后区为120℃,主电机转速为800-1000r/min;膨化完成后,放入无菌中转仓放凉待用;
第四步,将黑桑葚与黑枸杞放入烘干隧道,进行低温烘干,烘干温度为50-55℃,烘干时间为12小时,烘干至水分含量质量比为9%-10%;
第五步,将黑糯米、黑豆、黑芝麻、核桃、食用盐放入炒制机中炒制,炒制温度为220℃,炒制时间为45分钟;
第六步,炒制45分钟后,将炒制机温度调至120℃,温度稳定后,加入烘干好的黑桑葚和黑枸杞继续炒制,炒制时间为30分钟;炒制完成后,将混合物料放入无菌中转仓放凉待用;
第七步,将第三步和第六步放凉待用的物料投入混合机,混合20分钟后,使用粉碎机粉碎至80目;
第八步,将粉碎好的物料投入混料罐,加入大豆肽进行混合,混合时间为30分钟,混合完成后,出料至无菌中转仓,采用自动分装机进行分装,即制得本发明的营养减肥代餐粉。
本发明产品的服用方式为:取一袋30克营养减肥代餐粉,加入80℃热水150ml,搅拌均匀,一次一袋,根据需要饭前服用。
本发明方法采用独特的三段式加温膨化技术,可以使淀粉彻底α化(所谓α化是指食品中的生淀粉即β淀粉变成α淀粉),已经变成的α淀粉,经放置后也不能复原成β淀粉,于是食品保持了柔软、良好的风味和较高的消化率;膨化食品内呈多孔状,水溶性质增加,有利于胃肠消化酶的渗入,提高了营养素的消化吸收率,便于人体吸收(如黑米蒸煮后蛋白质消化率为75.3%,而膨化后可提高到83.8%);膨化技术不仅改变了食材的外形,也改变了内部的分子结构,食材的维生素受破坏较少(如:维生素Bl、B6的含量明显高于蒸煮后的食品)。膨化后的物料可以迅速补充身体所需要的热量,并且可以提高人体的饱腹感,使其自然控制食物的摄入量。
为了最大限度地保留黑桑葚与黑枸杞原有的营养成分,本产品添加的黑桑葚和黑枸杞采用低温烘干技术。
大豆肽具有轻微的苦味,故与红枣配合,大大地增加了产品的适口性。
食盐的加入不仅可以提高炒制过程中黑芝麻和核桃的香味,提高产品的风味,还可以补充人体所需电解质,防止因为食物摄入量减少造成的电解质紊乱的问题。
本发明产品同时添加多种养生物料,在减肥的同时,还具有调节脾胃功能、延缓衰老、乌发生发、提高身体免疫力以及缓解三高的功效;其制备方法简单,易于操作,原料绿色天然来源广,营养搭配科学合理,具有显著的减肥和养生功效。

实施例1、
本发明的一种营养减肥代餐粉配方如下:(按照重量配比)
如图1所示,本发明的一种营养减肥代餐粉的制备方法,按照如下工艺步骤操作:
第一步,按照配方称取黑米43kg,黑糯米16.49kg,黑豆12kg,黑芝麻11kg,红枣7kg,黑桑葚7kg,大豆肽2kg,黑枸杞1kg,核桃0.5kg,食用盐0.01kg;
第二步,将去核后的水分含量质量比为6%左右的红枣切至直径约为3-5mm的红枣丁,有助于更好地膨化;
第三步,将黑米与切好的红枣丁投入混料罐混合20分钟后进入三段式膨化机膨化,膨化温度前区为120℃,中区为150℃,后区为120℃,主电机转速为800-1000r/min;膨化完成后,放入无菌中转仓放凉待用;
第四步,将黑桑葚与黑枸杞放入烘干隧道,进行低温烘干,烘干温度为50-55℃,烘干时间为12小时,烘干至水分含量质量比为9%-10%;
第五步,将黑糯米、黑豆、黑芝麻、核桃、食用盐放入炒制机中炒制,炒制温度为220℃,炒制时间为45分钟;
第六步,炒制45分钟后,将炒制机温度调至120℃,温度稳定后,加入烘干好的黑桑葚和黑枸杞继续炒制,炒制时间为30分钟;炒制完成后,将混合物料放入无菌中转仓放凉待用;

第八步,将粉碎好的80目的物料投入混料罐,加入大豆肽进行混合,混合时间为30分钟,混合完成后,出料至无菌中转仓,采用自动分装机进行分装,即制得本发明的营养减肥代餐粉。
本发明产品的服用方式为:取一袋30克营养减肥代餐粉,加入80℃热水150ml,搅拌均匀,一次一袋,根据需要饭前服用。
用于减肥需要,可以三餐前半小时各一袋;用于养生需要,可以早晚选择性服用一袋。

1.一种营养减肥代餐粉,其特征在于配方中各原料的重量配比为:黑米43份,黑糯米16.49份,黑豆12份,黑芝麻11份,红枣7份,黑桑葚7份,大豆肽2份,黑枸杞1份,核桃0.5份,食用盐0.01份。
2.一种营养减肥代餐粉的制备方法,其特征在于按照如下工艺步骤操作:
第一步,按照配方重量比称取原料,配方为黑米43份,黑糯米16.49份,黑豆12份,黑芝麻11份,红枣7份,黑桑葚7份,大豆肽2份,黑枸杞1份,核桃0.5份,食用盐0.01份;
第二步,将去核后水分含量质量比为6%的红枣切至直径为3-5mm的红枣丁;
第三步,将黑米与切好的红枣丁投入混料罐混合20分钟后进入三段式膨化机膨化,膨化温度前区为120℃,中区为150℃,后区为120℃,主电机转速为800-1000r/min;膨化完成后,放入无菌中转仓放凉待用;
第四步,将黑桑葚与黑枸杞放入烘干隧道,进行低温烘干,烘干温度为50-55℃,烘干时间为12小时,烘干至水分含量质量比为9%-10%;
第五步,将黑糯米、黑豆、黑芝麻、核桃、食用盐放入炒制机中炒制,炒制温度为220℃,炒制时间为45分钟;
第六步,炒制45分钟后,将炒制机温度调至120℃,温度稳定后,加入烘干好的黑桑葚和黑枸杞继续炒制,炒制时间为30分钟;炒制完成后,将混合物料放入无菌中转仓放凉待用;
