一种具有保健功能的绿豆面青头白萝卜丸子的制作方法,所述的制作方法包括以下步骤:
步骤1)先将新鲜老豆腐切成0.6cm厚的条块,放入凉水锅内,加少许盐,煮1~2分钟,捞出,然后分成0.3cm厚的薄片,用筷子穿成串,码在冰箱内冷冻;
步骤2)把青头白萝卜洗净,切成0.3cm的立方块,放入容器内,先将食盐均匀撒放在块状青头白萝卜上,拌匀,待块状青头白萝卜出水后备用;
步骤3)先将冰箱里的冻豆腐块取出,切成0.3cm的立方块放入容器内,然后再按比例加入超细绿豆面粉、小麦面粉、冻豆腐、碱面、五香粉和切碎的鲜姜、大蒜,充分搅拌均匀备用;
步骤4)把大豆油加入锅内,用文火烧开,取步骤3)的原料,用手握成小于乒乓球的面团,从手活口挤出,放入油锅内用文火炸成黄色即成。
一种具有保健功能的绿豆面青头白萝卜丸子的食用方法:食用时,在锅内先放入少许油,加热后另取切碎的鲜姜和大蒜(用量可根据个人口味,吃辣椒的人可加适量辣椒)入锅后加水炝锅,同时放入绿豆面青头白萝卜丸子,煮沸后,立即放入芫荽或葱段,加醋,即成为传统的地方小吃。
本发明原料的保健作用
青头白萝卜:性凉,味辛,甘,归肺,胃,大肠经;有清热生津、凉血止血,消食化滞之功效;适宜胆结石、泌尿系统结石、高血压、高血脂、动脉硬化、癌症、脂溢性脱发和皮炎、肠炎、便秘、气管炎。含丰富的维生素C和微量元素锌,有助于增强机体的免疫功能,抑制癌细胞的生长,对预防癌,抗癌有重要意义;能促进消化,青头白萝卜被称为“自然消化剂”根茎部分含有淀粉酶及各种消化酵素,能分解食物中的淀粉和脂肪,促进食物消化,解除胸闷,抑制胃酸过多,帮助肠蠕动,促进新陈代谢,还可以解毒;有保护肠胃,促进胃肠液分泌的作用,能让肠胃达到良好的状况;常吃萝卜可降血脂、软化血管、稳定血压,预防冠心病、动脉硬化、胆结石等疾病。
绿豆:性寒,味甘,无毒,入心胃经。绿豆又叫青小豆,是我国人民的传统食物,有清热解毒、止渴消暑、利尿润肤的功效,还有一定的压热解毒作用。因此,它不但具有良好的食用价值,还有非常好的药用价值,有“济世之食谷”之说,经常食用可改善肠道菌群,减少有害物质吸收,预防某些癌症。绿豆面粉因其含有大量蛋白质、B族维生素以及钙、磷、铁等矿物质,故有增白、淡化斑点、清洁肌肤、去除角质、抑制青春痘的功效。
小麦面粉:性凉,味甘,入心、脾、肾经;富含蛋白质、碳水化合物、维生素和钙、铁、磷、钾、镁等矿物质,有养心除烦,健脾益肾,除热止渴的功效。
冻豆腐:性凉,味甘、淡,入脾、肺、大肠经。豆蛋白能恰到好处地降低血脂,保护血管细胞,健肤,清热解毒,下气消痰,预防心血管疾病;豆腐对病后调养、减肥、细腻肌肤亦很有好处。冻豆腐具有孔隙多、营养丰富、热量少等特点,不会造成明显的饥饿感,是肥胖者减肥的理想食品。新鲜豆腐经过冷冻,其内部组织结构发生了变化,其形态呈蜂窝状,颜色变灰,但蛋白质、维生素、矿物质破坏较少。豆腐经过冷冻,能产生一种酸性物质,这种酸性物质能破坏人体的脂肪,如能经常吃冻豆腐,有利于脂肪排泄,使体内积蓄的脂肪不断减少,达到减肥的目的。
大豆油:性温、味甘、辛,含有丰富的亚油酸等不饱和脂肪酸,具有降低血脂和血胆固醇的作用,在一定程度上可以预防心血管疾病;不含致癌物质黄曲霉素和胆固醇,对机体有保护作用;所含的维生素E、维生素D以及丰富的卵磷脂,对人体健康均非常有益。
鲜姜:性温,味辛,归肺、脾、胃经;有发汗解表、温中止呕、温肺止咳,活血,祛寒,除湿功能;此外还有健胃止呕、辟腥性的作用;鲜姜对伤寒杆菌、霍乱弧菌有明显的抑制作用。
大蒜:性温,味辛,归脾、胃、肺经。有解毒,消肿,杀虫之功效;具有温中消食、行滞气、暖脾胃、消积、解毒、杀虫的作用。
本发明的有益效果:

实施例1
一种具有保健功能的绿豆面青头白萝卜丸子,所述的丸子是由超细绿豆面粉、小麦面粉、青头白萝卜、冻豆腐、食盐、碱面、鲜姜、大蒜、五香粉及大豆油按重量计超细绿豆面粉500g、小麦面粉100g、青头白萝卜3000g、冻豆腐1000g、食盐100g、碱面50g、鲜姜50g、大蒜50g、五香粉100g份及大豆油1500g配制而成。
本实施例的制作方法包括以下步骤:

步骤2)把青头白萝卜3000g洗净,切成0.3cm的立方块,放入容器内,先将食盐均匀撒放在块状青头白萝卜上,拌匀,待块状青头白萝卜出水后备用;
步骤3)将冰箱里的冻豆腐块取出,切成0.3cm的立方块放入容器内,然后再加入超细绿豆面粉500g、小麦面粉100g、碱面50g、切碎的鲜姜50g、大蒜50g、五香粉100g,充分搅拌均匀备用;
步骤4)把大豆油1500g加入锅内,用文火烧开,取步骤3)的原料,用手握成小于乒乓球的面团,从手活口挤出,放入油锅内用文火炸成黄色即成;
步骤5)食用时,在锅内先放入少许油,加热后,将另外切碎的鲜姜、大蒜(用量可根据个人口味,吃辣椒的人可加适量辣椒)入锅后加水炝锅,同时放入绿豆面青头白萝卜丸子,煮沸后,立即放入芫荽或葱段,加醋,即成为传统的地方小吃。

本实施例的制作方法与实施例1相同。

1.一种具有保健功能的绿豆面青头白萝卜丸子,其特征在于:所述的丸子是由超细绿豆面粉、小麦面粉、青头白萝卜、冻豆腐、食盐、碱面、鲜姜、大蒜、五香粉及大豆油按重量份计超细绿豆面粉480~520份、小麦面粉90~110份、青头白萝卜2800~3200份、冻豆腐900~1100份、食盐80~120份、碱面40~60份、鲜姜40~60份、大蒜40~60份、五香粉80~120份及大豆油1300~1700份配制而成。
